Oh yes! Waste not... want not! And it is wonderfully versatile! Adds flavor and goodness to so many things! Thank you Leisa! Blessings Kiddo! 🌻🐛Carolyn in Ohio 🌿💚🙏💕
Great Video, thanks. My son is growing his first batch of garlic "new gardener" and mom needs to do something with ALL that he is growing. Now I'm going out to buy me a new chest freezer for all the vegetable and fruit goodies coming up.
I just got done using my food processor to blend up my onion greens tonight, the three trays just made it into the dehydrator, just like Leisa did with the garlic scapes. My husband even said his eyes are burning, Leisa is a wise woman to suggest moving your dehydrator to the garage for this process.
Gardening is a life skill. All these folks that think that they can just buy a "seed vault" and start gardening after SHTF are in for a rude (and hungry) awakening. This is my first year with a real garden outside in the dirt. I've lived in apartments most of my adult life and did some container gardening, but gardening outdoors is really different. The radishes went from teeny tiny to overgrown and woody in the blink of an eye, the few radishes we managed to get were so hot they were painful to eat (and woody). The beets are languishing, the eggplant seems ok-ish but still pretty small. The peas are trying their best but we'll be lucky if we get peas this year. The herb garden (in pots) is doing relatively good so at least that's a positive. The apple trees are looking good and full of baby apples. The trees were unkempt and a hot mess when we moved in last summer, so we tidied them up and gave them TLC but didn't expect from them last autumn. It looks like the apples will be doing well this year. The pear tree is nearly totally blocked from the sun by a seriously overground bay laurel (bay leaf tree). I'd really like to take that tree down but it's too big for me to do on my own, also there's a family of pigeons in there and I don't want to evict them while they are raising baby pigeons.
Thanks for sharing. I've been growing for many years now but the first couple of years are the times you learn the most, and are disappointed the most too! Every plant has its habit and its preferences. Getting to know your veggies is so important. Learning how to look after them, which need more water than others, which need more 'food' than others, and thousands of other considerations. You are always learning. There's never a better time than to start your growing journey than now; not next week, or next year.
Love garlic and the scapes are a epic bonus! Just so many things they can be used for. Blanch and freeze and think for another day. I don't have a-lot of garden space but I do grow some garlic. I live in pickle hell (the husband) I love adding the scapes to any variety of pickling I do. All the best 🥂
Yes, they do get flowers which produce seeds. I saved the seeds last year and planted them in my garden beds this year. If they develop a bulb, it won't be this year as a pest deterrent. I noticed they just keep growing back year after year.
Very few varieties produced true seed. You have to remove the bulbils which you are probably calling seeds in order to achieve this. If indeed, you do have a variety that you have no problem getting from the plant and actually getting them to sprout then you should join the Tru seed, garlic initiative. However, it’s very apparent to me that you’re just collecting bulbils.
I am 63 yrs. Old and never heard of these recipes , I can not thank you enough , I hope your ribs are feeling better , THANK YOU LEISA , HAPPY FATHER'S DAY PHIL
Thank you for the added ideas! I made pesto with mine. I’ve also sautéed them just until slightly caramelized and served them as a side. They turned out delicious; very mild.
Ooo, I like the idea of the side dish! My scapes are just now starting to pop up (it's a variety of garlic that produces little topset clusters of tiny bulblets instead of flowers, kind of like Egyptian onions - I believe it's called "Old Homestead" or something similar). Will have to try the side dish! The bulblets are way too small to try to use like regular garlic (at least for an impatient person like me), but they, and the stalks too tough to chop up easily, add lots of flavor when tossed into the stockpot with the bones and other "makings". If I'm cooking the stock for a long time, I generally wait until the last couple hours before adding the scape stalks and bulblets, so they don't overcook.
just got my 2 lb order of scapes from the Garlic Gods (great source for seed garlic). Made some butter compound which included a little parsley and basil from my garden. Yum! Froze most of it along with the rest of the scapes chopped up to have handy whenever I want to add to a recipe. In the south we can only grow soft neck garlic varieties and elephant garlic which unfortunately do not produce scapes.
In case you have not heard, archeologists just unearthed several bottles of perfectly intact preserves of cherries at George Washington's home. They are undergoing analysis to see how 'viable' they are. They were found in pits and believed to be perfectly preserved. They must have left the pits (no pun intended) in the cherries because they hope to germinate the cherries (that should be interesting).
Yes! I printed out the article about this from the Mt. Vernon website and put it in between the pages of my copy of Martha Washington's Booke of Cookery and Booke of Sweetmeats, right at the spot where the four recipes for preserving cherries are. It would be pretty awesome if they can figure out which of those recipes of Martha's was used for preserving this particular batch!
You have been missing out! I found them at my farmers market a couple years ago and loved them. Finally got garlic to grow this year and I feel like a gardening god.
When growing garlic there is softneck (no garlic scapes) and hardneck (scapes - yum) types. Hardnecks typically do better in northern climates and those of us south tend to plant softnecks. Although I have had good luck with some hardneck varieties.
The scape/EVOO paste can also be frozen in small 'pucks' (using a small cookie scoop makes this easy), then double-baggie the frozen scape-pucks and store in freezer. Very convenient!
If you eat many Scapes, because you know, wonderful fresh Spring greens, buy lots of Beano for the gas and extra TP. 😂 Love ❤ these Scape recipies. Thanks Leisa.
This is a very timely video. I had processed a lot of my garlic scapes and froze them in avocado oil to save for making pesto when my basil produces leaves. I also had sautéed them with other vegetables to make a chicken vegetable stir fry. But I still have many more scapes. The garlic scapes butter looks awesome and making garlic scapes powder will be something I will do with the rest. Thank you and I hope your ribs heal soon.
I didn’t know you could do that many things with garlic scapes! Thank you for sharing 😊 I bought pickled scapes from the local farmers market & fell in love with them!
These are some great ideas! I usually pickle them. When I use them, I cut off the tip at the white part and use only the green shaft part. That tip is too fibrous for me to use in any of my recipes. I’ll have to try some of your recipes next year! Thanks!
I had heard of them, but didn't know what they were. About 10 years+ ago I pulled a full city garbage can full so my garlic would get bigger. After I went to the gardeners market where, lo and behold they were being sold 3/$1.00. The seller didn't know what to do with them. A customer , who was Oriental was looking at me like I had just grown a 3rd eye when she heard me say I just threw out several bushels of them. I asked her what to do with them. She gave me many uses and said what you don't do with them is throw them out. I've been charishing them ever since
Ohhhh you have to try garlic chicken wings. Spread a baking dish with a layer of scapes then a layer of wings. Add a bit of salt and smoked paprika and then another layer of the scapes. Cover tight with foil and bake at 250 for about 4 to 6 hours. This time of year you can do it during the night while you sleep, lowering the temp to about 200 just in case. You can also do this in a crock pot and they always taste great. I love adding a bit of honey when cooking in the crock pot.
I have tons of garlic. I'll get busy harvesting them including my chives & will make your recipes. Lisa thanks for sharing this is huge. Now we can have some yummy flavors to eat & cook with. How far down do you cut your garlic scapes?
I watched this video a week or so ago. My garlic was an experiment this year. It wasn't planted early enough. The bulbs are about the size of peas. I cut the scapes today. All are small. But, to be clear, it's okay to use all the green stems that were turning brown on the tips? I left the bulbs in the dirt in hopes they will come back next season.
This is my second year trying to grow garlic, still no luck I will try one more time next year.. They start off great then dry up and stop growing. Any ideas??
@@SuttonsDaze I water but I guess not enough. Oh this year something is eating the stems of my onions. It's funny everyone has trouble growing green peppers. I am located in CT so the weather is not the best for peppers, me I have the best pepper crop every year. But the easy stuff well, just cannot do it. And that is how my life goes.. LOL
Yes put it out of your home hahaha . Last year I had one of our granddaughters staying the summer with us . Well time to do the scapes , didn’t think anything about it . Got it blended and in my dehydrator hour later my granddaughter ran to her room shut the door . Well I went to make sure she was ok . And said please gramma shut the door . I ask why she said it stick so bad out there . OOPS. lol
whelp dehydrated a bunch! made a paste of scapes and some salt. DO NOT dehydrate in your house. I did, took 22 hours. omg did my home reek. eyes itched. and all that made a half pint jar of scape and salt dust. my question is what to use this powder in?
kind of like rendering lard....makes the house stink! dehydrating raspberries smells fantastic. they really don't stay dehydrate they probably should be freeze dried but they smell great.

Blessings Lisa from Chicago. I love the garlic scapes and sour tomato pickles. They work well together in a brine. Thank you for being you❤❤
Now I wished I planted 500 heads! These all look delicious thank you 💕

That dip would be good stuffed into any kind of pepper or mushrooms. Thank you for the ideas.

I like to chop them in the food processor with olive oil and the. Freeze in silicone ice trays and use like garlic 😊

I grow soft neck garlic so I don't get those, but i do have garlic chives so these ideas can be applied to those.. thanks Leisa!
I love the smell from the drying of garlic! I add Redmonds salt, not a lot.
Lordy, girl, how many garlic did you plant? LOL. Thanks for all the ideas.
Just under 500 cloves 🤣🤣
Great info to know. I've only made pesto with them. Will be making the scape, chive and cream cheese blend for sure.
Perfect timing! I’m scheduled to cut my scapes tomorrow!! Thank you for these great and yummy ideas!!

Nice recipes. I made garlic scape pesto. It's so good.
Thank you so much I’m harvesting my scapes tomorrow am
Awesome!! Saved the video for next year. I will be able to grow hardneck garlic for the 1st time this year. Thanks a million!
Wonderful!
Wow!! This is perfect timing! I have them for the first time this year! Didn't know what to do with so many! Thanks for the ideas!!
You're welcome@ enjoy!
I'm doing the one with the cream cheese!!@@SuttonsDaze
They're good pickled also
Hi, Leisa! Thank you for sharing! 😊
Thanks for watching!
I can snell it already. Yummy
Ty Lisa. This is great. What about onion & green onion scapes?
Sure!
I love this raw in potato salad!
Oooh! That's perfect!
WOW awesome bonuses ❤❤❤
I have tons of garlic. I'll get busy harvesting them including my chives & will make your recipes. Lisa thanks for sharing this is huge. Now we can have some yummy flavors to eat & cook with. How far down do you cut your garlic scapes?
To the point where they come out of the stalk
Thank you so much,
You are welcome!
I’m going to make pesto with some
Lol, morning staff meeting 🐖🐔 I'm doing these projects with some green onions that I let go to seed.
Oh my gosh, I put the tops in my compost! Ugh. I just made a batch of pesto and froze the rest in bags for future use!
Thanks for sharing. My neighbour dropped by with a bunch yesterday wasn't sure how to use them. What knife is that you have please?
Shoot, I processed mine today and I cut off the bud and top. I wish I had see this video before. Thanks Leisa, now I'll know for next time.
Next time for sure. That whole scape is edible.
HI GTSY HAVNT HAD ALOT OF LUCK WITH GARLIC
I dehydrate the scapes uncut and then grind them after dried.

But, to be clear, it's okay to use all the green stems that were turning brown on the tips? I left the bulbs in the dirt in hopes they will come back next season.
The scapes come out if the stems, you don't cut the stems until you harves. Every bit of the scape is edible
Oh how I wish I had garlic scapes. Can only grow softnecks here😔
For anyone who doesn’t grow their own, you can order fresh garlic scapes from Keene Organics
So what temp and how long did you dehydrate?
at the vegetable temp on your machine, until they are dry
@@SuttonsDaze I just recently purchased and the instructions didn’t mention time and temp. Thank you!
Why do you use soft butter? Since it's in the blender and the blender adds heat, wouldn't refrigerated, solid butter work just as well if not better?
To blend, soft is easier
🌱🙂👏
Can they be fermented?
Not sure
Newbie jar question: where do y’all get your jars? I was about to order 8 doz online but it’s $67 shipping! Thanks!
Garage sales, yard sales, tractor supply, Walmart, meijers
Thank you very much!
This is my second year trying to grow garlic, still no luck I will try one more time next year.. They start off great then dry up and stop growing. Any ideas??
Water them?
But seriously, you can do it. Look up on youtube the best way to plant, when to plant for your zone, etc.
Easiest crop ever

They get little mini garlic bulbils instead of flowers, and they can be planted and in a few years..MORE garlic.
Garlic scapes are fibrous. I tried sautéing them but they didn’t really soften enough to be food.
I dry mine first then blend into a powder
About how long to dry them at lowest setting?

Anything you would do with garlic powder
A lot of people suggest cutting off the bulbs and not eating them
None I've run across. The whole thing is edible
I just ate them as I cut them.
So good! But I have almost 500 🤣
@SuttonsDaze I have about 40. We don't go through alot.
I just cut my scapes off allllll 900 of them
I dry mine first then chopp them up. I don't need the Matt's that way.
No Vampires at your house😂
Not a chance 🤣
To me Garlic scapes are to garlic, what leeks are to onions. Flavour wise.
Only hard neck make scapes
