- Hello There Friends, I'm back to make another Shepherd's Pie, or as the French call it Hachis Parmentier! Although this time, it's the real deal. Kind of. I am making it with lamb like a traditional Shepherd's Pie, but I still like to put my mushrooms and a layer of Potato on the bottom. That way, I can add a layer of cheese before the meat. Do as you wish but I think this makes the dish much better! Let me know what you think in the comments section, and I hope anyone who was upset I didn't use lamb last time can be happy with the result today!

I worked for Chef Jean Pierre at the Left Bank Restaurant back in the early 80s in the kitchen after working at Le Cafe du Beaujolais. He was a great boss, friendly and kind yet serious about great food. He treated his employees like family. I pounded a lot of veal cutlets in those days! Brit here. My family always made shepherd’s pie as a leftover dish. We take the leftover cold roast lamb and mince it. The flavour imbued from the roasting add a whole level of taste that are missing otherwise. The joy of having a roast lamb for Sunday dinner, knowing the joy that awaits you the next day too is heavenly.
That sounds supreme amigo. Sad to say in most cases I only have mince to work with, but I will keep this in mind as a leftover option.
Shepard's Pie = lamb
Cottage Pie = beef
At least where I come from in UK.
However, I'll just call this JP's pie and know it will taste amazing! 😉👍

My foster Mother was from Manchester. She was elderly by the time I met her so I loved to sit and listen to her recount her life in England during the war.. She was one Phenomonal cook! And an exceptional human being! She fostered so many girls over here in Canada and she treated us very well! She was nothing like other foster parents! She was absolutely an exception! Beautiful Soul! Everyone Loved Joyce! She always prepared the best meals for us! She was somewhat infamous for her meat pies! She was once in our local paper because an nhl hockey player would always grab her pies when he came through Meaford! They were sold through Glens Food Market, a local grocery store serving Meaford at the time, & orders made directly through her too! She had several customer's! Everything Joyce made was always delicious! The best food I've ever had in my life was when I lived with her! She always fed us well! Where other foster parents would feed us complete crap. Like the one who fed us day old donuts almost everyday! Extremely unhealthy! Joyce cared deeply about the food we ate! 🙏🏻💜🕊🌿

I'm English and I hadn't heard of putting mash on the bottom but it sounds like a great idea. You nailed it chef as usual, it looked very tasty.
Is a bit of a game changer because it allows the shape to keep much better if you slice/portion it. Much less of a mess! Also makes it look cooler imo. Like a fat sandwich with mash instead of bread
I am English and it looks delicious. Just like Chef Jean Pierre you can add what you like. I do like his two potato layer method.
You took a dish most people think of as tasteless slop and made a beautifully looking perfectly served comforting portion of English Warmth. From England you get a massive tick well done.

@@FightTheByte_ Well people don't have any standards in any sense these days, no pride in their competence and what I find irrational in today's world is that the lack of standards is so pervasive that people that do have it are able to sell a basic level of it for an extortionate price but As the great Gordon ramsay once said if you wouldn't serve that to yourself or your loved ones then don't serve it to me.
I can't complain though because it pushes us back into the kitchen at home where you can get a real perspective on just how little a top level restaurant does that you can't do yourself at home. Maybe you had some further thoughts if not I apologise for the somewhat pontificating response.

What makes me keep coming back and learning more is that he is so real… he shows how much fun prepping and making a dish is.
As an Englishman and long time fan (I remember the cottage pie controversy from way back!) this recipe is pretty much spot on. There is nothing wrong with cottage pie and it is yummy, but shepherds pie is really where it is at. Many congratulations on having well over 1m subscribers and have a great new year. I'm not surprised that your channel is doing so well, it is as entertaining as it is educational. All the best to you and your team.
Shepherd’s pie always has beef in the US. No one makes anything with a disgusting name like “cottage pie”.
@@MikehMike01 I'm not sure about it being a 'disgusting' name? That's a very strange comment mate. Where I live there are some beautiful cottages.
Shepherds are not responsible for looking after cows, calling a dish made with beef 'shepherds' pie is just a bit weird. Every country has weird things and it makes the world a more interesting place.
The US has Sloppy Joe sandwiches. They taste pretty good if done properly, it is an ugly name though. In Korea I lived near a restaurant called Ddong Tweji Maeul literally translated into English it means 'Shit Pig Village'.

I put thinly sliced potatoes on the bottom. Worked perfectly! Held things together when the spatula went in to lift out that first slice.

Good morning Chef J-P, I suppose original ingredients makes the traditional dish, but, if you have to substitute, do so. As long as the food is fresh and tasty, who cares. This is what makes life so interesting, sharing recipes from around the world. Some dishes are wonderful others I would not waste my time in preparing, it all depends on personal taste and your interest in cooking. The Shepperd's Pie looks amazing, the filling is rich and so well cooked. Have to make this one. But my husband does not like lamb/mutton!! Food has always been that way. You have techniques and a few principles, everything else is left open to interpretation. It's only in modern times that the gastrojournos have come nosing in with their "authentic" label. Cooking is fluid, cooking is expressive, cooking is life.

As in a shepherd herds sheep! not cows! not pigs! lol if you make it with beef or pork then it's quite simply called cottage pie! everything else in the recipes are usually the same. jeez!

I make mine with buffalo! I also do a Worcester/Guinnes reduction for the meat. Like Chef says: Do it the way you like it. It's cooking, not rocket science. :-D

Me, too. I love the Garlic Mashed Cauliflower recipe at Allrecipes. I think it would work. I loved watching Chef pipe the potatoes across the top! Carrots & peas would have to go, too. Sub with broccoli or? To thicken, try coconut flour, xanthan gum, or glucomannan powder ( never tried that one).

My English mum always made shepherd's pie as a leftover from our Sunday dinner. Mostly it was beef as we were in Canada but sometimes, rarely really, we used lamb. It was my job as the oldest lad to grind the meat with the hand cranked meat grinder. I find lamb vastly superior to beef but either one is absolutely delicious comfort food. Thanks for this lamb version Jean-Pierre.
I've always heard that if you make with beef it is called "Cottage Pie".
depends on what country you live in.
If I do a traditional shepherd's pie I do it with lamb with the mashed potatoes on top. If I do it with beef I do it with the mashed potatoes on the bottom and corn bread on top. Both are delicious! I'm so glad I found your channel. I love your personality and energy. You always make me laugh and put a smile on my face happy new year🙂

Another Amazing Video from the people’s Chef. Not only are your videos an education in preparing À la carte dishes that could grace the menus of any Michelin Star Restaurant. I love watching your video’s not just for inspiration but also the entertainment value too, you had me in stitches, I’m English and have been living in Scotland for years, and I’ve always used mince beef when cooking a shepherds pie.

In all my years, I have always done: Shepard’s pie with Lamb and Cottage pie with Beef. As for the veg, it’s what we like and hubby don’t like peas and son don’t like mushrooms… so that’s where I’ll adapt, with lovely buttery and cheesy mash on top… of both. I make a veggie one for myself… I call that Mine 😂
