I made this today. The end result was exquisite. I had to play with the time and temperature because the shrimp were not cooking through and the rice looked hard. I lowered the temperature and let it cook longer at low heat. Other than these two adjustments, I followed your recipe step by step. The taste was just the way I imagined it would be, only better. It brought back many memories of my childhood. I truly enjoy your videos.
That looks great. By the way in China when it was produced in small quantities( so long time ago) it was called : Forbiden Rice, as only people high up were allowed to have it- Paella is excellent. Thank you for sharing. Happy day everyone
Forbidden rice is a different thing, I think. That’s actually a black rice while here he’s cooking a short grain white rice, the bomba type which upon the addition of squid ink gets the typical black colour. We have a different version in Italy for risotto or pasta, even a combination with polenta.
That’s black rice that you’re talking about. It’s a variety of rice that is really black and it has very little calories so it’s good for people who are on a diet. This one is Paella Negra, squid ink is used to produce that colour.

Albert, what size was the psella pan on the base and outer rim? I get confused when measurements are stared for paella pans? Is 1 cup uncooked rice for 2 ppl full course? Lastly other than lemons, can I add peas or some other vegetables? I hope to hear from you soon thx

I used a 12 inch (30 cm) pan, yes 1 cup uncooked rice is 2 full servings, you can add any ingredients you like :) Much love
