Not much spices are available in Europe let alone Norway during the period you portrayed, correct? Aside salt, what seasonings were used by Vikings? I assume herbs, butter, and perhaps honey? Any additional info would be appreciated.

Honey was the only real sweet thing they had. And it could be expensive. Because not everyone had bees. As it's to cold for most people to keep bee's all year round. But they had pear's , small apples, pine nuts hazelnuts walnuts plums ( grapes if you had money again) but it really depends on what part of the world they was in and how rich you was.
I find it hard to accept that Vikings did not have ovens .How do we know they did not use ovens? Even a cast iron pan surrounded with charcoal is an oven.
They really used the one pot every thing in it technique most of the time. Or clay cooking pots as a kinda oven as the pot was put in the hot ash everything put in it. But it wasn't really a true oven. And of course they spit roasted stuff. But mainly the big old iron pot. They ate twice a day mid morning and then late afternoon. The breakfast was normally the food leftover from the night before with butter milk and bread and cheese. And the main meal they had whatever fruit and veg that they could get. And if lucky honey. With beer and mead if they had honey to make it. And some people say they had fruit juice and wine if you had money to buy it . But there's no finds of ovens. Simple because iron pots was expensive. The clay pots was cheaper and I nearly forgot about the soapstone bowls and pots that they used as well.
