As I type this, I have a spatchcocked chicken marinating in your Italian marinade and will cook it under a brick just as you showed. Assuming both burgers were the same weight, I’d be curious as to their “ready to eat” weight? How much moisture is lost with these different cooking methods!
The patties were both made using the Cuisinart burger press, so they were pretty much the same weight. Would be interesting to weigh them before and after. Great idea for another video. Thank you.
Hey City, looks like you liked the flat top version right off the bat, I agree love the crust it creates...great job, you and the misses be safe and enjoy that beautiful view you have.
Great side by side test! Definitely a common question / which is better.? You’re results are spot on for flavor scientifically. The griddle burger with its larger crust surface creates a lock for the grease aka flavor, which absorbs through the crust as it has nowhere to escape. The grilled burger looses it grease / some flavor. Grilled loose a bit of flavor but also the good stuff that is bad for the heart. Both Great but if watching your fat intake the grilled is the better less flavor option. The filter is your body or the grill grates. Thanks for the video. Skipped our lake house visit in MI due to the lockdown order but will be there soon grilling, smoking and Frying.
Yes, both great. Most of the time I prefer grilling over the flames. And yes, it seems healthier to me. Hope you get to your lake house once it warms up a bit. Cheers and thanks for watching.

I've cooked them both ways on the Weber Q but i have to agree with your assessment. I think the griddle always gives a more even cook to the burger. Even when I cook on the Weber charcoal kettle, I still use the cast iron hotplate, there's still plenty of smoke for flavour.

The secret to making a great grilled burger is to use a real charcoal grill - never a gas grill. Cook that burger over a real mesquite fire and there's no comparison.
Thanks for the test, just bought a griddle. Coming from a charcoal grill, when I added a hickory wooden chip or two in my Q1200, I was back to my favourite taste.
Yes, this is the #6558. I like it. Small but so is the Q1200. I have not experienced any sticking issues. Weber does not make a version to cover both sides and they warn against using two griddles at once. I believe it is an airflow issue that could be dangerous. Check some of my other videos for a full review and other cooks with the griddle.
I got my Q in 2016 by freak chance. I was walking down the street in Brooklyn and a woman was throwing it out. She just left it on the sidewalk. Said she was moving to Colorado and buying a big grill. It was basically brand new. Thanks for watching R T
I had mine since 2005 before it was destroyed in a car accident. Would've lasted longer if that wasn't the case. These grills are by far the best on the market.

Contemplating buying a griddle flat-top to replace my traditional grill. What advantages does the flat-top griddle have over the traditional grill? Thanks, great video.
I think buying something like a Blackstone griddle is a great idea, especially for smash burgers and breakfast. I don't think it replaces a grill though, and I would always recommend a grill first and a griddle second. But that's me.
I can see your point, but I think a lot has to do with your fuel. I prefer charcoal and adding to the fuel a wood like mesquite. This gives the burger even more flavor.
You know, I would have never guessed that... for both! I have never even thought to use my griddle for burgers, dogs - always sides and buns. New experiments this year, for sure! Thank you sir! 👍👍
Nice video. If you ask for my opinion, most homes uses grill for burgers and steaks. Most restaurants and fast food chains uses griddle. Taste wise you be the judge. For easy cleaning afterward, there's no comparison. If you hate cleaning, stick to the griddle. For fun and outdoors, you're not bar-b-queing with the griddle. That would be a joke. Anyway I prefer the smoke flavor so grilling is definitely the winner for me.
Which one is best for someone who eats ribeye steaks and 70/30 beef patties everyday? If griddle would you recommend a steel or ceramic top for my use case? Thank y’all for your help! ❤
The weber Q griddle is porcelain coated cast iron. The porcelain coating is helpful because you can use soap and water to clean it. As far as griddle vs grates, you just have to see what you prefer.
I do smash burgers on the weber griddle. Every time I make them my guests are amazed how delicious they are! Reminds me of shake shack type burger. I'll never use the grill again unless I'm using charcoal.
@@GallaghersGrub NICE! I do one part of each: salt, pepper and garlic powder. Mix them all and then sprinkle it on one side of the burger. Turn it and then comes the processed cheese 😅. So good man
Interesting to see not much difference, I didn't expect that. I'd prefer a test of the meat alone, without adding sauces and bread. Less confusion of tastes and more exact.
@@GallaghersGrub may as well use a thermometer to check the temp too. Would indicate if one should adjust cooking time. Yes you did a color test but temp test might be more accurate. Love my Q, bought it because of your older videos. I have 2 larger gas webers, a weber kettle and a kamado joe. The Q is hotter than the other gas webers and more convenient than any charcoal cooker. I would agree that on a kamado you could get a better result, but the effort is significantly more. Thanks for the vids!
First off, great to see the "Q" back in action. And great test of the grill vs griddle. Now my opinion of these two are that it's kinda apple's vs orange thing. You will get different flavors and textures with the two techniques. And like one viewer pointed out your burner isn't at it's proper burning level so it messes up the flavor compounds that would be created if burning properly. Both styles are great. So keep up the great work and stay safe. 🍔🍻🍔🍻🍔
Thanks for the excellent comment, Victor. Both burgers were great. I was thinking of redoing this test first with thin paddies and then with big "dad" burgers.
@@GallaghersGrub sounds good. So again both have their own advantages. The griddle keeps the fats close to the meat so the meat is "frying " in it's own fats and let's face it, beef fat is very yummy. The grilling works wonderfully when the rendered fats drip onto hot coals or " flavorizor bars ( that's what Webber calls the metal peices above their burners ) or the hot tubes that your blue flames are coming out of. This creates complex flavor compounds that float back up onto the meat giving it more flavor. That's why it's important to keep all gas burners clean and properly working to get maximum effect. So I don't think of them as one being better than the other, just different. And I think that's kinda cool, or well HOT if you get meaning. 😄
@@victorbenner539 There was a competition in the late 70s between Burger King and McDonald.....Burger King had a slogan...."flaming beats the fry"....sure enough some of us love that flame taste on the meat (me included) but sometimes I go and eat at McDonald just to remind myself why I like those Burger King burgers better.....indeed, both burgers are not the same....
@@kssaint6290 yuppers. However keep in mind how popular "smash" burgers are. So again it depends on individual tastes. Also what's available. Hard to do flame cooked inside a apartment. At home I'm normally doing steak. Check out his beer brats video, it was a couple of summers ago. It has changed the way I do my brats now. And will be on the menu this summer at my local farmers market I'll be vending at. Sooo good. Have a great day 🌤 😀 👍
My brother in law is an executive at in and out burger. We’ve had this same discussion and I believe strongly the grill offers great flavor but makes for a less juicy burger while the griddled burger is juicer and better overall!
Weber recommends not using two griddles at the same time. It may cause a gas flow problem and possibly be dangerous. I'm not sure. Thanks for watching Adnan
Thanks for that video. I just bought a griddle and am about to grill my first burger on the Q. So the question was: Where do I put the meat? I think I try your method and grill two burgers, on on the grill and one on the griddle, to find out what I like better. Oh, and definitely love to see you using the Q again. Your channel is definitely the best choice for Weber Q content. Best from Berlin
Anyone who eats two big 80/20 cheeseburgers in the name of science has my respect. Many years ago I got paid to cook burgers (and other stuff) on a charcoal grill, and a few years before that I got paid to cook on a flattop. I love my charcoal - lump, baby! - but for burgers, I'm a griddle guy all the way.
Perhaps a part two experiment could be a combination of the two methods, and you can still do two parties at once where they each start on one surface and are finished off on the other. Anyways, I enjoy experimentation/comparison videos like these, it's science cooking :), keep it up :)
I have a few other watches back in the city. When I used to watch The Walking Dead, I'd always wondered what watch I would wear in the zombie apocalypse. Well now I know.
I think they're equal. I tried this at home. I think the flame broiled burger absorbed the smoked flavor from he wood chips better, and it's probably a cleaner, healthier burger, because the fat drips off it into the flames. The griddle burger is definitely juicier, and more moist, because it swims in all that fat during cooking, but it doesn't trap the smoke flavor like the flame broiled burger does. They're both great, but it depends on what you're after, flavor or texture. The good thing about the griddle burger is that you can cook that indoors and outdoors. So, I can see how it gets the edge by a hair.
@@GallaghersGrub Yes I got it it’s heavy but I have not had a chance to use it only had it for about two or three weeks. It’s been raining a lot where I live.
Well but since your griddle is on an open gas grill you get the smoke circulated from droppings of the burger that was grilled. Hence you get the best of both worlds (smoke from grill, crust from griddle).
When you add salt to the outside of the burger it draws the moisture out of the meat. On a griddle these juices then cook onto the outside of the burger and increase the flavour. On a grill they drip away.
Try the griddle burger smash style. Put your lump of ground beef on the pre-heated griddle with as little handling and forming as possible and then "smash" it down with a sturdy spatula or an iron smasher. Try to smash it to at least a half inch thick or less. Let it cook for 3 minutes and then flip (do not smash again) and go for anonther 3 minutes adding a pinch of sea salt and deli style american cheese. For added flavor I will spagehetti spriral cut a white onion and put a little pile of onion on the hot oiled griddle first before smashing the raw beef on top of the onion. So good!
Interesting choice... the griddle was theorized to hold more moisture, but the griddle was treated to pre-oiling n-e-way??? I'd expect more carmelization due to the added oil.
The burger on the flat top benefit from being cooked next to the one on the grill which dripped its fat and created the barbecue smoke we all love. The flat top on its own though? Hmm.
Here's my problem. With me there's always gotta be a problem! Lol! When the fat drips down from the burger on the grill side that flavorful smoke that comes up is also flavoring the burger on the griddle side! Do I win anything? Lol!
Someone else mentioned that smoke idea as well. I'm not sure, but it's possible. Thanks for watching, James. Another griddle vs grates video in the works.
With my Q I use max heat and short cooking times. Produces excellent results. Have you done s steak tip vid. I'd like to compare techniques. I've had my W for 15 years. It's a trusted member of the family. 🙂
I agree with Keith Scott who also commented with regard to grilling on a Kamado. Kamado’s are expensive but if you are a serious griller and love good smoke flavor, that is the route to go. You sound like a great guy and everyone has their own taste buds but why would anybody ruin a great piece of grilled meat with ketchup. Put ketchup on fries. I really enjoyed watching your video cause being from South Texas, I am an avid griller.
First, Texas has the best bbq. I've been to Houston and Austin and wow! I considered a Kamado, but this cottage is only part time and seasonal, meaning I have to move my grills off the front deck to the shed in the back yard each time we come up here. Kamados are just too heavy for that so I went with the kettle. That said, I may be adding a smoker this summer. New comparison vid coming later this week. Thanks for watching.
So pleased to see Weber Q back in action!
I use it all the time at the cottage. Just so easy to fire up.

Great comment. Thanks and cheers!
Thanks for sharing this. Burgers are classic comfort food. Cheers!
I do smash burgers on the weber griddle. Every time I make them my guests are amazed how delicious they are! Reminds me of shake shack type burger. I'll never use the grill again unless I'm using charcoal.
I just made some smash burgers on the Q griddle yesterday for a new video I'm working on and man they were good!
@@GallaghersGrub NICE! I do one part of each: salt, pepper and garlic powder. Mix them all and then sprinkle it on one side of the burger. Turn it and then comes the processed cheese 😅. So good man
You did a great job on the video.
Thank you! I appreciate you watching. Cheers!
answering the hard questions. bravo.
The world has questions, and I provide answers. Cheers James!
Interesting to see not much difference, I didn't expect that. I'd prefer a test of the meat alone, without adding sauces and bread. Less confusion of tastes and more exact.
I'll do another test with meat alone. Thanks for the suggestion.
Flame-broiled has been Burger King's ad campaign forever. I thought I'd put it to the test
Awesome video as always! Question: is it possible to use 2 griddles at the same time on the Weber Q? Keep on grilling!
Weber recommends not using two griddles at the same time. It may cause a gas flow problem and possibly be dangerous. I'm not sure. Thanks for watching Adnan
@@GallaghersGrub well if roasting yes you can!
Forgot to add ....nice burgers!!
Weber Q’s are all about convection. Using two griddles kills that. Weber recommend against it.
Lmao @ Bob's!!! Love that show.
It's hilarious. Every character is great. It's actually a pretty good burger book too. Cheers!
Have fun with your new Q. Both burgers will be excellent, guaranteed. Thanks for watching in Berlin. Prost!
Great video. I am starting to like the griddle ones probably because of the caramelization factor. Both look very yummy though. 👍🍔. Stay safe
Right on man. Stay safe.
Nice video. By the way I think the burner and the air mixer need some cleaning since there is orange flame. You need a blue flame to reach high temp.
I think you're right. I'll be taking the burner tube off to see what's affecting the flame. Thanks for watching, Saleh Ali
@@GallaghersGrub Hey this might be a perfect time to do a "How to clean " video! Oh and what happened to the green Weber Q? Great video 👍
For best burgers, don't forget to wear your skx. Nice video. I'm off now to make one wearing my seiko. Cheers
I left my sarb033 back in the city. Not bad to be stuck in the country with the SKX. Cheers Amar!
I love Bobs Burgers and own that book! I'm a big griddle fan for burgers. You hit all my favorites in this video!
Thanks Natha for the kind words. It's a great book actually! Keep on grillin'
The sacrifices we make in the name of science...
Perhaps a part two experiment could be a combination of the two methods, and you can still do two parties at once where they each start on one surface and are finished off on the other. Anyways, I enjoy experimentation/comparison videos like these, it's science cooking :), keep it up :)
Thanks for the idea, Media Box. Appreciate you watching.
I’ve been doing this lately, and the burgers are tasting great!!
Most times it can be just up to ones taste buds. Either way, I dont mind both. I still like mine over charcoal with some smoke.
Good stuff! I like the 009 on the Zulu also.
I have a few other watches back in the city. When I used to watch The Walking Dead, I'd always wondered what watch I would wear in the zombie apocalypse. Well now I know.
My 173 is about 15 yrs old and my normal go to. I added a DD sapphire crystal and like it even more.
I make them both ways all the time, and they're always delicious. Cheers Dorsey!
Fat is good and healthy 👍
I suppose it begs the question - what's the point of the Weber Q over cooking in the kitchen, if the griddle is better anyway?
👍😂I love that ending & your t-shirt. 💝
Thanks LovingAtlanta. Appreciate you watching.
I think if taste is about the same, I would prefer the grilled burger, as I'm sure it's less calories.
This should have been a consideration. Grilled is definitely less calories.
nice comparison Cheers
Thanks al. Appreciate you watching.
Good review, the charcoal used can make a lot of difference in flavour given to the grilled burger though. I like your watch is it a Seiko?
Yes, Seiko SKX009. Stay tuned for my next vid regarding charcoal.
Goodmorning from the Netherlands! Like your videos!
Which kind of Q you are using??
Good morning Netherlands. I use a Q1200. Here is a link to my long term review. ruclips.net/video/Ud1z-Ev7kic/видео.html
@@GallaghersGrub thank you!!
Both look good to me mate but got to be grill for me. Stay safe mate 🇬🇧
I just bought a griddle, it has not been delivered yet. so i will find out when it get delivered ..
Has it arrived yet? Would love to hear what you think.
@@GallaghersGrub Yes I got it it’s heavy but I have not had a chance to use it only had it for about two or three weeks. It’s been raining a lot where I live.
Try using wood-chips that would give really good taste to your grill-side burgers.
Right on MEROUK2. Thanks for the idea and keep on grillin'
They sell kits for exactly that.
Great music in this video too
Thanks again.
Grill for me, I know it’s probably not possible with the Q but the grill side should have been a little hotter to get that charbroiled/grilled taste
Both burgers were perfect. Do the comparison yourself and see what you think. Thanks for watching. Cheers Shaun!
Well but since your griddle is on an open gas grill you get the smoke circulated from droppings of the burger that was grilled. Hence you get the best of both worlds (smoke from grill, crust from griddle).
You could have a point there. Cheers Prodigalzson!
When you add salt to the outside of the burger it draws the moisture out of the meat.
On a griddle these juices then cook onto the outside of the burger and increase the flavour. On a grill they drip away.
Well said. Thanks Wayne
I add salt after cooking....none needed prior
yay so excited that you're back with the q
I had to hook up the full size propane tank I'm using the Q so much. Thanks for stopping by the channel.
So good!
Funny, I was just thinking of a smash video idea yesterday. Thanks for the great comment. Cheers Steven!
Have you tried this with other meats?
Not yet. But I've got some ideas for other meat comparison videos. Thanks for watching Rich.
Ill have to do this on my weber soon 😂
Fun video,Thanks
Appreciate you watching. Cheers Reggie!
Interesting choice... the griddle was theorized to hold more moisture, but the griddle was treated to pre-oiling n-e-way???
I'd expect more carmelization due to the added oil.
The oil was to prevent sticking. The additional caramelization comes from more surface area touching the hot metal. Cheers a buddha!
@@GallaghersGrub So food should stick to the grill, but not to the griddle? Seasoning and the fat released from the meat prevent sticking.
I love a good grilled burger found out thin patty's like dinner style sold at Walmart are awesome for the griddle. Smoked burgers are really good.
Great tip! Thanks for watching.
do a tripple test with a burger over charcoal
I have another comparison in the works. Should be out later in the week. Weather not cooperating.
The burger on the flat top benefit from being cooked next to the one on the grill which dripped its fat and created the barbecue smoke we all love. The flat top on its own though? Hmm.
That's possible. Both were really good whatever the case. Cheers Daz!
What watch are u wearing
In this video I'm wearing a Seiko SKX009 with an olive nato strap.
Charbroiled over pan fried all Day! You can get a nice sear on a grate but they have to be close to the fire.
Thanks for the reply WFO Dave. Cheers man!
Can you guys not make anything without cheese?
I can't imagine a burger without cheese. Typically bleu cheese.
Burgers that sear In their juices is the way to go. Griddle is my choice.
The griddle puts out a great burger indeed!
With my Q I use max heat and short cooking times. Produces excellent results. Have you done s steak tip vid. I'd like to compare techniques. I've had my W for 15 years. It's a trusted member of the family. 🙂
Check the "Beef" playlist on my channel for steak videos. I love my Q and my kettle. Thanks for watching, Paul.
I might be wrong, but I thought you were going by another name, what happened to “fire escape griller”?
I moved and no longer have a fire escape. Took some time off, but now I'm back.
City Escape Griller that makes sense!!! I’ll keep watching your videos regardless, I’m a big fan, “KEEP ON
GRILLIN”.............
