My secret family recipe for preparing the Knafeh, a famous and delicious Lebanese dessert (with cheese, dough, ashta and sugar syrup) served in all parts of Lebanon and the Middle East. Although traditionally served for breakfast, Knafeh is great at any time of the day! A slice of heaven the whole family will love!

طريقة جديدة لتحضير كنافة بالجبن والقشطة مع كافة تفاصيلها
1. Duration: 60 minutes for preparation (including preparing the ashta (or heavy cream) and roasting the grounded rusks) + 10-15 minutes for baking on 335 °F
مدة تحضيرها ساعة مع تحضير(قشطة وطحن الكعك) + مدة الطهي بالفرن يتراوح من عشرة دقائق الى خمسة عشر دقيقة حتى تذوب الجبنة
2. Servings: 15-20 portions
عدد الاشخاص يتراوح بين 15 او 20
3. Ingredients / المواد:
a. Knafeh (with Cheese & Ashta) / قشطة الكنافة مع جبنة
- 600 g Akkawi cheese (soaked in cold water for 2 hours) / 600 غرام جبنة عكاو
- 400 g Mozzarella cheese (soaked in cold water for 2 hours) / 400 غرام جبنة موزيريلا
- 3/4 cup unsalted and grinded rusks (or dried white bread) / كعك مطحون 3/4 الكوب
- 1 1/4 cup semolina (medium, #2) / كباية وربع سميده خشنة رقم 2
- 1/4 cup white sugar / ربع كباية سكر
- 7 1/2 cups liquid milk (3.25 %) / سبع كبايات ونصف حليب سائل
- 1 can (170 g or 6 oz) ashta (heavy cream) / علبة قشطة
- 1 tsp crushed mastic gum (about 2 mastic bags of hardened, resinous chunks) / باكتين مسكه
- 1 tbsp rose water / ملعقة كبيرة ماء الزهر
- 1 tbsp orange blossom water / ملعقة كبيرة ماء الورد
- 1 tbsp butter / ملعقة كبيرة زبدة
b. Sugar Syrup / القطر
- 3 cups white sugar / ثلاث اكواب سكر ابيض
- 1 1/2 cups water / كباية ونصف ماء
- 2 tbsp fresh lemon juice / ملعقتين كبار عصير حامض طازج
- 1 tsp rose water / ملعقة صغيرة ماء زهر
- 1 tsp orange blossom water / ملعقة صغيرة ماء ورد
* 5 minutes for boiling the mixture / مدة الغليان خمس دقائق
4. Supplies / لوازم الاستعمال:

I came here because I love, love, love, Knefeh (and also Halawet al Jebn) and all this wonderful Lebanese cuisine ! I thought that maybe I could do this recipe but finding those ingredients in Paris is not easy, and I don't know them.Maybe I will find those desserts in a shop but my favorite one has closed !
they should be readily available in Carrefour , Auchan etc in Paris you can certainly get pâte à filo, semoule, and mozzarella blocks just need to find a less salty white cheese or use
mozzarella on its own to make this recipe

I tried this akkawi cheese brand - it didnt melt. Doesnt work for desserts. Different easy version of authentic Palestinian Nabulsi knafeh. Thank you.
Hello! Can i use mozzarela and instead of akkawi,ricotta? Because using only mozzarella will be too chewy

سلام حبيبتي عندي سؤال هل وضعتي الكنافة في وسط الفرن او على اول راف من تحت وإذا لا يوجد عندنا سميد وسط فينا نستعمل سميد خشن او طحين فرخة🙏❤️

Please calrify: is this ashta or cheese knefeh? If I want knefeh with ashta only, do I need to add the cheese? If no cheese only ashta does it need to go to oven?
Yes, you can make it using only ashta. But you would need to prepare it differently.

What does soaking it in water for that long do for the cheese?
To reduce the very salty content of both cheeses. She said to soak the cheese separately because they have different salt content.

@An Afternoon with Violette Thank you for your reply. I live in California and went to Zahle Lebanon in my youth and want to make this for my family. I never forget how nice the people of Lebanon are and how delicious your food is. I didn't miss my Mexican food at all. Blessings.
Interesting recipe. One key question: why using kashta when it is a cheese knefeh? Also, why do we need that much milk, isn't the main component cheese?
Because I used semolina no 3. I couldn't find semolina no 1. Therefore, I used more milk to boil the semolina and make the ashta smoother.
Also, the combination of ashta and cheese is delicious.

Yes of course. You can use mozzarella cheese instead of Akawi.
