🇻🇨St Vincent Sweet Potato Pudding-(With Carrots)

  • Growing up with my grandmother she used to bake this delicious sweet potato pudding on her coal pot in a heavy pot covered and at times in the drum she kept in the yard. It never gets old.
    If you are in a foreign country make sure you use the right sweet potatoes or your pudding will not form.
    This recipe is a very simple recipe for beginners.
    Recipe-Double the recipe for a larger portion.
    2 cups grated sweet potato (Batata sweet potatoes)
    1/4 cup of grated coconut
    1/3 cup of grated carrots or pumpkin(use more if you like, not too much since it will make it orange)
    1/2 cup sugar
    2 tablespoon ofgrated ginger
    1 1/2 cup of coconut milk (you can use the remaining half as well)
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1 tablespoon of melted butter
    1/2 teaspoon salt
    I used a 9 inch pan!
    Sprinkling water on top helps the potato to cook.
    *Pour sugar or a little sugar mix with water on the sides if you love that golden brown color when it is close to finish.
    *At times we used a piece of tania, dasheen, or green plantain. If you want to eliminate extra starch used pumpkin or carrots.
    *You don't have to use the aluminium foil if you do not want. Cook it uncovered or used another alternative if you wish.

      To be honest I do not like salt. No problem at all so happy you are enjoying it.

      @@samsgiftedhands3998 great recipes keep our recipes recorded.. I remembered some lovely cakes from Sardines and Sunrise bakeries during the 60s, and those cakes are no longer sold..gone forever. Only the red belly cake still going.

    Thank you... this is great. My mom taught me how to make Sweet Potato Pudding but without measurements. I completely forgot how to make it.

      Yes I do it without measurements as well. But you know on RUclips you have to help out a bit with the measurements. I know them grannies and moms do not use measurements lol.🤣

      Good day! I used a 9 inch pan. You can used an 8 inch for yours.

      @@samsgiftedhands3998 it came out soft and it was sticking in the pan. I'm from St Vincent so when my found you on here we decided we were going to try everything you you make

      @@7782spike make sure you grease the baking dish, and you can watch the video clearly again. I normally bake in the middle of the oven. So sweet!

      My grandmother used to pour some water on top to help it cook. I sprinkle, you don't have to if you don't want to.

      I think it’s to keep it moist you could also put a tray of water in the oven
