Recipe
Masa:
2 cups of Instant masa flour
1 tsp of baking powder
1/2 tsp salt
1 tsp vegetable oil, I used grapeseed oil
1 1/2 cups of warm water, plus 1tbsp at a time-only if needed.
Mix the dry ingredients in a large bowl. Slowly add the warm water while kneading, followed by the oil. Knead the masa for 3-5 minutes, if your masa has cracks and feels dry add more water 1 tbsp at a time. Masa is ready when it feels soft with no visible cracks. Form a ball, cover the masa with saran wrap, let it rest for 30 minutes.
Filling:
2 cups of onion, cut into thin half moons (1 large onion)
1 cup of jalapeños, remove seeds and stems, cut into thin strips (3-4 jalapeños)
3 tbsp of vegetable oil
pinch of salt

3 1/2 cups of whole cooked beans with their broth
2 tsp of onion powder
1 vegan chicken cube
1/2 tsp salt
1 tsp garlic powder
1/4 tsp cumin powder
1/4 tsp smoked paprika
Heat up a skillet over medium flame, add oil. When the oil is hot add the onion/jalapeños strips and pinch of salt, mix and cook until they become translucent. Remove the cooked jalapeños and onion strips, set them aside in a bowl leaving behind the infused oil in the skillet.
In the same skillet with the infused oil, over medium flame add whole cooked beans with some of their broth, when the beans come to a simmer add a vegan chicken cube. Begin to mash the beans with a masher, if too dry add more bean broth or water, if too runny add more beans without their broth.
When the beans are thoroughly mashed add the cooked jalapeños and onion, season with onion powder, salt, garlic powder, cumin powder and smoked paprika. Taste and if needed adjust salt/seasonings to your liking. Turn off flame, set aside.
Shaping Gorditas:
After the masa has rested for 30 minutes, grab a small handful of masa, form a ball about the size of a golf ball or bigger. Coat your fingers with vegetable oil to help you work the masa into a smooth ball.
Using your fingers press the center of the masa ball creating a crater, make it deep enough to add the filling, it should resemble a bird's nest.
Then add a small amount of the bean filling in the center of the masa, not too much because you will need to close it. Bring the outer edges of the masa towards the center, seal it shut with your fingers. Form a ball again, with the palm of your hands flatten the masa ball into a disk shape. Gorditas need to be thicker than a corn tortilla :)
Cooking Gorditas:
Heat a skillet over low flame. Add 1 tbsp of vegetable oil, place the uncooked gordita in the skillet, cover with a lid for 4 minutes on each side (for a total of 8 minutes) flipping half way through, this step will ensure the inside cooks thoroughly. Then remove lid and raise the flame to medium, continue cooking for 1-2 more minutes or until gorditas are golden brown. When ready remove the gorditas set aside until they cool down enough for you to touch, then you'll want to cut the center open, going half way through.
Add toppings through the opening. If needed add more bean filling along with your favorite toppings. I recommend adding vegan creama, homemade salsa, vegan cheese, shredded lettuce and avocado.
NOTES:
*You could also deep fry your gorditas, they're even tastier or pan fry as I did for a healthier gordita.
*Any bean filling leftovers can used as dip with tortilla chips and guacamole or filling for taquitos, tortas etc.

Masa:
2 tazas de Masa harina
1 cdta de polvo para hornear (royal)
1/2 cdta de sal
1 cdta de aceite de vegetal
1 1/2 tazas de agua tibia, si es necesario agrega mas agua, 1 Cda a la vez.
Mezcla los ingredientes secos en un recipiente grande. Despacio agrega el agua mientras amasas, también agrega el aceite.
Amasa por 3-4 minutos, si es necesario agrega 1 Cda de agua a la vez para hidratarla bien.
La masa esta lista cuando se sienta suave y no tenga grietas. Forma una bola, cubre la bola de masa con plástico y deja reposar por 30 minutos.
Relleno:
2 tazas de cebolla, corta en tiras de media luna (1 cebolla grande)
1 taza de jalapeños, retira las semillas y tallo corta en tiras (3-4 jalapeños)
3 Cda’s de aceite de vegetal
Pizca de sal

3 1/2 tazas de frijoles con su caldo
2 cdta’s de cebolla en polvo
1 cubito de consome vegano sabor a pollo
1 cdta de ajo en polvo
1/4 cdta de comino en polvo
1/4 cdta de pimenton ahumado
1/2 cdta de sal
Calienta un sartén a fuego mediano, agrega el aceite. Cocina la cebolla y jalapeños con pizca de sal.
Retira la cebolla y jalapeños cuando la cebolla quede traslucente. Dejando el aceite ya infundida en el sarten.
Ahora agrega los frijoles al sarten con el aceite, tambien con el cubito vegano sabor a pollo, cuando lleguen a un hervor comienza a machacarlos.
Agrega mas caldo o agua si quedaron secos o mas frijol entero si son muy líquidos.
Luego incorpora la cebolla y jalapeños cocidos y sazóna con cebolla, ajo, comino, pimentón y sal.
Haz ajuste de sal si es necesario. Apaga el fuego.

Formando las gorditas:
Despues de reposar por 30 minutos comienza a formar bolas con la masa. Las bolas mas o menos de tamaño de pelota de golf o mas grandes si prefieres.
Moja los dedos en aceite de vegetal para trabajar la masa.
Haz un hueco en el centro, formando la figura de un nido de pájaro.
Luego rellena con la mezcla de frijol, suficiente para cerrar la masa.
Cierra la masa y forma un bola, con las palmas de tus manos aplana la bola de masa hasta formar un disco.
Las gorditas son mas gruesas que una tortilla de maíz.
Cocina las gorditas en un sarten a fuego bajo, cubre las gorditas con una tapadera por 4 minutos por cada lado, volteando a la mitad (un total de 8 minutos)
este paso va asegurar que las gorditas se cocinen por dentro.
Luego retira la tapadera, sube el fuego a mediano y termina de cocinar por 1-2 minutos mas o hasta que las gorditas tengan un color dorado.
Retira las gorditas y deja enfriar suficiente hasta poder tocarlas sin quemarte.
Con un cuchillo haz una partida por el centro, llegando hasta la mitad.
Rellena por dentro con mas frijol y toppings de tu gusto. Yo te recomiendo que las rellenes con crema vegana, queso vegano, aguacate y salsa hecha en casa :)

I do want to say that I tried the maza recipe! My grandma made Gorditas growing up and they were sooo delicious! I tried making them on my own many times but the maza consistency/texture would not come out right. I follow this recipe step by step and the texture and flavor came out great! I made mine with jackfruit smothered in Chile rojo and beans. Delicious!! I can't wait to take some to my grandma :')
