Ingredients:
4 cups all purpose flour, sifted
1 tbsp. sugar
4 tsp baking powder
1 3/4, plus 2 tbsp warm milk
1 tsp white vinegar OR lemon juice
4 tbsp. vegetable shortening (cookeen)
6 tbsp. butter
1 tbsp. ghee or vegetable oil
For cooking:
1 tbsp. ghee or vegetable shortening
1/2 cup vegetable oil

Hi I had a fear of making buss up shot and had used many other recipes with not much success. I used your recipe a couple days ago. I must say I was impressed and my roti came out fantastic. The use of milk helps make the paratha soft
I made this recipe this morning and it came out perfect, kneaded the flour last night, rolled it with the fat, left it overnight in ziplock bags and cooked it this morning, it came out so tender, soft and flakey. Thank you for this recipe and for explaining every step of the process, you are a great tutor 👍
This is the only recipe I used now , Frm the time she post it on fb . Made this roti for a potluck and got lots of compliments how fluffy and light it was .

Beautiful presentations and a yummy outcome. I tried it today because you made it seem so simple and interesting. First time mixing with milk. Honestly , I ran out of milk , but I had powdered milk on hand. I followed how much to mix for a 8oz glass and went on from there. Yep, added the vinegar also. So yes, it's possible with powdered milk also. I added a pinch of salt to the recipe ...I loved the softness and layers as I clapped 👏 my roti. It stood in place and not buss up like a rag cloth ...it was perfection ....only difference ( in my openion) , it tasted a bit too sweet. .but never the less , will keep this recipe and 1/2 the sugar part. ..keep up the good job beautiful chef .

Update, I get lots of compliments for my roti based on your recipe. I make in my mixer and had to add a about 2 cup liquid - but this may depend on the flour.

Hi, thank you for you feedback. How many roti did you get from the recipe?
To make 100 it’s going to be at least 18 times the original measurements depending on the size. I recommend making batches of 4 measurements at a time so it’s easier to mix.

Hi, the vinegar keeps the roti soft and silky. Also I got my rolling pin on Amazon.com
After you paste it and make the final Loyas, how long do you leave it to soak before cooking?
Hi, it can rest for at least 30-40 minutes. It also refrigerates and freezes well, just thaw it until it’s almost room temperature and cook as usual.
Do you make Sada roti?
I don't ever seem to get it right.
Hi, yes.
Ingredients:
4 cups flour
4 tsp baking powder
1/2 tsp yeast (makes a soft roti 😉)
1/2 tsp salt (optional)
1 tbsp sugar (optional)
1 1/2 cups warm water (or as needed)
Mix dry dry ingredients together. Add water gradually until the dough comes together. Knead 2 minutes until a smooth, soft-medium dough forms.
Cover and let rest for 15-30 minutes.
You’re ready to roll and cook the roti. 😉
Since you’re using vinegar, would you experiment with buttermilk ? Thank you 😊

Can ONLY 1 type of be used? Why Burt, ghee and shortening?
I usually use cookeen/vegetable shortening and butter or margarine. Ghee can also be used. This gives the best results 😉
For some reason I find that baking powder get the roti stiff. Can u tell me what am doing wrong
Hi, the vinegar will help keep the roti soft. Also, make sure to place the roti from the tawa into a lined roti cooler so the steam keeps it soft. 😉
How do we store this if we want to freeze it?
Hi, you can wrap it tightly in wax paper firstly, and then plastic wrap. Place in a zip lock bag to avoid frost bite. When reheating, wrap the serving portion in a slightly moist paper towel so the roti will be soft, and serve immediately. 😉
