i personally use the curing mix as a dry rub. i either boil the meat in a mix of pineapple juice and beer and brown sugar, sometimes with star anise, bay leaves, rosemary and thyme for a deeper flavor. i glaze with brown sugar in the oven or if i am rushing just use a kitchen torch to caramelize the glaze
