I have tried many many cream cheese frosting recipes and it was so WONDERFUL not be disappointed this time!! Thank you!! Adding the slightly chilled cream cheese at the last minute seems to be such a genius move! In my case, I only had one block of cream cheese. So I used slightly less than your recipe called for, but it still worked well for stacking a banana cake! Next time I do it, I will use the correct amount of cream cheese! Cheers to no sad tears tonight!! 🥹 Just happy ones!!

I love that it's not as sweet as some of the other recipes out there, so I would stick with this and just nite to add a little more icing sugar. The aldi cream cheese is still my go to

Hi there. I’m in the UK and we cannot get hold of the block cream cheese so we have to use the tubs of full fat Philadelphia. I follow a Very similar recipe to yours and it’s always worked well although a bit on the soft side even though I drain the cheese in muslin overnight to remove the excess water. The only difference with your recipe is the addition of the lemon juice. Is this for flavour only but does it also help thicken the mixture slightly? Thanks in advance. Ps love your tutorials - they’re so useful! X

Maybe your kitchen is too hot? Or you beat it for too long, the mixer can get hot enough to start melting the cheese.
In summer, I do the same as I would during winter, my cream cheese buttercream still stays firm even in summer, but if it's really too hot outside, what I do is put a bowl with ice under my bowl of buttercream, that way it keep it cool, if it gets too cold, I just take it out the ice bowl and keep doing what I have to, you could try it out (:

    • @tmmmc9805

The cream cheese brand doesn’t matter. The fat content in the butter is what matters. The higher the fat content the thicker it will be and stay at that thickness. I usually use at least 85% fat butter. It will not be a usually recognizable brand but instead one that is a little more expensive. This is something that you get what you pay for in my opinion. Brands include Plugra, Danish Creamers and KerryGold.

Hi Andrea! Ahhh right hmmm in that case you may need to add more icing sugar so that the frosting isn't too runny. I have a few extra tips on my blog post if you wanted to check that out :)

@@CakesbyMK It is a nightmare in the UK. Unfortunately, the more icing sugar added, the runnier it gets as well as being unbearably sweet. That sounds counterintuitive but it is something to do with the properties of both aerated cream cheese and icing sugar. There are some brave British souls who have experimented for the best results but the fact seems to be that it's not possible to get a decently firm cream frosting here.
