Mushroom Strata with Chef Frank

  • If you haven't tried a Strata you have to make this. Basically a savory bread pudding a strata lends itself to tons or creativity. I am using an amazing cheese from our sponsor and some really nice sherry, but feel free to go crazy and make your own take on this recipe.

    1 baguette, torn and dried
    1/4 #/113 g butter
    8 oz/226 g pancetta, diced
    2 small onions, small dice
    6 cloves garlic, chopped
    1 1/2 #/680 g cremini mushrooms
    12 oz/340 g Champignon Mushroom Cheese
    2 cups/473 ml heavy cream
    8 eggs
    1/2 cup/118 ml dry sherry

    This is a great dish for the holidays! For breakfast, as a side or as a main. It you can make it the night before, let it soak then bake it in the morning. It also reheats well. Enjoy!

    Delicious! Nice to see German dairy products making it to the US. I added some dried mushrooms to the recipe, makes it even more mushroomy.

    Yes Sir! Already have a vegetarian friend in the UK checking this out. I believe Champignon is still marketed as Cambozola in some parts. Great recipe!

    Looks great as usual. Thank you. Would like to try it as a side for Thanksgiving but I will never find that particular cheese in time where we live. Would be helpful to know what a commonly available substitute would be. If one was mentioned I missed it.

    Are cremini mushrooms the same as UK chestnut mushrooms? they look similar but you never know.

      I do not know. Cremini are just baby portobello mushrooms

      Try using water, or vegetable stock -- or skip it altogether. It's all about the mushrooms.

    If this is a strata, why does it have no layers? I can see why a lasagne is a strata, but this looks like casserole. And as it contains enormous amounts of butter and cream, I won’t be making it.
