Chicken a la King | Quick-Fix Comfort Food

  • Chicken à la king sounds fancy, but this easy chicken dinner is downright comforting and SO simple to make! It comes together quickly on the stovetop with lots of yummy veggies, chopped chicken, and a creamy to-die-for sauce. You can serve it over pasta, rice, or my favorite homemade biscuits!
    It's a quick dinner-time recipe your family will absolutely love. You don't need any canned condensed soups and you fruit can forget the frozen TV dinner renditions. This easy chicken à la king recipe is where it's at! Weighing in at less than 30 minutes, start to finish, this is a family-friendly dinner you just can't beat!

    Chicken a la king ingredients:
    6 tablespoons unsalted butter
    1 red bell pepper seeded and finely diced
    ½ yellow onion finely diced
    2 ribs celery finely diced
    1 (8-ounce) package sliced button mushrooms, roughly chopped
    2 teaspoons Kosher salt, separated
    1 teaspoon black pepper, separated
    ½ cup all-purpose flour
    2 ¼ cup unsalted chicken broth
    ½ teaspoon garlic powder
    ½ teaspoon paprika
    ½ cup frozen peas
    1 cup heavy cream
    2 cups diced or cubed cooked chicken
    How to make chicken a la king:
    Add the butter to a large skillet (with a fitted lid) or a Dutch oven over medium-high heat. As soon as the butter has melted, add the diced bell pepper, onion, celery, mushrooms, 1 teaspoon Kosher salt and ½ teaspoon black pepper. Stir the mixture until evenly coated in the butter. Reduce the heat to medium, cover and cook for about 6 minutes -- just until everything has softened.
    Sprinkle the flour over the vegetables and stir for about 1 minute. Add the chicken broth one big splash at a time, stirring until completely mixed and smooth after each addition.
    Once all of the broth has been incorporated, stir in 1 teaspoon Kosher salt, ½ teaspoon pepper, garlic powder, and paprika. Simmer for 2-3 minutes, or until slightly thickened.
    Stir the peas and the cream, and bring to a simmer. Simmer for about 5 minutes more, then stir in the chicken.
    Serve over biscuits, rice, or pasta and enjoy!

    Never made that before but I'm going to. It looks similar to chicken pot pie filling except better.
