Stir Fry Crabs

It’s Dungeness crab season and we got lots from the ocean. Let’s make a simple stir fry dish.
Here are the ingredients:
4 Dungeness crabs
4-5 TB oyster sauce
3 TB sriracha sauce
Fish sauce or salt to taste
1 1/2 TB corn starch mixed with 3 TB water
1 1/2 cups water
1 cup cilantro
1 cup scallions
2 TB oil
1/3 cup ginger
2 clove garlic
1 stalk lemon grass
Red chili (optional)
