Canadian truck nut, and future mechanic here. I know some guys here in North America have a chip tuner device where they can change the air fuel ratio. Essentially what they're doing is programming the injectors to dump more fuel into the cylinder, therefore creating the black smoke. Some older trucks here have mechanical engines and cannot be equipped with a chip tuner, because there is no computer in the engine, therefore they'll use bigger injectors. I imagine the same applies over there.
