    Shepherd's Pie ingredients:
    Olive oil (or cooking oil of preference)
    Salt & pepper
    About 6 russet potatoes (about 2-1/2 lbs) peeled & cut into chunks
    1/2 cup milk
    1/2 cup heavy cream
    2TBS butter
    1 tsp nutmeg (optional)
    2 lbs fresh green beans (ends snapped, cut into 2-inch pieces & steamed
    1 small white onion diced up
    1 garlic clove minced
    2 carrots peeled and diced
    1 bay leaf
    2 lbs ground beef (or ground lamb)
    2-1/2 TBS all purpose flour
    3 TBS tomato paste
    2 TBS hot water
    1-1/2 tsp Worcestershire sauce
    Dried or fresh parsley for garnish, you could also use minced chives
    How to make it:
    1. Preheat oven to 350 degrees F. Oil/grease 9X13 baking pan.
    2. Add potatoes to a pot of water & boil/cook until tender, about 15-20 minutes. Drain & return to the pot.
    3. Mash potatoes & add milk, heavy cream, butter, nutmeg & a dash of salt/pepper, mix well. Set aside.
    4. If you haven't steamed your green beans, steam them now. I simply add about 2-3 TBS of water to a microwave safe dish with my green beans, cover with plastic wrap & microwave for about 4-5 minutes. Immediately remove from the microwave and strain them, allowing cold water to run over them for several minutes to stop the cooking process. Set aside.
    5. In a large skillet, heat oil over medium-high heat. Stir in onion, carrots, garlic, and bay leaf & cook until vegetables begin to soften. Add the beef & cook, stirring until no longer pink. Pour off any standing liquid.
    6. Push all ingredients to one side of the skillet. On the other side, add the tomato paste, flour, Worcestershire sauce, hot water & a pinch of salt & pepper. Stir until blended, then combine with the beef mixture. Cook until the mixture is thickened. Remove from heat. Remove & discard bay leaf.
    7. Spread the beef mixture in the prepared baking dish & layer the green beans on top.
    8. Spoon the mashed potatoes over the green beans & smooth the top. (You may cover at this point & refrigerate for 1 day before baking. Let it stand at room temp 1 hour before baking).
    9. Bake until heated through & the potatoes are lightly browned on top, about 30-40 minutes. Sprinkle with parsley & enjoy!

    Tina I'm so proud of your decision with Parker's curriculum. I'm a retired primary educator. What you are going through with Parker at grade level he is at is very normal and typical especially with Math. It is obvious in every thing you do, the way you decorate and keep your home, the meals you prepare, the videos you edit, that you are a high level perfectionist. It is not easy to let go and change the way you have done things. You recognized his needs and did what was best. You now your son better than anyone. You know what works and doesn't work. I really enjoyed seeing the butchering process. We have done a lot of our own birds, we are thinking of sheep in the future. Thanks again for another well done video.     You nailed it on home schooling. I love that you talk to your child. So many people don’t do that. I so agree with your ADD thinking. So many people just want to medicate their kids instead of accepting they are just not interested and board. You are awesome and love your honesty.

    Hi Tina , it’s so wonderful to listen to you being pro active about Parker’s education. Education is about connection putting Parker first and trying something different takes a lot of growth as a parent.     Top tip when you’re getting children to spell words: get them to close their eyes and ‘see’ the word on the back of their eyelids. Used this all the time in my 30+ years of teaching and was always a great strategy. 💙

    Our children learn differently and that’s ok. We have to keep learning with our children. I definitely agree with that! You cannot label children with a disability as the first resort and unfortunately public schools and medical professionals do this too often. Good on you to get through it!     Math was never my daughters strong suit all the way through 12th grade. Her first year of collage she had a teacher whom helper her sail though it. ( she told me she finally got it ) She’s now a school teacher for 24 years. And a good one if I have to say so myself. Parker will get it. And your a good teacher mama,.

    Hello Tina and family. I have to agree with you on Parker, there is nothing wrong with him. My son was the very same way in school. He noticed everything and was focused on his teacher too. After graduating 5th grade we home schooled him the next year.
    We re-enrolled him when it was time for the 8th grade. Being home schooled helped him a lot. He's 43 now and have a family of his own. A great father and husband. He reminds me of Joe. A jack of all trades. God has blessed our family too. Praise be to God.
    Be proud of all you have done and had to do.God knows best and will not leave you nor forsake you. Love the smile on your face and yes you are still involved in his school work. God bless you and family. ❤

    That is the joy of homeschooling. Every child learns differently and with homeschooling if it's not working you can change it up. I have 4 kids that I homeschooled and there were some years that all of them were doing a different curriculum. You are doing what is best for Parker.

    My son was told after many hard days. That he was unable to retain math. We would work on his math and it was so frustrating because it was like he had no clue what he had just learned the day before. So after many tears and some advice from some professionals. We did the math. But knew that retaining it was not in the cards. And we homeschooled from 5th grade to his senior year. And he is just fine. Keep your head up. Days will be hard. But there will be some very exciting ones as well.

    I agree with you, when it's no longer fun, time to switch it up! Nice that you'll have more time to get the things done that you need to. Parker 's world just expanded and he'll get more help and feedback from others. Kellen will have to adjust also, with Parker in school longer. Joe, as usual, is busy in his home renovation projects!     You're doing such a good job homeschooling the boys! Sometimes you just have to adapt to what your child needs at that time. CLE math is advanced, and the lessons are long in those grades. We switched to Teaching Textbooks for upper grades and it's been a good fit. Love Abeka, too. BJU has some really good online options, as well. Its a blessing to have so many good options. Love that you share your homeschool journey, it's such an encouragement! ❤

    As a child that struggled with adhd and have reevaluated and see my adult struggles with it as well! But it’s not blanket diagnosis for all for sure! I thrive on change as I have something new to focus on (figure out). When it isn’t entertaining or hit a wall I shut down (become distracted really easy). Good for you to not say this is it and push that! I always worried about some homeschool programs as the flexibility of the subject to adjust and adapt on the fly wasn’t there. Your openness has been really insightful as some others don’t really show the good bad and ugly of it! Love watching your family!

    Hi Tina. You definitely need to give yourself grace on your decision to change Parker's schooling; it was the right choice to make for the both of you. Kellen has bloomed so much since being with you guys, it's a joy to see. Joe is like my own husband, retired military and can do anything they put their minds to. Just an FYI, you made cottage pie (made with beef) but will soon be making true Shepherd's pie (made with lamb) - either way it looked yummy. 🙂

    Joe looks like he was running around trying to find a place to take a dump in the woods and the look on his face suggested he was losing the battle. Shepherds Pie is a favourite in our house and I know Americans find it difficult to understand how us Aussies like Vegemite BUT if you get your hands on a jar, try putting a heaped teaspoonful in your next Shepherds Pie it makes it so much richer and meatier tasting. It’s really good on hot buttered toast too. Oh and grated cheese on top of the mash on your pie and in the oven until brown and crispier is awesome. I’m still jealous of all the fun you have in the snow.

    Tina, I was just viewing your video in which you discussed your concerns about Parker’s math. First of all, my name Majorie Butler. I’m a retired math teacher and private tutor. My granddaughter, Gracie, is the same age as Parker and is experiencing exactly the same frustration Parker in math. I’ve been spending afternoons with Gracie and have cleared up several issues that is the root cause of the frustration.
    My plan to correct the issues and eliminate the frustration, I began by going back in the concepts to determine the where the breakdown occurred. Once I found the problem, I designed a plan which included the goal(s) we want to work towards, the necessary remediation that was required, and the necessary tools we would use.
    Okay, so Gracie was homeschooled kindergarten and first grade. She went to a public school for half a year and when we determined the school was not meeting Gracie’s needs, we began homeschooling again for the second semester of second grade. We worked for a month beyond the end of the semester to ensure she was ready for third grade. For third grade, she was enrolled at a Christian academy where she did extremely well.
    Now, she is in sixth grade. Multiplication of three or more numbers seemed to really task her as well as long division. Here is where we backtracked. The breakdown was with multiplication. I began with her relearning her multiplication tables. I would have her recite each table until she could recite it without hesitation or having to think about the answer. I had her go up to her 10s although later, she will need to know higher numbers for square roots and such. And…now that she is able to recite each table through tens is so remarkable that her confidence and self- confidence hit the rooftop.
    Next, long division. Gracie did as I’m sure Parker does know the co-relationship between multiplication and division. Just as with addition and subtraction. In working long division - dividing multiple numbers by multiple numbers is hard for our young students. So, here goes.
    I’m assuming you, as the teacher, has taught the steps to perform long division.
    Find problems Parker like those Parker is working now. Give him the instructions step by step allowing him to complete the problem on his own. When he makes a mistake, tell him to check his work - wanting him to find his own mistake. When mistake is identified and corrected, continue with the next steps until completed. Do not allow him to proceed if he has made an error which will result in a wrong answer. By getting him to find his own errors, he will become more diligent in his
    Work.
    I’m from Tennessee and utilize old school teaching methods. I was taught by some of the most wonderful people who encouraged us to learn and rewarded us to learn.
    I did get a bit aggravated with a couple of teachers this year as they were using food items as a reward. I never used food items - as it is one of our basic needs along with clothing and shelter. I kept a supply of neat pencils, erasers, and the like as an incentive and reward.
    I am 72 years old and am retired now. I do still tutor but not at the number of students I worked with a few years back.
    I used quite often used old school math books from the 60s that actually explains math concepts in simple, easy to understand concepts. Some of the books being used today are way above a sixth grader’s knowledge. I will be happy to send you one of these books for yours to keep, if you would like.
    I’ve followed your channel since before you left Virginia. And, went back and viewed the earlier ones. I do look forward to see your posts. I visited Alaska the last time in 2019. I hoping to return next year as I have just barely scratched the surface of Alaska. If I were young - about your age, I’d relocate there.     As a former educator (not math) I saw a very creative math teacher, using a building project for the students to see how decimals, measurements, and division are used in reality. You may find this technique a focus aide to see the reality of using math concepts. His father loves to build and is good at it, so building a cardboard cathedral, or barn, etc. might be a help. Just a suggestion.

    Having homeschooled 3 children through graduation I will tell you that one of the most important things I learned is when things become too difficult it is good to slow down and change things on that subject. This is the blessing of homeschooling you can take the pace that you need to. There were times when we set a timer and only did 30 minutes of the subject to keep them and me from getting frustrated. There were times that we didn't do the subject for a while and then when the time was right we would take a few weeks and only do that subject for an hour each day and not do any other schooling for those weeks. Being flexible with the schedule is key to controlling the frustration.
    I also found that sometimes the problem was the curriculum. Either it was too easy or it was too hard. If they can't stay focused then looking at the curriculum is where I would start. Maybe he would do better with an online math curriculum. Think outside the box. Don't try to copy the public school way but be open to something different that is better for your son.       Thats exactly what we did, switched him to an online math program & I’ve never tried to mimic the public school system. It’s homeschool, not public school.❤️❤️

    Mathnasium has been an awesome addition to our 6th grade homeschool math. I'm pretty sure they do online help with lessons too. If you ever feel like you're in a bind with it.

    Good job on teaching the boys with sooo much patience. I was able to teach my Grandson one year during the shutdown and know it takes a lot. We had a few hard days. Wish we would have redirected.

    I had a real mad phobia when I was going to school, and I just couldn’t grasp certain things and then putting it in terms of apples and oranges, especially with algebra and made more. I think the biggest thing that helped me enjoy math was looking at it as a game instead of math and also applying it to something in my daily life helped it make more sense of why it was so. looking at it as a game made the challenge fun. Repetition of each type of application helps to sit it in your head but three hours at a shot.! Girl that’s too much. It’s mentally exhausting.. each person is different the way they engage with math, but try your best to make it fun

    Nice decorating job. We will next weekend put up our little tree. That was a great explanation of Parker’s curriculum. He should benefit well. My son gets distracted easily like Larry does. We were in NY the time Covid hit and the schools shut down. Remote was hard for him. Being in the house knowing the video games are close by didn’t help. Managed enough to graduate. Tried college and just couldn’t do it. He is getting professional help. May have mentioned this before. Thanks for sharing. Till next time!

    I totally agree with you about the ADHD...I teach children, if someone walks in the classroom and does a observation, it or just comes in, getting them back on task is hard, That doesn't mean they are ADHD, adults do it to, if someone walks in we stop and look and listen.

    That is the beauty with homeschooling- you can curtail the curriculum to their individual learning styles. That's what I had to do especially with my son. I don't know Parker personally but from what I've seen id never say he is ADHD. He completes his assignments and it just seems like math is the hard one for him. My now grown son was diagnosed with ADHD as a young boy. He truly was- I homeschooled him and we had very hands on curriculum but he was in able to complete an assignments -he struggled. That's why I loved homeschooling- you can switch things up as needed. You all have a wonderful Thanksgiving! You all are doing a great job!

    Hope you all had a wonderful Thanksgiving. Glad you figured out what's best for Parker's math. I guess that is my fear if I were to homeschool. I was never good in math.
    My husband comes in and says "yep you're getting your Tina fix"😂😂😂 I know I haven't been here watching as long as other's, maybe about 6 months, but I've pretty much have watched most of the videos. I'll try to not miss the live on Saturday. I don't think we're doing anything. But I'll watch the replay. Thanks for sharing bits of your life.❤
