    This is the last time I'll be cooking at this location. I'll be moving to an indoor kitchen again soon. But who knows maybe I'll be back here to make a special video or something.

    Awesome ….easy …. Since I don’t have to marinade the chicken ahead Of time. I will cook it next week. Don’t get Chinese celery here so I will use cilantro instead …a little bit. Thai paste … I will use my Thai red curry paste , I have that.
    Looks yummy 😋.
    Keep bringing us those local Thai dishes .

      Cilantro and celery very different but if celery leaf to hard to find use cilantro 🙏❤️

      Made last night and it was fantastic. I put too many of the Thai chiles in though, so it was pretty spicy. But great recipe and fun and easy to make!

    Wondering where you were just the other day. I really like your videos so don’t stay away too long. I just bought a new wok and can’t wait to make Thai and Chinese something yummy, not with curry though. I recently made Drunkin noodles and sure it wasn’t correct but I tried. I liked it and found a new taste… Thai basil, really different from Italian basil, very anise flavor, but I liked it. I like your style of teaching!!

    Hello from England, is there a substitution you can recommend to replace the Chinese celery, as that's pretty difficult to find in the UK ? Cheers

      Great question 🙏 Celery leaf is just a very young celery stalk. At your supermarket you will see leaves on a whole celery stalk. You can use that. That is if celery is not too crazy expensive in your area.

    Hey Wally … how are you ? Need your advice … we are heading to Thailand in 2025, staying 1 week. We can’t see all of Thailand …since we are only there for 7 days book ended with travel days. …could you suggest places to see and restaurants in those areas to visit? We either head to Singapore first or Thailand first, not decided on the order yet.
    My cousin just moved to near Phuket so we will include Phuket. He is not so familiar yet with Thailand .
    Would love to hear your thoughts ….

    That looks absolutely sublime, Wally👨‍🍳. And, as you say, remarkably easy for a Thai dish. I bet the in-laws were impressed 🫂!. Intrigued by the evaporated milk because I guess like most folks, you think Thai? Coconut milk☝️. I use Red Boat Extra Virgin fish sauce. Expensive, but streets ahead of most brands. How is it rated over there?. Cheers, mate👍

      Hello Jon! 🙏 Ah there are several reasons why modern Thai cooking uses evaporated milk, especially hawker stand chefs and cooks. The main reason is that evaporated milk is much more cost-effective than coconut milk. Coconut also expires quickly compared to canned evaporated milk. Finally, no added coconut taste to recipes when not needed.
      I've heard of Red Boat but I never used it. Heard it's quite popular and yeah rather pricey. I'm using an obscure fish sauce brand, it was given to me as a gift. As far as I know, it's not exported 😆 And I hope it's not cause it's a health hazard.
