Georgian here: Just wanted to clarify for those at home that it's true that a lot of pimento cheese sandwich filling is indeed made with cream cheese that just as much uses mayonnaise instead of cream cheese. Either way is good, but the MOST important part of that is you get a good BLOCK of cheddar* cheese and shred it yourself. It makes all the difference not having all the anti-caking agents in packaged shredded cheddar. If you don't use a block of pimento cheese will also not want to homogenize it into a single thing either.
