Spring Green Beans 2 ways : Cold Salad & Pan Fried | French Bistro Recipes

    Our french vegetarian recipe serie continues:
    If you are looking for a green bean salad french recipe or a French pan fried green beans recipe then check this recipe out. both version bring the best out of those healthy green beans and preparing them is really easy.
    Ingredients for 2 people for each side:
    (multiply the proportion for more people)
    Cold Grean bean salad:
    for the dressing:
    1 pinch of salt
    1 pinch of pepper
    2 tablespoons of red wine vinegar
    5 tablespoons of olive oil
    1 teaspoon of chopped garlic
    2 teaspoons of chopped shallots
    for the rest:
    200 grams of fresh green beans
    1 tablespoon of chopped parsley to decorate
    For the pan fried version:
    200 grams of fresh green beans
    1 tablespoon of unsalted butter
    Half an onion finely sliced
    1 tablespoon of vinegar
    Salt and pepper to season
    1 tablespoon of fresh chopped parsley to decorate.
    cooking time:
    for the beans 20 minutes in water.
    then a further 10 minutes in the frying pan.

    More than the simplicity, I love how cheap these recipes are to make. I'm by no means rich, so it's nice that I can treat my family to a French meal without breaking the bank.

    I love green beans, and I really am enjoying your simple veggie side recipes. To be honest, these are the kind of dishes I am more likely to make often, rather than the more complicated, ambitious ones. Also, I am really needing to put more vegetable dishes in my diet. Thank you.

    Had a bit of nostalgia watching you prepare those green beans. I've spent many summers sitting around the table with my family, snapping beans for canning and cooking.

    Many cooking shows on TV today have degraded into reality shows for the hype, with celebrity chef presenters (some of them more flamboyant than others). I do enjoy learning the techniques of cooking from such shows, and that is about it. Cooking is both an art (creativity) and a science (techniques). I am a home cook and do not ever want to emulate chefs with complicated recipes (perhaps to show off). When you go to a high-end restaurant, your waiter often recites a long litany of ingredients to wow you, which makes me dizzy -- and I have been to many of those restaurants. I prefer a simple, French bistro-style dish that is excellent and easy to make.
    In regard to popularity of shows, many viewers out there, like their favorite chefs, are traditionalists who prefer to follow classical recipes strictly -- the cuisine is frozen in time. By contrast, many French bistro chefs are young and willing to innovate. I really like Stéphane's style of cooking. While totally respecting them, Stéphane is not afraid to modify/simplify classical recipes to render them more relevant to modern day. Above all, he has an unpretentious style of presentation in his videos, which makes food preparation fun for the home cook.

    My partner is French. I made these "Lyon" style green beans and I used balsamic vinegar in the end. Was so tasty and got compliments. Thanks! However, I didn't boil them for 15-20 minutes, only 10 - so cooking times vary. I did everything else exactly like the recipe and they came out great.

    Nice and simple French bean recipes, Stephane! Me and my girlfriend are always so busy with work, but we always try to look for quick and easy recipes that we can cook for weeknight dinners or packed lunch meals for the office. I hope to see more videos like this one!

    Butter on med add onion 5 mins to color, add beans season heat high for 5 mins. Remove, heat on high add tbs vinegar deglaze

    green beans are a simple and efficiency veggie, allways unvisible on an accompagnement in a dish but essential....
    I steel remember when I was kid with grand-ma when we cutted the end of the beans after havresting the garden.

      I have the same memories ! Those green bean salads were exquisite. It also reminds me of my grandma's salade frisée aux lardons, with a strong vinaigrette and lots of garlic, tasty as hell. She was living relatively close to Lyon, so I got to try those à la Lyonnaise recipes quite often.

    I always do my beans in a microwave steamer; 5 minutes on high, then 12 minutes on half power (probably a bit longer if you're going to eat them cold). That way they're perfectly done after sautéing. In Flanders, we don't tend to put any colour on the onions, but I am going to try slices instead of diced as I think that should mix better (funny how I didn't think about this before, given I've been cooking green beans for, oh, say, 34-odd years).

    Love this, never added vinegar before so will try it. Could you try 2 different ways of serving carotte rapees as a starter, popular in France. And when the season is right, artichoke vinaigrette would be lovely. Keep up the good work Frenchie!

    We pick Provider and Fortex varieties when they're about the size of a pencil. They cook in3-4 minutes and if shocked in ice water maintain a vibrant green color. I really like the Lyonnaise recipe - gb's can get pretty boring otherwise. Thanks for the recipes Chef. Big thumbs up!

    Love these recipes, will try them. Just FYI green beans may or may not have strings. It depends on the variety of the bean and how mature it is when harvested.

    Looks good. I will use the same preparation but boiling the beans until just tender, I do not want to remove all those nutrients from the beans.

    Thank you! Is the Lyonnaise style preparation something the French typically would use for other vegetables, like asparagus or baby carrots, fennel, Brussel sprouts, etc.?

      potato slices are done like this, carrots take longer to cook so the process is a little different.

      if you leave to stand on the side it will kind of separate but shake it again and it comes back together

    I tried this, and simmered the beans for just 14 minutes (versus the 15-20 you recommended). That turned out to be too long, though; the beans turned out overcooked and soft. (Most recipes call for shorter cooking times for green beans - eg, 5-7 minutes or less.) The dish still tasted good, but would have been better had the beans not been overcooked.
    Furthermore, why do you recommend parboiling the beans, rather than steaming? We know that the process of boiling loses more nutrients into the water. Please explain this.

    Cooking the beans for 20 minutes and pain frying them on a high heat. Wouldn't that over cook them and make them mushy?

      Nope 😀 beans are actually extremely tough but you can cook them less if you like if you prefer them crunchy

    15 minutes to boil beans!
    I find that even 3 minutes is more than enough especially if you have haricots vert.
    Thanks for the inspiration though.

    Unfortunately those plump American-style green beans are tasteless. The true french haricots verts are skinnier and darker and have a distinctive nutty flavor as well as a certain crunchy tooth-feel, that make them interesting. Boiled way too long, too.

    20 minutes was too long for me. The beans were mushy and too soft. I wonder if your elevation plays a factor? I will try again, and test at different lengths of time, starting at 10 minutes.

    Wow soooooo much talking, had to zero the volume. Both simple recipes could have been reduced to a minute each, zero talking.
    Less payout I guess! 🤔
