Whoever came up with double-frying the wings is a food genius. Tried it this weekend and the wings were covered in glaze yet still earth-shatteringly crispy, probably the best wings I've ever made and everyone who was over that night could not get enough of them.

Holy cow.... just made these. The crunch was amaze balls. Mate you Rok. Followed your instructions mainly. No rice wine vinegar. So used my home made sour cherry vinegar with a dab of apple cider vinegar. Then used HOT honey. My lady of the house is so happy. In fact so am I. Thanks again Brother.

Ok. Made these tonight. Two things. Thought the sauce tasted too spicy when making it on the stove. Also when I double fried the wings thought they were overcooked. BOY was I wrong. These are the bomb man!!!! Perfect crunchiness with the right amount of spice! absolutely a great recipe! Love it... 5 stars! NOTE, I did use potato starch instead of corn starch.
Meat Church is our go-to for recipes. Can't wait to try these this weekend, even though we won't be watching the game. I will be pulling for the Chiefs, but I can't bear to watch any more football this season after being handed another broken heart by my beloved Cowboys.

I made these wings today and crispy doesn't do them justice, they are CRUNCHY and amazing! The sauce is just spicy enough and yes it takes the crunch down a bit but no big deal. They truly are the best wings I've ever had. I'm going to try the sauce on the next batch of general tso chicken I make. The color and heat level will be perfect if you like general tso chicken. 👍👍👏👏
This sauce is pretty awesome. I had to sub habaneros as the chili pepper and they turned out fantastic. My first time to do the double fry method. I did a couple of BBQ flavors as well (I have some people with VERY low tolerance for spice heat in the family) and the response was they were the best wings they'd ever had. Lot of time involved, but well worth the result!
My only complaint is, as a first time host doing some outdoor cooking, I’ve got to limit it to only a couple of recipes from Meat Church! This one looks like a keeper!
Yeah, I need to do this! Another plus is that the breading is gluten free. I have a family member that is intolerant to gluten and would have no issue with eating this. Thanks, as always, Matt!

Matt, thank you so much for these tips and videos, I have been ordering your Ocho 8 spices for a few years now and have convinced my local Trager/Hardware store to bring in your line! I saw them on the shelf and was jacked! From Texas to a small Northern Ontario Canada town.
I like to cook as much from scratch as possible 1.) to control the ingredients in my food and reduce pre-packaged chemicals 2.) to control the flavors and heat to my liking 3.) to practice cooking and improve my kitchen skills and learn new techniques but there aint nothing wrong with using your favorite sauce, rub, or spice mix of the store shelf to get what you want without all the hassle If you aint got much time or maybe you got people to entertain you can keep things simple and enjoy yourself

Tried this way of cooking wings after watching the original video. Used Cabela's brand " Tequila Lime" dry rub on the wings. RIDICULOUSLY crunchy/crispy wings. Keep the videos coming!

Advice on how to take them from the fryer/sauced to a party elsewhere and keep them warm without losing the effect? These look incredible and I'm wanting to try this.

Have you tried using mirin instead of honey in the sauce? Might have to do a little more reduction to get the sauce consistency right. Definitely gonna try this recipe next time I do wings. Sounds amazing.

Get this man to 1 mil, good recipe, I usually smoke my wings to 160 then throw in air fryer for 6 minutes at 400. Next time I’m going to try this

Matt, Didn’t have access to frying conditions so tried it in hot 400 degree oven, they came out great. So if you can’t fry them, the oven works too. 👍

You can do the first step early and hold them then do the final fry before you want to eat.
You might put them in a toaster oven afterwards on warm to keep them hot and crispy when everyone is ready to eat
