Ohh no! Can be so frustrating when frosting curdles! It could be because one of your ingredients was too cold or too hot and usually a bit more mixing helps with this :). Haha I love whipped cream too :D

Hi there. I’m in the UK and we cannot get hold of the block cream cheese so we have to use the tubs of full fat Philadelphia. I follow a Very similar recipe to yours and it’s always worked well although a bit on the soft side even though I drain the cheese in muslin overnight to remove the excess water. The only difference with your recipe is the addition of the lemon juice. Is this for flavour only but does it also help thicken the mixture slightly? Thanks in advance. Ps love your tutorials - they’re so useful! X
Maybe your kitchen is too hot? Or you beat it for too long, the mixer can get hot enough to start melting the cheese. In summer, I do the same as I would during winter, my cream cheese buttercream still stays firm even in summer, but if it's really too hot outside, what I do is put a bowl with ice under my bowl of buttercream, that way it keep it cool, if it gets too cold, I just take it out the ice bowl and keep doing what I have to, you could try it out (:
The cream cheese brand doesn’t matter. The fat content in the butter is what matters. The higher the fat content the thicker it will be and stay at that thickness. I usually use at least 85% fat butter. It will not be a usually recognizable brand but instead one that is a little more expensive. This is something that you get what you pay for in my opinion. Brands include Plugra, Danish Creamers and KerryGold.

Hmmm to be honest I don't know what the programmes offer so can't really say sorry! I guess think about what you want your end goal to be and which skills you want by the end of it and go with which programme offers the best options :D

That sounds counterintuitive but it is something to do with the properties of both aerated cream cheese and icing sugar. There are some brave British souls who have experimented for the best results but the fact seems to be that it's not possible to get a decently firm cream frosting here.

Use an off brand. I realized a store bought was better than Philadelphia
