I have been watching your videos for a few years now, and everything I have tried has been great! I actually have an outdoor pizza oven but had given up on it because I never could get the sauce right. After watching this I decided to try one more time. This is probably one of the best sauces I have ever had, the perfect consistency for pizza. We have used it in many other recipes since trying it, and the best part is the simplicity of it and it freezes great for future uses! keep up the great work!
A few tips for a pizza more like Imos. At Imos the sauce includes water (about the same amount as you use for paste) and is cooked for about 4-5 hours and a little more sugar than that. When saucing the crust, sauce goes all the way to the edge. All toppings go under the cheese except for bacon, anchovies, tomatoes, and pepperoncini's. The beef and sausage are not pre cooked, they are raw and go right on the sauce.
I liked that you cooked it on the grill. nice crust, the best part is it wasn't all wet or soggy. pizza is a treat on the weekend for me and my family because we try and cut back on the cheese all week but Ill have to make this for sure.
I pretty much cook everything on a grill or smoker because I love cooking outdoors. About the only time you will see me doing an entire cook indoors is if the weather is bad out. Hope you give it a try, and yes, not wet and soggy at all. Really good pizzas :)

I had to order it, but glad I did. I'll be keeping this on hand. It's a really good pizza cheese or at least it is to me. One of St. Louis's best kept secrets I suppose, lol! But I took the lazy way out and ordered Imos. Another thing you should look into making is Chicken Modiga. I don't know if it's a STL thing or not but its delicious. What really makes it is the provel white whine sauce. Delicious.

There is a pizza joint about a mile from here that advertises authentic St. Louis style pizza. I didn't even know what it was when I got it. It looks EXACTLY like what you made. I liked it a lot. Very creamy...almost like a cream cheese texture. Interestingly, my wife didn't care for it because the cheese...just like you said.The restaurant one here definitely goes down hill fast when it gets cold. Not sure if that's a characteristic of that style cheese or just the restaurant's version.
Hey Justin, I appreciate you checking the video out. Yep, Provel cheese is kinda like oysters. You either love it or hate lol! It's a very creamy cheese when melted and melts really good. I can see using this on some kicked up grilled cheese sandwiches as well or really anything where you want a good melty cheese, including a cheese steak sandwich. I've only had St. Louis pizza in that area, but I do wish someone down here would open up a St. Louis style pizza shop and let me compare, but I tell you what, these are so easy to make and fast because the dough doesn't have to proof, that I could make a lot of these on any given afternoon. I should have made more than two because we had the grand daughters over that day, and these things went in a flash.
looks good to me Rus,reminds me i havent made a Chicago-style deep dish in quite some time,i may have to try this the next time i buy the ingredients required,and maybe experiment with a few new combos while im at it
I like all sorts of pizza styles and deep dish is one of them, but I've always been really fond of the thin crispy style pizzas. I think it's because I like the crunch, and it doesn't fill me up as fast with mainly bread, and I can enjoy the toppings more. I hope you do try it out, and do some experimenting. These are hands down the easiest pizzas in the world to make and it doesn't take long because you don't have to wait on the dough to proof and rise.

If I'm ever out that way, I'll have to look that place up! I love trying different pizzas. I lived in Hampton, VA about 5 years ago while working nearby, and there were pizza joints all over that area. I made sure I tried them all before I came back home. I actually looked yesterday after posting this video on Amazon, so I could provide a link, and found out these blocks of provel is out of stock right now. I sure hope they get them back in stock to ship. I plan on keeping some handy. They were just on there a week ago.

I tried it out the other night, it was great. I could not afford the Provel cheese so I used Provolone and Mozzarella Cheese. This is actually my first Homemade Pizza. there's a couple of imo's where i live, not bad pizza. i think in order to call it a nacho the crust would need to be made from corn. nice vid and thumbs up.

I don't or never have owned a WSM so I really can't give you a comparison, but from what I know, I think your comparing two different animals here. The WSM is basically a water smoker, but you can adjust and dial in the temps right where you want them like most smokers. I hear really good things about them. The PBC on the other hand is a set it and forget it type cooker. You don't have to concern yourself with the pit temp because there is no way to change it if you follow the manufacturers instructions on using it. It's designed to run at a certain range, and that range has not let me down yet. I really love mine!

Imos doesn’t own St. Louis style pizza. They’re alright, but there’s better from smaller privately owned Italian restaurants around the city and counties. Just sayin...
it hurts and i hate to say it - but i found amazon.com to be the final solution to most of my shopping issues, too, by now.i even got my new fridge and washing machine from amazon.com - direct shopping way too often left me disappointed. the little shop retailers and the delivery guys have lost - amazon prime is SO great... and SO is this pizza, russ, as always a fine video and recipe!
I'm totally with you on that Hubert! I've been shopping through Amazon since around 1998. It opened up a whole new way to shop for me, and I never have to leave the house. There isn't a week that goes by that I don't have something coming in that I bought through Amazon. The best part to me, is that you can find pretty much anything that you would not be able to find locally. Yes Prime is so worth the price! It has saved me a lot of money plus some pretty good perks as well.

Just a little tip the provel goes all the way out to the edge of the pizza. The provel gets really brown and crispy and is the best part of the pizza.

Yes, 550° is the temp you want to shoot for. Not all ovens will go that high, so just set it as high as it will go,

I actually looked yesterday after posting this video on Amazon, so I could provide a link, and found out these blocks of provel is out of stock right now. I sure hope they get them back in stock to ship. I plan on keeping some handy. They were just on there a week ago.
hey Russ,as an Italian long island ny pizza lover, I can tell you that is pretty much exactly as we make it up here in the wood fired pizza ovens, thin crust, and they cook really fast, that looked really good to me,only thing is, in my family we would need a dozen!lol

I tried it out the other night, it was great. I could not afford the Provel cheese so I used Provolone and Mozzarella Cheese. This is actually my first Homemade Pizza. Maybe I'll try to make a Taco Pizza with this crust next time. By the way, what is the name of the music you used when you were putting on the sauce on the pizza? Thanks Rus

Sorry could not reply. Johnny`s is a local chain to Monroe Louisiana.........only pizza I know cut the way you did. OWNER Johnny Huntsman started it in 1967.......as always great videos !!!!

Yeah, they aren't bad at all, I actually enjoy them a lot. The pizza dough recipe for this is very close to making flour tortillas, hence nachos ;)

I don't or never have owned a WSM so I really can't give you a comparison, but from what I know, I think your comparing two different animals here. The WSM is basically a water smoker, but you can adjust and dial in the temps right where you want them like most smokers. I hear really good things about them. The PBC on the other hand is a set it and forget it type cooker. You don't have to concern yourself with the pit temp because there is no way to change it if you follow the manufacturers instructions on using it. It's designed to run at a certain range, and that range has not let me down yet. I really love mine!

it hurts and i hate to say it - but i found amazon.com to be the final solution to most of my shopping issues, too, by now.i even got my new fridge and washing machine from amazon.com - direct shopping way too often left me disappointed. the little shop retailers and the delivery guys have lost - amazon prime is SO great...

I'm totally with you on that Hubert! I've been shopping through Amazon since around 1998. It opened up a whole new way to shop for me, and I never have to leave the house. There isn't a week that goes by that I don't have something coming in that I bought through Amazon. The best part to me, is that you can find pretty much anything that you would not be able to find locally. Yes Prime is so worth the price! It has saved me a lot of money plus some pretty good perks as well.
