Love your recipes. I am "pescetarian" so I focus on most of your vegetarian and/or seafood recipes. I really enjoy how you seem to be creatve and often use ingredient combinations that are "outside the box". So.. wanted to let you know that I have found a new "trick" for vegetarian chili that has been amazing. Add sweet potato, cubed and steamed ahead of time. But then if you cook the chili long enough, no reason the sweet potato couldn't probably cook in the main pot.(I don't know but I bet you do with all your experience.) My vegetarian chili usually consists of lentils and most other standard ingredients. But one day I had a left over baked sweet potato in the fridge and VOILA! discovered something that is not now just a "second thought". With that success, I also have tried dried apricots chopped finely in the same recipe in place of the sweet potatoes - another nice addition. I bet dried figs or probably fresh figs finely chopped would work great too, do you think? And one last thing is that I often use about 1/2 to 3/4 cup of coconut milk (from the can - not "low fat") to thicken the chili. Not so healthy, I guess. Pretty good but nothing so far has been as good as the sweet potato. I bet pumpkin or acorn squash would work just as well. And another "last thing" would be to think about adding mushrooms sauteed with the onions or other veggies for the "umami" flavor. Do cajuns go in for "umami"? Looks terrific! I had to "lol!" because you do 2 things I also always do - rub my dried oregano before I toss it in, and put some water in my tomato sauce cans to get out all of the sauce 😊

@@telliiii2289 It definitely helps give it a deeper flavour. It works well with the sharpness of the lime juice. Just a couple of squares though (dark not milk).
@@anahata42 It adds to the taste definitely but needs to be dark chocolate. Not tried adding sugar but i know some do to counter the acidity of the tomatoes.

This looks very similar to a chili I made earlier this week, except I put in a pound of ground turkey, so it wasn't vegetarian, and instead of having muffins, I added corn to the chili also.
I would've put corn in this chili, but CG used it up baking her muffins...I don't think I ever make this chili the same way twice, since I always add whatever odds and ends I have in the fridge, although I do generally use two different kinds of beans, or even three different types if I'm using a bigger pot
i always have cans of beans and tomatoes in my household ..they can be used in so many ways ...have a great weekend ..now i must go over my taxes ...may the Lord protect me ...:D
yep...cans beans and tomatoes in the pantry give you lots of options...it's like garlic and fresh ginger in the fridge, feels like something's missing when they're not there
i like it a little soupy so that i can add corn flour or pulverized tortilla chips at the end to thicken and add that flavor to it that i like in chili.
CG likes to add Frito corn chips to the top, but we are Frito free at the moment, sometimes we'll sprinkle a little shredded cheese or fresh cilantro on top, too
I love those muffins--even though I'm trying to cut down on flour!--it's a slippery slope!...she made another pan of corn muffins the next day and I shot a video that'll I'll edit eventually if the sound and images aren't too mucked up...I'm definitely not the best camera person...and I like to rinse and drain the beans to reduce the "can-y-ness", and it also cuts down on the salt, which I pay more attention to now that I've passed the half-century mark

Looks great. For a slight variation I usually add the juice of half a lime and 2 or 3 squares of dark chocolate a few mins before the end of cooking.

My mom puts sugar in hers. Is this sort of the point of the chocolate or is it for a different taste?
