BLACKBERRY MACARONS
Makes 20
Macarons
300g almond flour
300g powdered sugar
110g liquefied egg whites (see below)
250g caster sugar
75g water
110g liquefied egg whites
3 tbsp activated food safe charcoal
blackberries (you’ll need about 6 blackberries for each macaron. They’re big macarons)
Frosting
1 batch chocolate Swiss meringue buttercream frosting (recipe: thescranline.com)
3 tbsp activated food safe charcoal
*if you're on medications be careful when ingesting charcoal because it can absorb your meds and mess with em* 💗

Can I just say, I love how you in every macaroon video you explain The Ribbon Stage. I think it's really nice how you don't just say, "I've talked about this before, so you should know" or, "I've made a video on it, so check that out if you don't know what it is". I think it's really great since you never know which video of yours someone is watching for the first time, and it also helps remind everyone how important it is to not mess up when you're mixing at that point.

I don't know if this is the same in America but in the UK blackberry bushes are everywhere. These bring back such good memories of picking them in the summer with my family and making jam, curd, crumbles and pies with them :) x
I'm going to need to know where you keep seeing these blackberry bushes in the UK because I haven't seen one my entire life living here 😂 They're yummy though, so you're lucky to have found some wherever you are
My front door neighbor had a bunch of blackberry trees. Then the new owner of the house got rid of them ☹️😢 picking them is one of my favorite memories I have of my childhood. Also when I was even younger, around 4-5, we lived in a duplex and we had a few apple and cherry trees and we picked cherries everyday. I could even pick the cherries from the second floor balcony lol 😂
We have them in front of our front door and down the pathway. Basically our whole village is covered with them.
I wish we had bunches of blackberry bushes!

For my question, my macarons seems to turn brownish on the surface pretty quickly when baking, how does yours come out so gorgeous and vibrant in colour?

Blackberry is my favorite! Making some of your unicorn macarons today. I had problems with my test bunch until i realized there were 2 separate additions of 110g of egg whites! Can you refrigerate the egg white almond sugar paste and use it the next day?

Question concerning macaroons. Why do people not put fresh fruit in them more often? (These are the first ones I’ve seen with fruit on them) Is it because of the dry consistency or? Just curious I’ve never made them before 🙃

Question: What’s the difference between making a sugar syrup and then adding it to egg whites versus just pouring and blending sugar with egg whites when making macarons?
Does the charcoal change the taste of the buttercream? I've always used color paste when coloring cakes and buttercream.
Also are you a self taught baker or did you go to school. I went to CIA in NY😄

Tika Williams I usually only add black gel food colouring to chocolate flavour things. It actually makes it black instead of just grey x
Why do you mix the first batch of eggs into the almond flour & powdered sugar mixture instead of just mixing it with the meringue? What does it do differently?

I really love this and i would like to make it myself but i have no idea how to clean pan with the sugar syrup. I have done something like this in the past but it screwed up my pan and i dont wanna throw everything in my sink! does anyone have any tips on how to clean sugar syrup???
If you boil some water in the pan, it should dissolve any hardened sugar on the pan

I have a question about silicone mats. Every time I attempt using the mats the macarons get stuck even if I bake at recommended time. I'm I doing something wrong?
Annabel Munoz If they are baked on the outside but the inside is still sticky, it’s because you are baking the macarons too quickly at a high temperature. You should adjust the temperature and time you are baking it
If they stick, they‘re not done yet
Annabel Munoz sometimes silicone mats make macarons do that. Baking paper will fully dry them out, so try making macarons with that :D
Do you bite your nails?, just wondering either or you keep them really short to not get in your way.

An easy and safe substitute for charcoal is coconut ash or just black food coloring. Neither of them really have a taste.

I’m actually a professional pastry cook and I still suck at these. I did okay in pastry school but now I just suck and I don’t know how to get the syrup in the bowl without losing half of it all around the bowl.
It hits the bowl and just doesn’t mix in or it hits the whip and splatters all over the bowl. WHAT GIVES??
