NY Strip Steak With Garlic Thyme Butter Cooked In Cast Iron Skillet!

  • Perfectly cooked NY strip steak! Join Eric from Simply Elegant Home Cooking and learn how to cook a perfect medium rare New York Strip Steak in a cast iron skillet with garlic & thyme butter! This is a very easy recipe and you can replicate legitimate steak house quality results in your own home!
    Ingredients:
    -NY Strip Steak (approx. 1 lb.)
    -Light Olive Oil
    -Kosher Salt
    -Freshly Cracked Black Pepper
    -Fresh Thyme
    -1.5-2 Tablespoons Butter
    -2 Cloves Garlic
    Directions:
    1. Remove NY Strip Steak from the fridge 1 full hour before cooking.
    2. After 1 hour of resting time, sprinkle the exterior of the steak with a liberal coating of kosher salt and medium grain cracked black pepper.
    3. Heat a cast iron skillet (or stainless steel skillet) over medium high heat. Allow a full 5 minutes for the skillet to come up to temperature.
    4. Sear the fat cap of the steak for about 1-2 minutes.
    5. Sear the sides of the NY Strip Steak for 3-3.75 minutes per side, until a crispy crust has developed
    6. Turn the heat to medium low, seat the other side (opposite the fat cap) while the temperature reduces).
    7. Once temperature reduces, add your butter, thyme, and garlic to the pan. Lay steak of it's side and baste with garlic, butter, thyme mixture, flip steak every 30 seconds until all of the exterior is coated with the butter.
    8. Remove steak from heat, baste with 1-2 spoons of butter mixture, tent with foil, and wait 10 minutes.
    9. Remove foil and carve steak into thick strips.
    10. Serve & enjoy!

    Just thought I'd stop by to say that I tried the recipe and I used a cast iron skillet and I think it was the best steak I've ever made even better than the ones I've made on my grill. My wife is not that big on red meat and even she loved it. My daughter who is only two and a half years old kept on coming back for more. Great recipe and thank you.

    One thing a lot of videos skim over is different heats for searing and basting as well as precise timings for resting, so you really nailed this video. Very informative!

    I am impressed with the important details you threw in, and you made sure to emphasize them to the viewer: let the steak rest for 1 hr; medium high (not! high heat ) the pan for 5 minutes, add oil near end of heating and sear cap;side the beef and cook for 3.75 minutes , flip and do the other side for same time;turn heat to medium low, sear the edge opposite the fat cap as heat of pan decreases to medium low; flip on side, add butter, thyme, garlic cloves. Tilt pan in order to be able to spoon the butter and baste steak for 30 seconds . These intricate steps and precise timing are to get a good sear of a thick(11/2”) steak without burning the steak outside or the butter/ oil/ garlic/ thyme and still get a medium rare center! Flip and baste each side again! Because this is so thick a steak, wrap it in foil for 10 minutes and let it rest. The last step plus letting the steak temper outside the fridge for an hour are all part of the process of pan frying a thick steak without burning the butter , setting the fire alarm , and getting a proper medium rare center. I will try your method which is easy to remember because now I understand the reasoning behind each step. If you have a very thick steak, 1 3/4-2 inch steak , or you want a medium steak , I recommend using the French method and finishing the steak in a 400 degree oven for less than 5 minutes , but don’t forget the rest. Some sites rest only a couple minutes but cook less than 1 1/2 inch steaks. Tilting pan and turning heat down prevents burning butter/ oil. I use canola oil as higher smoke point. Thanks!

    I made this tonight. It was so good! Honestly, I haven't cooked a steak in decades, and had forgotten how to do it. My local bistro was asking $40. for a 14 oz. steak with some potatoes and asparagus. My local butcher had a 14 oz. NY strip for $12.. The asparagus was $6.00 a pound. Yikes, Crazy times. I was so happy to follow your simple, clear directions. The meal of steak, mashed potatoes, and broccoli was the best! Thank You so much.

    Thank you! I just made this and thank you!! This was the best steak I've ever eaten! It was impossible to eat without grunting and moaning. My wife said I sounded like "What about Bob".     This is excellent, probably the best tutorial on RUclips. The only thing you have to remember is the length of time will vary depending on the degree of doneness you want and the thickness of the steak and the temperature of the heat. A meat thermometer is very handy.

      Why iron cast skillet vs normal pans? Is it the heat conductivity?

      You can also use a high quality stainless steel pan or cast iron...but the benefits of these two over a non-stick pan is that the steak bonds to the metal and gets much better searing. When you sear the steak you produce color and flavor. And once the sear is reached, the steak will release from the pan easily. Non-stick pans won't get you the nice exterior produced here in this video.

    I use pretty much the same method here. Only difference is i oil each side of my steak with my fingers and salt & pepper(also use hawaiian sea salt or himalayan salt). I also use ghee oil, which i think enhances the flavor. Sometimes I also throw in a piece of rosemary

    I just fixed the exact same steak 🥩 only minutes ago! The only difference in my way is 2 minutes resting time cause I like my meat nice and warm! Btw I have tried longer resting times and have noticed no appreciable difference other then the temperature. Very informative video! 😎

    I air dry my steaks in the fridge for 24-48 hours. Salt and Pepper when you take it out of the package and air dry in the fridge for a day or two.

    That was good. I go for more regular turning - I think it avoids getting that tough grey section on the edges. More even texture. My crust isn't as good though.

      Yea there's a trade off there. This steak was very thick so it needed time to avood a raw center.

    Man, that looks delicious. But, I feel as if you should try dropping the butter and garlic earlier, while the steak is still in it's last minute of searing, and then baste it on medium low heat. My reason being is that I feel as if the garlic didn't infuse with the butter; it takes time to develop the flavor. But I am not a chef, so my opinion isn't valid. But it does look amazing, great sear as well!

    Very great video, I like your passion for cooking. Cooking strip is my favorite thing to do and this video did confuse me. I usually like to cook the steak about 2:00 mins on each side. I can't imagine cooking it for more than 3:00 mins on a side and I was surprised to see your steak turned out medium rare for cooking it that long. The funny thing is that I cook my steak in a non-stick. I would've figured that a cast-iron would cook it even harder so that extra time would cook it even more. You did notice after feeling it that it was done after 3:00 mins on the second side.
    I personally like my steaks rare but can someone help me out about how it can possibly after 3:45 mins on one side and 3:00 mins on the other in a hot cast-iron and still turn out medium rare? This strip did look thicker than what I normally cook, maybe that's what it is.

      Max L this was a VERY thick steak, it weighed about 1.25 pounds. With a regular sized steak you could certainly cookfor maybe 2.5 minutes for medium rare. Thanks very much for watching.

    In Wisconsin they call it a Wisconsin strip steak. And they cook it to well done.

      Thanks! And yes, I used a LOT of salt you can definitely cut back and still get great flavor. This was a very thick cut of steak.

    Eric, that was a fantastic presentation on steak preparation. Be careful with your auto focus. It can detract from your subject matter. Also, you may want to put a damp paper towel or cloth underneath your cutting board to prevent slippage. It looks way more professional on camera. Great job. [Phil]
