The ONLY Oyako Don (親子丼) Recipe You Need

- 【Ingredients】
¼ onion
½ boneless chicken thigh
½ tbsp sake
2 eggs
[ Seasoning ]
1 tbsp soy sauce
1 tbsp mirin
½ tbsp sugar
80 ml dashi
[ Garnishes ]
Mitsuba
Shichimi togarashi
【Steps】
1. Prepare a bowl of freshly cooked white rice.
2. Cut chicken thighs into bite size cubes.
3. Marinate chicken with ½ tbsp sake and set aside.
4. Slice the onions into fine julienne.
5. For garnishing, chop mitsuba into 1.5 cm wide pieces.
6. Beat 2 raw edible eggs roughly.
7. Mix all the seasonings in a bowl and set aside.
8. Sauté the onions until translucent and fragrant.
9. Add in the seasonings and cook over medium-high heat for 2 minutes.
10. Add in the chicken thigh cubes and sake, continue to cook for 3 minutes.
11. Add ⅔ of the egg wash into the pot and cover the pot with a lid. Turn to medium heat and cook for 30 seconds.
12. Add in the remaining egg wash and continue to cook the mixture until the egg is half cooked.
13. Turn off the heat and serve with steamed rice in a donburi bowl. Optionally, garnish with mitsuba (Japanese coriander) and shichimi togarashi powder (Japanese chilli flakes).
