One hand on the yoke and the other on the power levers is how it's done. Proper speed control is an absolute must and in gusty winds you're constantly making power lever adjustments.
On the very last scene, if I were a passenger on that aircraft, I'd be a lot more comfortable if the 1st officer had BOTH hands on the stick when landing instead of just one!
