I drove almost 3 hours from Austin because of this video, and it was worth it let me tell you! The whole menu is outrageous! The burnt ends were a bite and long pause in respect! They are so good!
After Malcom did his take on the Heim’s bacon burnt ends I found some slabs from a local grocery smokehouse, and attempted my own. it’s an entirely new level of awesome. Delicious.

I had the privilege of meeting Travis and Emma back when they were still in the food truck. I took some clients from Seattle there and they gave us a a portion of bacon burnt ends to share as an appetizer. These guys couldn't believe how great the BBQ was and talked about that visit for years! Travis and Emma are some of the nicest people you'll ever meet, they've worked so hard and they turn out GREAT 'que! Thanks Matt for a terrific video at Heim BBQ!

Been to all 3 Heim BBQ's in DFW, and the Bacon Burnt Ends are probably THE BEST meat ive ever had in my life!!! Im pretty good on the grill myself, but these burnt ends are just on another level, and now i can see why!! Thanks so much for the video 👊🏼❤️🙌🏼 Btw, all their meats are good there. The brisket is amazing and the sausages stuffed with cheese are insane 🔥
We slaughtered two pigs this year and have a lot of pork belly we want to do some fun things with, other than chasu and simple bacon. This looks king! thank you so much for your passion and love of the smoker and meat.
I've made Bacon burnt ends a couple of times and they always end up chewy. I think cooking and resting in the rendered fat is the secret. Ready to try again!! Thanks for the awesome content!!
These were a hit at a party I threw, but what really made them better was the next day. We took the jeep out on a trail and I grabbed a huge container of my cold leftovers. They were actually better and the guys destroyed them and said they actually loved them cold. I agreed they were even better day 2 cold! Great video!

Matt id love to see you come up to NC and get with Jon Gs BBQ out in Peachland. These guys are bringing some Texas traditions to a small NC town. Awesome spot with a real cool vibe. They used to sell brisket and pulled pork from a pop up tent at one of the local breweries parking lots. Now they have their brick and mortar and killing BBQ here in the Charlotte area. They are right up your alley.
Heading to Dallas area tomorrow and am planning to visit Meat Church in Waxahachie on Friday. May have to hit up Heim BBQ on Saturday! Hopefully we can meet Matt.

They don't always have it on the menu but when they do it is absolutely incredible. I think 407 BBQ featuring the smoked meat loaf would be awesome as well. I would love to see both of those. We are near the Lovefield location. I can confirm, although pricey (1/4lb…about 4 pcs for 8 bucks) those burnt ends are AMAZING!!!
