Ingredients:
1kg of Cleaned and Devained Prawns
0.5tsp of Kashmeri Chilli powder
1tsp of Chilli flakes
0.5tsp of Turmeric
0.5tsp of Roasted Coriander / Dhania powder
Cracked black peppercorn
Fine Salt
1tbs of Butter
Olive oil
1 heaped tsp of Crushed Garlic
Diced 2 Green chillies
1 Diced Onion
1tsp of Chilli powder
2tbs Butter
A dash Olive oil
2tsp of Masala
1 diced Green chilli
Béchamel Sauce:
2tbs of Butter
1tsp of Crushed Garlic
3tbs of All Purpose Flour
250ml - a cup of Milk (your choice)
Salt
1 heaped tsp of Mixed Herbs
500g of Pasta
Garnish with Cilantro / Coriander / Dhania

I have always maintained that a profound difference exists between a chef and a cook. A chef caters for customers whom need to define individual nuances in the presented dish where as a cook presents these nuances from the heart, each plate is individual and a representation of the cooks character and passion. Solina is not a chef, instead she is a cook, much like our elders. Herewith is an otherwise bland dish transformed into a quantum pool of flavour and without doubt, character. To present a continental dish expertly given an authentic local dimension is truly the hallmark of a great cook. Dear Randy, your words are so true in so many ways. My family sometimes say to me it’s in my hands but I believe it’s from the heart. When you cook with love & passion, the food is always a culmination of those ingredients as well. My focus is predominantly on flavour & to ensure that the first bite transports you on a sensory journey.
