    Thank you so much for the advice. My first attempt before watching this video went awful, as the poor squid turned to rubber and I could not stomach eating it. The real time cooking helped so much, I can't wait to try again.

    Fried calamari is my favorite food. Now, thanks to this amazing video I can prepare it! My only questions are, why can't you cook the long tentacles, and can you do anything with the eyes & guts? Why can't you batter & fry everything like a prawn?

    Thanks for the video, today I walked by the market in Amsterdam... always (for years) wanted to make squid but never knew how to make it. This video is so simple it will help the common man out and let him cook like a Michel star chef. I even saw you put some lemon juice prior in the pan but only a real video expert could see that quick move. Nice keep up the video's maybe octopus next?

    Squids are the cutest animals!!!! They are vital to the ecosystem, they are intelligent and aware of themselves. More should be done to protect them. What most people consider a “nuisance” or “dinner” is really an interesting animal that offers more than meets the eye.

      Right, but they are also delicious; I agree with animal rights but it also is natural for us to eat this. Look at Japan... one of the healthiest nations... also extremely pescatarian.

    Beautiful and instructive video. Can I just suggest for the cooking part perhaps to use a bit of white wine, as the garlic was coloring a bit too much, and for flavor :) A nice alternative to wine would be to flambe with some great Pastis. If you never tried it, give it a go, you won't be disappointed.

    One of the best on here but still needs a few tweeks.
    trim the bottom of the head and top if its to thin.
    Cut up the head where the spine was and criss-cross like you did.
    then wash in cold water and dry.
    then wash squid in oil and drop a small bit into the pan.
    This just makes it less oily and allows it to cook abit more in its own juices as for the washing and trimming when you feel it will feel slimy and the top and bottom can feel different from the rest and cooks and tastes different, you want it to feel like velvet in your hands and feel the same thickness all over for the best tastes.

    Great cooking and great music, especially Christopher Cross. However I really like leaving on the long tentacles and using the two "wings" removed from the tube as well for eating. Other than these two minor things, looks like you served up a great low fat calimari dish.
    Thanks for sharing and if you ever need someone to help you consume some of your delicious squid dishes I volunteer. :-)

      Many thanks Duane,a fresh squid will have bright eyes and will have a very vivid colour usually pinky red,which slowly fades the older it gets,also it should smell fresh,not of fish but of the sea.,you can eat all squid,just prepare it like this,please check out my newer videos,i have new squid and octopus videos,all filmed in HD and close up but this time with commentary,i love the music but unfortunately you tube don't like me using it,thanks for your great comment mate,and please do check out my other vids,better still subscribe then you wont miss out as i release 2 a week,all the best mate.Scott

    I done this today my squid was a good deal larger than those those, the wings didnt come off easy at all, i deep fried it in a coating of flour and cornflour for 30 seconds max and it still came out very tough and chewy

      I buy frozen squid in the market. It probably won’t taste as good but at least you can keep longer if you can’t eat all at once.
