When the 5 grandkids and their parents came to live with us I was cooking for 9! I made this for supper with sides of fresh green beans, sliced fresh tomatoes and fresh cucumbers all from the garden. The kids had never had it before. I ended up making two huge pans of it! We used the refrigerated PKG kind. WOW! And yes we called it SOS, they called it gone! That was 8 years ago and once and awhile they remember and have asked me for the recipe.

In the 1916 MANUAL FOR ARMY COOKS, page 181, we find recipe 384:
    Beef, chipped (for 60 men).
    Ingredients used:
    15 pounds chipped beef.
    1 pound fat, butter preferred.
1¼ pounds flour, browned in fat.
    2 cans evaporated milk.
    1 bunch parsley.
    ¼ ounce pepper.
    6 quarts beef stock.
Melt the fat in the pan and add the flour; cook a few minutes; mix the milk and beef stock, or water; stir the batter in slowly to prevent lumping; add the beef and cook a few minutes. Add the parsley and serve on toast. If the beef is very salty, it should be scalded before cooking.

When I was in the service they cooks used ground beef. It was not bad but with a little seasoning it wouls do. I now make it with dried beef but to reduce the salt I rinse the beef before adding it to the white sauce. Love lots of pepper.

Enjoyed watching Steve cooking this, you can tell he was having such fun.
If I had a nickel for every gallon of this the U.S. military has served I would never have to worry about money again. The official name was chipped beef on toast, of course everybody called it S.O.S., very efficient use of day- old bread.
Thanks so much for keeping Steve's channel and his memory alive.

Ive watched a dozen recipes - all somewhat similar with slight adjustments to the butter / flour / milk ratios (and meat). I make steak or pork chops au poivre from time to time and happened to make chops this week. Ive seen recipes using 2% and whole. I think Im going to try this with Heavy Cream. Why not haha. Somehow I missed this video! An alternative for the chipped beef is Buddig's 'skinny' meat packaged sliced Beef and diced to your preference size. Growing up, Mom used Buddig to make 'skinny meat' sandwiches with cheese, pickle slices and mustard packed inside a hamburger bun, wrapped in tin foil and baked in our over for a few minutes to melt the cheese and toast the bun.

Oh how I miss Steve. His personality is just so honest, genuine, down to earth, and attractive. These videos of him bring back so many fond (but now bittersweet) memories of my childhood. Sometimes, just watching these cooking videos brings tears to my eyes. Everyone that used to be in my life when Steve and Shotgun Red were also a strong presence in my life are all gone home now to our Heavenly FATHER. It shocked me so much to hear of Mr. Hall's passing back in December 2018, and oddly, even though I never met him, I took it very hard. It is so hard to believe that he, too, has now gone home to our Heavenly FATHER just like my family members before him. We all miss you, Mr. Hall, and I personally wish you the utmost of peace, blessing, and eternal joy now that you are with our FATHER in Heaven and our magnificent Saviour JESUS CHRIST experiencing THEIR Glory. I can't wait to meet you there one day and thank you for the happiness you brought to my life both as a child and now as an adult. †
