Yes, I use the Kalamata olives when I make olive salad as well as a lot of other ingredients not used on these pizzas. I followed a subscribers recipe for these exactly, except for the addition of the capers. They were awesome! I appreciate the feed back, and thanks for the tip :)

I still need to place an order for a metal one, but I did just order a digital scale to measure out ingredients by weight instead of measure for more accuracy on some great dough recipes that I have found. It also ensures that they come out exactly the same every time.
No, I just got the basic kit. I already had a stone but I did get the metal peel since you said the wooden ones are a little on the thick side for the Kettle. I will definitely be doing a video or two using it.

Forno Bravo has some really nice units that are actually mobile on a cart. They are a little pricey, but not out of reach.

There was that lovely crunch from the crust when you first cut through it. That only happens for the first few minutes. Home made pizza with great equipment & ingredients. Rare & wonderful. Great job.

this looks really good, If I may make a suggestion if your lucky enough to have access to some of those giant green "Greek"cracked Olives and some giant black "Calimata" olives add them to the mix, you may have to check for pits,but its really worth the time and expense

I understand you followed another's Recipe...good you added the Capers to the Olive Salad. Two days ago, I made my Olive Salad, based on a more robust recipe I have in a New Orleans cookbook; it has Capers as well. It has been marinating for two days and I will make my pizza today. To be more authentic, next time add Mortadella meat and Provolone cheese as well.

My guess if it was taking 6 or 7 minutes to cook that you were running around 550 F. If it were blazing at 800+ they would finish around a minute and a half. Those thermometers tend to not be accurate because they don't measure the heat at the cooking surface.
