Mmm i love this dish (I usually make the 'fideuà fosca' ) but in home we've always used instead of 'pimentón' the "ñora". We cook all in the same pan (starting with the calamari and prawns/.. and taking them once done) to potentiate the flavour. Ah, one trick with the ink. Pour a bit of warn 'fumet' in a glass, put the ink inside and stir, then it's easier to integrate to the fideuà/arroç. NICE VIDEOS!! I like how you explain the dishes and teach while reacting.

My family home was one of very few houses in Egypt that makes squid ink rice, which my grandma learned from her mom who was from Crete, Greece. Oh the look on my friends faces when they see the black rice for the first time and when they taste it, well, those who actually had the stomach to try it. Not everyone was willing to 😅

Hey! thank you very much!! haha I use a stone and my steel, but i need to get another stone as it's old. I have never had anyone else sharpen my knives. Well at the moment Im doing RUclips full time. but i have worked at (Burners Tavern, The London Edition) under Chef Jason Atherton and at Hotel Arts Barcelona (the Ritz Carlton). Looking good bro. Some reason when we start sell this paella nigra people didn’t order at all. That's why we take out from the menu after 3 months. Anyway i liked it.🙂👍

My family home was one of very few houses in Egypt that makes squid ink rice, which my grandma learned from her mom who was from Crete, Greece. Oh the look on my friends faces when they see the black rice for the first time and when they taste it, well, those who actually had the stomach to try it. Not everyone was willing to 😅

Hey! thank you very much!! haha I use a stone and my steel, but i need to get another stone as it's old. I have never had anyone else sharpen my knives. Well at the moment Im doing RUclips full time. but i have worked at (Burners Tavern, The London Edition) under Chef Jason Atherton and at Hotel Arts Barcelona (the Ritz Carlton). Thanks for the reply! I also have a stone but it's pretty cumbersome to sharpen a large knife on a small stone, even more so if you add my laziness to the equation..
And I asked because I'm moving to Barcelona in August and thought you could recommend some place :) take care!
@@v0yyy no problem!! i know what you mean but there are some very good youtube videos on how to use one!! check out Burrfection he is a pro knife sharpener! and as for work in Barcelona I would say that, hotels may be easier and safer to find a job. but now with this crisis, it's not the best time. let me know if you need any info on places to rent! stay safe!! :)

Looking good bro. Some reason when we start sell this paella nigra people didn’t order at all. That's why we take out from the menu after 3 months. Anyway i liked it.🙂👍

Ohhh, I love squid in ink ! Does that ink in the bottle come with any flavoring, like when you get the squid in its ink , or does it get the flavor from the sofrito ?
it does have a flavor and it will add to the dish.

Hi James, love this recipe. If you cook in the oven, how long and at what temperature do you recommend?
for paella its about 12 mins at 180c to 200c or you can finish it on the stove top!
