Thank you doctor. I like your recommendation regarding frying eggs in coconut oil as opposed to olive oil or butter. I use coconut oil in my food, especially for frying or roasting. I’m Brazilian and I have learned the importance of this oil in our food. It’s nice to get this information from different specialists around the world as this will support me in helping my English husband to accept that coconut oil is a healthy natural product rather than a villain for our health. Namaste!

I too am very conscious of the possible nutrient loss due to exposing yolk to heat.
I have been cooking my eggs Over Easy for decades; however, my trick is that--once the white has solidified on one side--i immediately turn the stove OFF, and then flip the yolk side over so that the white surrounding the yolk is solidified. Once its solidified i immediately remove the egg from the pan, leaving the yolk in a raw liquid state.
I have experimented with various condiments / seasonings and--other than SALT, the most flavorful condiment is CRUSHED RED PEPPER.
Then, on the side, i might have home-cooked beans with mixed-in FRESHLY cut onions and finely minced garlic--again, all topped with Crushed Red Pepper & a Shredded Cheese blend (which melts)…its delicious!

I love my eggs over easy but I have always cooked my eggs at a really low temperature to keep the whites perfect. As soon as I flip them I turn the pan off and give them about ten seconds. I hate the yoke cooked, just sealed. Coconut oil or dripping is best I find, and plenty of it. I sometimes eat them scrambled but again I cook them low and slow in butter until they are softly cooked. I really hate hard eggs, no flavor to them. Black pepper and Himalayan Sea Salt is all you need on them.

In very low fire using a non stick pan, I put a very small amount of oil on the pan, put in the eggs as in sunny side up carefully, then put in 2 tablespoons of water and quickly cover the pan. As soon as the edges of the yolk change color I turn off the heat and wait a few seconds before I take the eggs out. The yolk is still runny when I eat them-no salt no pepper but I put those in if someone else is going to eat them.

Eggs over easy with the yolk runny is the quickest way for me to cook eggs.
I prefer pasture raised eggs because they are highly nutritious & have stronger yolks so they aren't easily broken while cracking the shell or during flipping.
I also separate most of the whites from the yolks while they are cooking in the pan.
It takes time to conquer this technique based upon the heat of the pan & the oil.
At the heat I use I initially cook approximately 1/2 minute then flip & cook for about 1/4 minute then quickly remove from the pan onto a cool dish.
90% of yolk is runny & still intact in the yolk sac while most of the whites are removed & saved to thoroughly cook later for sandwiches.
I have a digestive problem with uncooked egg whites.
    Well wishes.

2 - basted. A lot of Butter/ghee/&/or bacon grease (at least an inch, I keep a pan full of fat for just eggs). Med low heat. Gently splash/spoon fat on top of white till cooked, a bit on top of the yolk to warm it/set the white.

Sous vide custard eggs, typically for 67 to 70 degrees Celsius for about 5 to 7 minutes ! With chicken eggs, the whites are mostly 'watery' (when cooked at a lower temp for less time) so I discard them but the yolks are like custard. Duck egg whites turn out like a gel (when cooked at 70 for about 6 or 7 minutes) and the yolks are creamy like a custard. If you raise the temp or increase the time, then you get more of a soft boiled egg, but the whites are not 'rubbery'. I like to eat the sous vide eggs on a veggie hash or burger. I use raw eggs yolks for mayo, aioli, salad dressing and in my morning coffee with cinnamon, butter, almond extract and a pinch of salt. I eat mostly egg yolks and save the whites for 'keto' bread recipes or any recipe calling for an egg.

I am in tears. I've been turning my olive oil into a bad fat by frying everything in it. I worried about this ten years ago but extensive research could only find that olive oil spoils and smokes so had to guess that as long as the heat was low enough not to do smoke then it was ok to fry with it. Is this not right? Does anyone else get angry at how difficult it is to find answers to questions because all information is based on constant repetition of what they want us to know, healthy = low fat, and the assumption everyone's needs to loose fat. OK, now I'm ranting.

Olive oil is fine on low heat. It's actually better than virgin coconut oil and does not begin to decompose until about 375F. Plenty of temperature to cook most things as long as you don't need to sear it and are not in a terrible hurry.

When you properly cook an egg over-easy on low heat the yolk should overall get much, much less heat than hard boiling. I just had 3 eggs over-easy and the yolk was runny throughout. There are all sorts of ways you can muck up an over-easy egg, but if you do it right you should not damage the yolk. Bacon fat is one of the best things to fry your OE egg in. Another I use often is avocado oil.

Okay, so what is mine called? I do it like sunny-side up, but with very low heat and cover on top. Without any oil/butter/fat, in a non-sticking pan) After 2-3 mins it is ready and the yolk is still liquid! The bottom is unburnt. Complete perfection :) But it needs a good name. Any suggestions?

I live in the country and can get fresh duck eggs, which I think taste a bit better. Is there much difference between duck and chicken eggs? I love runny yolks, so my favorite way to eat eggs is soft boiled or sunny side up.

I typically cook them over medium (egg whites cooked) in lard. But I think I'll be switching to soft boiled (I like them cooked that way too). Raw won't work for me...need my whites cooked. Thanks!

I call this KETO scramble, a spin off from Sten Ekberg:
Separate yokes and set aside. Scramble whites in the low heat coconut oil, butter, or bacon grease until almost done. Add yolks, turn off heat, gently fold yolks into whites until blended, yolks still runny, just a few seconds.. Serve.
Before adding yolks I like to fold in a round tablespoon of cream cheese, sometimes with jalepenio, green chilies, precooked onions and/or cheese, especially goat or Mexican, raw cheddar. Make a Denver scramble with chopped onion, bell pepper and ham, sprinkle grated cheese on top. For richness blend extra cream cheese with mushrooms, onions and asparagas. And of course top ham and eggs with hollandaise for extra egg yolk whammy. The options are endless.
Blending with mashed avocado tomorrow. Maybe top with sour cream and sharacha or salsa.

My modified crack-n-egg. 1st I go to Grocery Outlet to get free-range organic jumbo or extra-large AA eggs . Then Jimmy deans fully cooked bacon, ($4.00). Then to the dollar tree to get 8 Oz. of raw mushrooms. I cut the mushrooms down to smaller pieces and sauté in butter till they are even smaller. Bacon cooked 30-40 seconds. I put the mushrooms in and microwave while stirring frequently . Plenty of salt. No not over cook. Leave some of the still runny egg uncooked to spread over the rest of the eggs. You can use a Pyrex cup , but I just reuse an empty crack-n-egg bowl. I enjoy the bacon on the side. Do not overcook the eggs . It is DELICIOUS !!
Hormal's fully cooked black label bacon is better, but more $. There is bacon without nitrates or nitrites now. Q. Dr. Z , I'm tempted to just drink it before it all firms-up. Would this be OK ?? It's soul satisfying and lasts a long time. Think I'll use 3 eggs now. It's very economical.

Unfortunately I have to scramble my eggs or I wouldn’t eat them as I can’t stand the taste of yolks so scrambled mixes the yolk in to where it is palatable....but thank you for the tip of heating method (i.e. type of oil and low heat).

Hi, how about what I heard when I was a child, that eating raw egg is depleting your vitamin (I don't remember which one) ? I eat my eggs in different ways : sunny side/ boiled (hard or soft) or I cook separately the white, that I whipp in coconut milk and out of the heat, I add the yolk and then I drink it. It's low heat from the beginning, because I can drink it right away and I'm really heat sensitive. I like to flavor this mix with cinnamon.

I put my eggs in a rice cooker on the steamer setting. Setting the time to 8 minutes (large eggs) gives me runny yokes, and the shells peel right off.

Thats a great idea. Use the rice cooker to cook eggs. Much healthier. :)

    • @convertcd
      @convertcd 5 лет назад

@@dr.nickzyrowski One more point. At the end of the 8 minute cooking time, I put the eggs in an ice water bath for 15 minutes. This stops the cooking and ensures that you don't get any green tinge on the yokes. Even if I store the steamed eggs in the fridge for days, you still have runny yokes when you finally do use them.

Please, I suggest you edit your videos and delete unnecessary comments and repetition. Videos are visual and audio presentations, not loose conversations.
