    ramen fans. it’s the one you’ve been waiting for. tonight steve is serving up a wagamama institution. the chilli chicken ramen. there’s heat. there’s noodles. there’s that rich chicken broth. put down the packet ramen + pick up the wok 😉

    the dish | makes 2
    -
    2 chicken breasts
    500ml chicken stock
    200g soba noodles
    75ml sriracha
    50ml sweet chilli sauce
    2 tsp malt vinegar
    1 tsp shichimi or paprika
    -
    stock base
    -
    2 tbsp cornflour
    150g butter or duck fat
    1 tbsp fish sauce
    -
    garnish
    -
    40g beansprouts
    2 spring onions
    1/2 red onion
    1 chilli
    1 lime
    -
    the stock | makes 1 litre
    -
    bones + skin from cooked chicken
    2 celery sticks roughly chopped
    4 carrots, roughly chopped
    4 onions, peeled + roughly chopped
    1 leek, roughly chopped
    2 garlic cloves, crushed
    piece of ginger, peeled + grated
    2 thyme sprigs
    6 sage leaves
    bunch of parsley
    1 tsp black peppercorns
    generous pinch of sea salt
    1 tbsp light soy sauce
    pinch of sugar

    I’m so glad this is a thing now as I have been to Wagamama since I was 3 and I’m the only one in the house with taste buds and love chilli ramen !! Thank you!!

    My absolute favs are the vegetarian gyozas and the veggie katsu curry. I love the salad dressing and was so happy you did a video on how to make it! Could I ask for a video on the the gyoza dipping sauce, it's just a little pot of delight and have been craving it so much 😋 thank you!

    Steve, what a phenomenal video. I genuinely find your style very engaging, and I only stumbled across this video whilst looking for the best/closest ways to cook Chilli Chicken Ramen the Wagamama way. I'm putting this in to practice tonight and can't wait to see the results. Keep up the great work mate, cheers

    Finally found this video! I’ve been ordering in chilli chicken ramen soup every week for the past 2 weeks as I’ve been feeling poorly 😷 and this has helped me restore my sense of taste. Although I’m broke af I’d definitely order it again and again!!

    I moved out of the UK a year ago and I’ve been missing this ramen all that time. I just cooked it and it tasted reaaally similar to the one from the restaurant and my family loved it. Thank you for the video :)

    Little confesion here, used to work fryier station at Wigmore st. London. I remeber you walking in few times in the kitchen. For that year I always took what's left after noon shift and gave that super luxus asia food to homeles people at Elephant and castle. Greetings from Czech rep, missing my most hated (at the time) Chicken Katsu, so thanks for that recepie!

    Hi how much water do you start the stock with? I assume there is water added with all the stock ingredients.

    Could you do this with just a stock cube then, and add the butter/cornflour/fish sauce combo to that?

      Caitlin Muir without doubt! Won’t be as good but will still work fine! Play around with the garnish too! Can also add a touch of soy sauce and remove the spice elements, taste as you go and see how you get on :)

    Loving this recipe, but should we be cooking off the beansprouts? I always thought raw beansprouts were extremely bad for you?

      If you’ve never had Japanese before it’s a good starter. If you like your Japanese food then there’s better independent places.

    Shouldn’t you lay items like red onion in the bowl first then cover with stock? Let it soften slightly

    20-30 mins for half a chicken breast seems like a long time in the oven no? Recipe looks great though 🔥

      That’s an added extra to give it a bit more umame just a bit of butter will do the recipe in there cook book doesn’t have the fish sauce in it

    Wouldn't it be better to cook the noodles in the stock rather than water?

      The excess starch from the noodles will make then stock starchy, like used pasta water and the noodles would stick more as there’s less fluid to dilute the starch and give them space

    Folks I should point out he's not cooking REAL Japanese food. Ramen is much more complicated than just boiling up water and adding chicken stock cubes 🙉 plus never put red onion in ramen especially raw 🤢

      There's nothing bad about liking the food but when even the "chef" is getting it wrong calling the sauce "katsu" wrongly educating people I feel they should be exposed

      I had had one other bowl of ramen in my life before I ate at wagamama at like age 15 and I was still disgusted by how bad it was. It's not ramen in any meaningful sense of the word. I hatewatch all these videos just so I can confirm with my own eyes that he sucks at cooking and I wasn't crazy. Costs twice as much to eat Wagamama's garbage ramen too. Wouldn't eat it again I was paid to.
