    Here is a compilation of all of my CHEAP & EASY meals that are under £1 per portion, that I have shared over the last year and a half all in one place easy to find. All vegetarian and lots vegan/plant based. Great for veganuary!
    Recipe 1 :- Leek, potato & mustard soup £0.79 PER SERVING.
    Ingredients-
    x2 large leeks :- £1.19
    x2-3 large potatoes :- £0.40
    half a bulb of garlic (adjust to taste) :- £0.20
    x3 tbs dijon mustard :- £0.20
    x2 stock cubes :- £0.20
    x2 bay leaves :- £0.05
    x1 tbs butter/oil of choice :- £0.10
    Recipe 2 :- roasted butternut squash & feta pasta £1.07 PER SERVING.
    x1 whole butternut squash :- £1
    x1 pack of feta cheese of choice :- £1.99
    pasta of choice :- £0.41
    optional extra, half a pack of cherry tomatoes:- £0.50
    Recipe 3 :- No Beef stew £0.98 PER SERVING.
    100g puy lentils :- £0.31
    x1 onion :-£0.10
    300g mushrooms :- £0.89
    200g winter veg of choice :- £0.50
    x2 celery sticks:- £0.10
    x2 carrots :- £0.10
    half a bulb of garlic :- £0.20
    x2 tbs tomato pure :- £0.20
    x3 tbs plain flour :- £0.05
    250ml red wine :- £0.86
    x2 tbs balsamic vinegar:- £0.05
    x2 tbs soy sauce :- £0.05
    x1 tbs marmite :- £0.10

    thyme, rosemary, bay leave, salt & pepper

    Recipe 1 :- Chorizo pasta bake £0.65 PER SERVING.
    Ingredients-
    Pasta 300g :- £0.25
    x1 pepper :- £0.45
    x1 red onion :-£0.12
    half a bulb of garlic (adjust to taste) :- £0.10
    135g Chorizo :- £0.75
    x1 can chopped tomatoes :- £0.32
    Cheese (of choice) 130g :- £0.69
    Oil (of choice) , chilli & oregano :- £0.7
    Recipe 3 :- Indian Curry & Rice £0.81 PER SERVING.
    x1 cauliflower :- £0.95
    Tofu OR x1 can of chickpeas :- £0.99/£0.55
    x2 onions :- £0.25
    x1 pepper :- £0.45
    half a bulb of garlic :- £0.10
    x1 can chopped tomatoes :- £0.32
    x1 can coconut milk :- £0.79
    x1 tube of tomato pure :- £0.49
    x1 stock cube :- £0.21
    x1 tsp Cumin, Turmeric & Coriander :- £0.05

    Rice (According to packet instructions) :- £0.24
    Recipe 2 :- Gardeners Pie £0.79 PER SERVING.
    x2 cans lentils (can cook and use dried lentils OR use mince):- £1.20
    x1 onion :-£0.12
    half a bag or frozen mixed veg:- £0.50
    x2 large parsnips :- £0.20
    x1 box of stuffing :- £0.46
    x1 stock cube :- £0.21
    Gravy :- £0.05
    For the mash potatoes :-
    x5-6 large potatoes :- £0.65
    x1 large spoon of butter :- £0.40
    a dash of milk :- £0.10
    Recipe 1 :- Easy Peasy Pancakes from £0.13 PER SERVING.
    Ingredients-
    Self raising flour 300g :- £0.12
    Milk of choice ( we used unsweetened soya milk) 300ml :- £0.15
    Eggs X2 ( the price shown is the cheapest then most expensive egg options at Aldi, we have our own chickens so used them) :-£0.26 - £0.66
    Caster sugar 1tbsp :- £0.02
    (Then toppings of choice)
    Recipe 2 :- Egg mayo salad FROM £0.32 PER SERVING. (plus bread or jacket potatoes depending on how you serve)
    Eggs X4 :- £0.52 - £1.32 (again depending on the eggs you buy)
    Lettuce (or green of choice) :- £0.60 for a bag but will have left overs!
    Mayonnaise around 1/2 a cup :- £0.16
    (salt and pepper to taste)
    (bread or jacket potatoes)
    Recipe 3 :- Homemade margarita Pizza £0.81 PER SERVING.
    For the dough
    Plain Flour 650g (plus extra for dusting):- £0.26
    Oil of choice (we used olive oil) X2 tbsp :- £0.13
    Milk of choice (we used unsweetened soya milk) 80ml :-£0.05
    Luke warn water 350ml
    salt
    Toppings
    Tomato Pure 3/4 a tube:- £0.34
    Cheese of choice 400-500g :- £2.28
    Recipe 4 :- (Vegetarian) Carbonara FROM £0.38 PER SERVING
    Spagetti (save a cup of the pasta water for later):- £0.21
    Eggs X1 egg and X2 egg yolks :- £0.39 - £0.99
    Cheese of choice 150g :- £0.76
    garlic x5-6 cloves :-£0.12
    Oil of choice tbsp :- £0.06
    salt and pepper to taste

    Ground cinnamon 2 tsp = £0.07
    Ground ginger 1tbsp = £0.08
    Ground flaxseed 1 tbsp - £0.05

    I absolutely love these budget recipes. Especially rn with prices and just after Christmas and new year cause it really really helps right now.

    This is such a good video really shows you can eat well cheaply and tasty thankyou .was laughing when you did the waffles must be the only human being on the planet thats never had a waffle!!!!!x😂

    Lots of great meals in this video, I will be trying all of these over the next couple of weeks. You are such a frugal cook. As a pensioner on a limited budget I have already adopted some of your meals into my regular meal plan. Love how as a busy wife and mum you take the time to make such fabulous videos to inspire us.

    I love all your recipes. As a vegetarian I have never measured out ingredients for meals, unless I am baking something that needs precision! I find that people who just follow recipes are more limited, because they worry about having the right amount of ingredients - experimentation is half the fun!

    Loved your video 😊. We make most of those meals already to make sure we stay under budget when it comes to food - the only thing that I would recommend is adding a source of protein to every meal so you stay full for longer (lentils, beans, chickpeas, tofu, tvp).

      Just bought it from vitamix ☺️. We got our first one second hand but after having that 6 years we decided to invest in a new one as we felt it was worth it.

      @@natalielong7804 yes they definitely are, I used cash back apps and waited for sales when we did buy it. I have got a video where I explain the few things we DO spend money on and that’s something we do feel as been worth it personally. But you could definitely try out a second hand one as they last for ages!
