      use just 1 cup water first, then add abt 1/4 cup more.. and knead it less..the dough gets softer as it sits.........

    This is the very first video which shows kneading without cuts, hence appears very trustworthy.
    I've been looking for a perfect dough maker and this appears to be an incorruptible and unimpeachable one. At last, wouldn't get mad at the very thought of making a dough.

    thank you for doing this video! i prefer flat breads to loaf breads most of the time. most videos and recipes either do it all by hand or use the machine for a little then knead by hand. i don't have the space or the stamina to stand long enough for all of that. it's already in the mixing bowl, why not let it do the work. what i think i like most is that you say what number to set the machine on. even kitchenaid recipe books don't do that, really frustrating.

    Please don’t make it complicated. All u have to do is measure dough and water , put them together and set to speed 2 and that’s it. I have been making dough like this from last 4 years without fail. And people you don’t need kitchenAid mixer for this, any mixer ll work as long as it has right dough hook.

      This is kitchen aid, there are various versions available based on the power (watts) of the machine.
      There are other brands as well cusinart, hamilton beach etc.
      These machines ate not only used for kneading dough for roti but u can whip cream, make cake batter, shred meat and do various other activities with this machine that makes your life much easier.
      The machine lasts u almost forever if u select a good brand.

      Not at all . Buying 40000 machine which will not work for 2 years . Also you have to beg for service. You can buy rotimatic instead

    You can mix the dough in your regular mixer-grinder too using the same method. yes, I have done it. The only inconvenience is that you have to wash the blades and the container afterwards, but it would not be that messy as you think it would be.

      That's right. A low power machine will struggle to mix the dough.

      Cleaning the jar or bowl and blades afterward is a headache in food processor
      Or mixer. I have Preethi food processor and cleaning blade is very difficult after kneading.
      In kitchen aid cleaning
      Looks easy.

      @@mishaalzk6033 yes , I first did it as an experiment ( whether it is possible to knead dough in regular mixer-grinder) and was not very hopeful about the result. But it turned out much better than my expectations. If you add a spoon of oil in the mix, the dough will not stick to the blade much. Try that and see. You have to take good care of the water quantity though. Make adjustments to the flour and water quantity 2-3 times to get the right consistency of the dough.

      There is a smaller size model, it will knead smaller quantity in 1 go. I prefer artisan model, lift away handle. Another model is professional series but in my opinion for home cooks, artisan model is best. I use it daily.

      yes, very soft! The tip to make soft rotis is to use correct amount of water. If water is less, rotis come out chewy.

    This is amazing.
    I really want to know how you do the roti rolling technique without lifting your hands or switching the direction in which you roll the roti. You seem to be doing it in one go.
    And that too without using extra flour. It would be great if you could do a video of that.

      what i have learnt from my father is you dont put equal pressure on both sides of the rolling pin, you keep a bit higher pressure on one side and the dough automatically rotates while being flattened at the higher pressure area. the other thing practicing this by slowly increasing the pressure till you develop the necessary muscle memory to do this without thinking. hope it helps you, as it helped me.

    Ty soo soo much! This being a never ending issue, id gone back to getting rotis from costco untill now!! Loved the way the dough came together. Could you please post one more for poori too? Tried using the same method but for some reason, its just not puffing up. Thanks in advance.🥰

      Poori dough needs to be slightly stiffer than the roti dough. So just reducing the amount of water should do it. Also do not roll out your poori's too thin. They don't puff well when you roll them thin.

      Yes you can. If your mixer is small, you can adjust the quantity of flour accordingly. SO you can try 2 cups flour and 1 cup water.

      Hello! Can you please tell me do you have to unplug your stand mixer from outlet before touching the dough hook? To me happens that I feel a little electricity strike. Then I unplug stand mixer completely from supply and then I can safely touch dough hook to remove it.

    - Is there any better tool do you suggest best for Dough maker currently?

      I make more and then divide and wrap in plastic wrap and freeze portions I don't need. When I need more I thaw for two hours and then ready to go. Thanks for your demo as I lost my original but yours is the best.

      I knead it total time of just 3 mins from start to finish. Then let dough rest for 30 mins, covered.

    Whats the model if this standmixer- how much minimum watts power moter it should have? Can u make a video on how to choose a good stand mixer. I bought two both turned out to be rubbish.

      Thanks for your comment. Sorry to hear that your other stand mixers were no good. It depends what do you want to do with a stand mixer. To mix normal cake batters or to whip cream, a normal hand held or light weight mixer is okay. Kneading dough is one of the heaviest jobs a mixer can do. Dough is very dense and a mixer needs to work hard to knead it. Light weight mixers will break doing this. I do not own many mixer to do a comparison video, but I suggest you go for atleast 300 W power. American Test Kitchen channel has a good video comparing various mixers and they also suggest Kitchen Aid. I suggest you watch that video. Link below. My model is 5 qaurt Kitchen Aid Artisan.       Here in USA its starts around 200$, many different models. Amazon generally carries this.

      Cook with Kash and Manish 200$ 😲 50-100$ should have been an apt price in my opinion. Generally electronics are cheap in USA, so if this costs 200$ in USA then in India it wouldn't cost less than 16-18k INR.

      This is high quality analon which I only use for rotis. Don't use roti pan for other purpose. It increases the life. You can also try cast iron tawa from Lodge.

      This is sold as 'atta' in Indian stores. OR you could buy '100% whole wheat' from Walmart etc.

    Video starting main hook state tha aur video ke, last Mein hook band tha which time you change the hook? Please explain this question.

      It only comes with the 1 dough hook attachment, they never changed. The first image is taken at an off angle so the attachment looks straight, but it's the same hook shaped attachment show later in the video.

      Hi - This mixer can be used for dough, cake batter, whipped cream etc. This is KitchenAid Artisan Series 5 qt mixer. There are two more models available - 4.5 qt (I find this is a small size) and 6 qt Professional 600 series (this has lift bowl feature, I personally don't prefer that). I find 5 qt to be an ideal size.

    My mother has frozen shoulder so I make a dough for roti, but I want purchase dough maker can u tell me how much it cost...I am how much noise it creates when it making dough. I am planning to buy insala dough maker with rs 14,499. Pls suggest kitchenaid or insala....

      this is not very noisy...gentle noise..i'm using my kitchen aid since last 7 yrs, no issues. I don't know about insala brand, sorry. Kitchenaid is really v good. They have a smaller capacity one which comes a bit cheaper than the one I show in this video.

    Hi l, I used approximately 2 cups of water for 3 cups of flour. The dough was quite soft when I finished the kneading, but in the morning when i took it out from refrigerator for making rotis, the dough was reallly hard. I had to keep it outside for at least 30 minutes before making the rotis. Any suggestion, what went wrong and what could be done. Thanks ☺️

      Cover the dough in airtight container. Apply some oil on top so that it doesn't dry out. Air contact makes the dough dry and hard. Thanks for the comment.

    Just made these and not sure if dough was too dry or if I had them too thick but I could not get them to puff up. Do you have any suggestions?

      It may depend on the flour. Try to add a bit more water if it came dry. Puffing happens when there is enough water to create steam inside. There can be two reasons for less water 1. Too little water when mixing dough. 2.Cooking on pan for a longer time (lower heat) and water dries out. You can also experiment with slightly warm water to make a softer dough. Good luck. Let me know how it turned out.

    Can you tell me which brand of tava you used for making roti ?

      I used the Anolon brand crepe pan as tawa. I did a lot of research and ended up buying this one, Other safe option is to use an iron tawa, but the ones we get in the US are very heavy.

      We use Sujatha atta.

    So many newbs out there. No one asked which wheat flour you used. The process, timing, the end result and the softness of the roti depends on the kind of wheat flour used. Before anyone responds saying Whole wheat flour, do note that there are different types of wheat. Common Wheat, Durum Wheat, Hard White wheat (most of widely available affordable flour is made from this) and not to forget the worlds best Sharbati Wheat. We didn't cover all of them, but do note, there are almost 20 varieties of wheat as far as I know.

      King Arthur Baking has the best variety of Wheat and Wheat blends compared to others as well as providing Baker's dry milk for crust tones and bread textures.
      Pricey, but you get what you bake with, and how you use what you bake with.

    May i please have the recipe for your roti. I cannot cook rpti correctly for the life of me. Ive tried and tried. No good. I get so sad. When i go to clap it. It breaks up in a million pieces. Besides it dont look good. Please advice. Thank you. Hope you respond.

      I Use 3 cup whole wheat flour and 1.5 cup water to make the dough. If you use 2 cups whole wheat flour, use 1 cup water and just few tablespoon more. Once dough is ready, keep it covered for 20 mins and let it rest. Try making smaller balls to roll the roti, as that is bit easier. When you roast it on the pan dont over cook the roti as it can turn hard.
