Linda, I made this casserole for dinner tonight and had to sneak a bite fresh out of the oven. It was absolutely delicious, just like Sam said. My bacon did not crisp up either and I put it in the oven after taking the foil off for another 30 minutes. It was just regular bacon too, but it did not matter. Wonderful anyway. Thanks for sharing. Sometimes those old recipes are the best!

Good morning, my dear! Hope you and Sam had a happy and healthy holiday season! Back in the 60's, my mom sent away for a Minute Rice cookbook (more like a booklet) and this recipe was in it, but they used Minute Rice instead of long grain rice, of course, and it was called "7 Layer Casserole". Same ingredients, only layered with crumbled burger and bacon on top. she doesn't make it anymore because she's almost blind, but definitely worth making! Hello! What an interesting casserole! I've never seen anything like it. You are right that this would be a great meal on a busy night. Your salad looks scrumptious too. I love old cookbooks. I have a few oldies that were Jeff's grandmother's. not the grandma that I sent you that gelatin salad, his dad's mom. She belonged to all sorts of groups, and I have a couple from her church ladies auxiliary. Lots of repeats of the exact recipe. Whatever was submitted, they printed. I've never made a recipe from those books. However; the last time we were in San Francisco, we went to the Presidio, and I bought "Alcatraz prison guards wife's club cookbook". Hey Julia!! I've actually eaten that old shrimp gelatin salad many years ago.....and it's good. I'll probably do a video on it. My favorite old cookbooks are church cookbooks. Those church ladies turn in their best recipes. I have one cookbook so old the recipes are a pinch of this and a dollop of that, a knob of butter but most of the recipes don't even sound appealing (to me) and I tried so hard to find just one to video. You're right about the repeats in church cookbooks but every once in a while you'll come across one that's just a little bit different.....those are the one's I want to try.
I noticed something I found odd in the various lady's club and church cookbooks.... Each one has a recipe for dee fried chicken. In each recipe, they say to add a cup of water to the chicken and the oil once the chicken is brown, then close the lid and cook until done. How can the chicken be crispy when you add water and close the lid?
I've never heard of that. Since it's in more than one recipe for fried chicken it had to be something that was commonly done in that time period. I don't understand it either....I'll google it and see if any info pops up.
Linda the recipe sounds good but I would have removed the bacon and crisp it in the skillet or microwave and then added it to the top of the casserole but thank you for sharing the recipe I think I'll try it
If I were to get my husband to eat this, and he would, I would have to add cheddar cheese. He does not think anything can be a casserole without cheese. Honestly I cannot imagine that it would not be good either way, but we are cheese eaters. I think we may try this next week.

A clarification, when the buzzer goes off on the oven it has indeed preheated to the correct temp, but the act of opening the door releases that heat, letting it preheat another 10 minutes causes the actual oven itself (the sides, the racks the floor)get hot and hold temp better rather than just the air inside being heated.
Hi Narfle, when the buzzer goes off, the oven is from 5 to 7 degrees reaching the required temperature, if your oven is gauged and comes to the required temp. This is a proven fact but I thank you for your input and opinion. God Bless, Linda

I want to try this,but I'm wondering if it would work if I flipped the layers. if I put the meat mixture on the bottom,the rice mixture on the top,would the meat still cook thoroughly?
I know of no reason why flipping it wouldn't work. It's the cooking time and heat inside that cooks it. Just make sure the rice is covered with sauce.. I don't know why you'd want to flip it since the bacon flavors the meat but you do what you think will work for you. TFW God Bless, Linda
Huh, look at that, another upside down pie. lol. I wondered where it was going when you were mixing in the big bowl, but I kept telling myself "it's got bacon, it will be fine" there's very little that can't be improved with bacon. Looked really good, that rice sucked up all that tomato sauce really well. Were you in any way tempted to dust the top with cheese?

Next time, one of your cans of rotel (we don't have that in the UK, but it looked like tomato with peppers or chillies? ) instead of one of the sauces, thin bacon & topped with cheese!! Sam will be Tango-ing you round the kitchen. 😆

I would think it would be better with some chili powder or taco seasoning and cheese. I would also saute the onions and peppers first to get rid of the raw taste.
That is my absolute favorite pound cake of all the 11 videos...another great one is the pecan pound cake using 1 cup of ground pecans in the place of 1 cup of flour....it's really good also. Let me know how yours turns out. God Bless, Linda

My instinct would be to chop and crisp that bacon first, also to use lean ground beef.

Could pot bacon casserole under broiler for 2-3 mins
For the last five minutes put under the broiler to crisp the bacon...I only like crispy bacon.other than that it looks good
