    I think this could also be nice with some homemade basil and ricotta filled ravioli. Gently cooking the garlic in a bit of olive oil would soften it, and make it less "raw garlic" flavoury.

      I think the first one was better because you don't need a blender and you make the sauce in the pan.

    I made this with some minor changes - using more broccoli to make extra green sauce
    For al dente broccoli florets, I blanched just the small florets for 2 minutes then removed them. Then I added the remaining broccoli and spaghetti to cook (removing the broccoli after 5 minutes to make the sauce)
    I added 4 basil leaves to the broccoli sauce for depth of flavor, 2 TBs of Parmesan Areggiano for saltiness, a 1/2 tsp of lemon zest, and some cracked ground pepper
    To my Ricotta cream I also added the Parmesan and lemon zest in the amounts above
    When my green sauce was ready (hot in the pan) I pulled off about half to also spoon over the pasta when I served it
    Finally I pulled my pasta about 2 minutes early so that it would finish cooking in the pan to al dente. Just at the end I added back the broccoli florets I removed earlier
    When I plated the pasta I put some of the extra green sauce on the plate and plated the pasta in the center. Then the white sauce on top of the mountain
    I served with glazed salmon (the glaze had a bit of cocktail sauce in it so it made the salmon more red (completing the colors of the Italian flag on the plate.

    Love this New Recipe!! I would put 1 garlic and add lemon, maybe lemon zest, too with the creaming off the broccoli. Wow, ricotta cream. Cannot wait to make this Chef Vincenzo . Thank you ❤

    One thing I love about pasta is that it's great in elevating other ingredients. Broccoli is pretty boring on its own, but you can turn this very healthy vegetable into (for example) a great pasta sauce.
    Also, +1 for using the stem - it's very nutritious!

    Vincenzo this looks delicious. I would only change it by adding black pepper and cooking the whole clove of garlic in olive oil for a couple minutes to sweeten it and tame the raw flavor.

    I can't believe you blended that beautiful brocoli, I make mine with rigatoni. I toast garlic with red pepper flakes in olive oil then mix it together with Parmigiano-Reggiano cheese

      he blended just a part of the broccoli to make the creamy sauce. The rest of the broccoli stays intact. Don't see a problem with that.

      @@vincenzosplate well... I forgot to buy ricotta, so I did it without the cream, but with roasted pine nuts and it was good. It's easy to make and as soon as I've done it two or three more times, it will be delicious. Thanks again for this easy and yummy recipe. I will be making it a lot in the future due to my gf being vegetarian.

    The original pasta broccoli recipe from your channel has been very successful. Especially with my wife, but also my baby daughter who isn't all that much into veggies didn't refuse it, which I consider a success 😂 This seems to be an interesting twist on that, which I will definitely try out. Now I just need to find some good quality ricotta...

    I have never had this and it looks amazing! I like garlic, but not too strong. 3 cloves seemed too much, and those were big cloves. I will definitely use one clove of garlic when I make this. I wonder what bell pepper could add to the sauce. I have had broccoli with bell peppers in a few really good dishes, so I may add some to this when I make it.

      At least in my mind, bell peppers are really only there for the texture since they don’t have much flavor. I think the broccoli will add enough texture that the bell peppers are unnecessary, but it’s worth a try.

    This is a good recipe. I made it without ricotta (dieting) and didn't feel like i was missing creaminess. I wonder what other vegetables you can do this with..roasted eggplant???

    I like Broccoli, & this is one of the ways I would enjoy it. Also in hearty soups, stews, Oriental dishes, & a traditional American way is with hot, melted Velveeta cheese. I still have a Pecorino cheese wedge, it's nearly to the end right now. I'm like you about Pecorino; I can't help but SHRED (as in grate A LOT of it, hehe). I noticed when combined with melted butter, that completes a sensational experience of Pecorino.

    Great recipe as always. İ have my own brocoli chicken pasta recipe i think its just the best and girls favourite pasta ever too :).
    İngredients:
    Linguine 300g
    Chicken breast 300g
    Broccoli 1 big flower
    Top quality expensive cream 200-300g
    Olive oil
    Salt peper 2 garlic
    Lemon zest
    First i cook the chicken in bite size half done like 5 mins in medium heat,
    İ cook the broccoli in the water for 5 mins, take them out and cool them with cold water. İ add the pasta to the water i cooked the broccoli in, to the pan with good amount of extra v oliv oil, add the %80 of the broccoli in pan very slow heat, i add garlic after i add broccoli becouse i want that garlicy smell little strong for this dish, i add pasta water every minute to broccoli and chicken, after like 6-7 mins when broccoli are going little mashy i add expensive cream (becouse the taste is better i want to taste the top quality cream), add pasta water, the broccoli is infused with cream the color should be light alive green, add the remaining broccoli pieces in, this way i can have better decoration,add salt and peper, and pasta will be finished i add pasta to the pan (no need pasta water now),lid off and put lemon zest just to perfume the dish when i mix everything, and thats it.
    İ know u dont like cream and chicken with pasta but i am your student for years and i developed this dish, and all of my girlfriends favourite dish was this. İt is healthy, it has protein, easy to make, budget friendly per ratio and tastes AMAZİNG. İ want you to give it a try.

    When first watching i thought to myself I would probably use only one garlic clove and probably roast or saute it first. Overpowering any dish with too much garlic can ruin it as much as too much salt. There is no turning back. It looks delicious and i can't wait to make it. Was wondering if you could incorporate some bread crumbs with the broccoli sauce or would that be a different dish entirely?

    This looks amazing! The simplicity of the dish reminds me of Jamie Oliver. This uses only one vegetable and manages to be more flavorful and more healthy than his 30 ingredient disasters

    Add some hot sausage to this pasta. I do it and the family loves it. You can remove the casings and sauté the sausage or just cook it in the pan and cut it into medallions. Your choice. Give it a shot.

    I think I'd add the smaller pieces of broccoli when removing the cooked larger pieces (after 5 mins) so that the remaining broccoli only cooks for 3-4 mins max. Also 2 cloves not 3😘♥️

    Tried it tonight and the family loved it. I made 2 small modifications:
    1. Rigatoni instead of spaghetti which I thought made sense. Whatever.
    2. Buratta instead of Ricotta. It was on sale.

    I smash it with a fork instead of a blender so that gives a creamy consistency but preserve some pieces of it giving it a great texture also I and add some guanciale

    When is the best time to collect the pasta water or let`say: at what point is it usenable? Let`s say the pasta needs 10 minutes ... after five minutes? I save it at the end, but with some recipes i need it before the pasta is ready. Nice one here, Vincenzo!

      When water becomes starchy (not clear anymore) then you can just use it.

    I have a question
    Why do you use so much pasta?
    Pasta doubble the size after cooking so you have 600g of Pasta.
    I cooked your recipies but with half of pasta 150g of Pasta and the sauces like in the videos.
    Or 300g of Pasta with double amount of you sauce recipe

      I love pasta so much so I always use lots. The amount of pasta and sauce used in the video was perfect but if u use less pasta and more sauce its even better

    Vincenzo, where am I going to get such nice ricotta? It's close to impossible for me. I tried buying various ones and they never look like that. The ricotta I find here is always a smooth creamy paste. And I can't make this recipe with that I guess?
