HOW TO MAKE BEEF BIRRIA with Consome /Birria QUESA TACOS ❤

- BIRRIA a SUPERB classic mexican dish, BURSTING with flavor, can be made with goat or with BEEF, it has swept through as a top favorite dish. This dish is often served at parties, family get togethers and special occasions like weddings, baptisms, Anniversary parties or HOLIDAYS, it can be served in it's consome topped with chopped onion, cilantro and your favorite salsa, or it can be made as a quesadilla known as QUESA TACO in a corn tortilla with grated OAXACA CHEESE, cilantro and chopped onions with your favorite salsa and lime juice, DELICIOUS AND AMAZING, and you can also have it in the popular Ramen bowl, and its always bursting in flavor.
INGREDIENTS
10 C.water
4 neck bones
3 lb. Chuck pot roast (not shoulder)
1 medium onion (chopped big)
3 Roma tomatoes (big pieces)
1 tomatillo
6 garlic cloves
5 whole cloves
1/2 tsp thyme
5 Bay leaves
1 inch piece cinnamon stick
1 Tbsp oregano
3/4 tsp peppercorns
3/4 tsp whole cumin
2 tsp onion powder
2 Tbsp tomato flavored chicken bouillon
1 Tbsp salt (you decide)
2 Tbsp white distilled vinegar
1/2 C. additional water for molcajete
2 C. liquid from Chiles
TOPPINGS
chopped onion (enough for your family)
chopped cilantro (enough for your family)
lime wedges (enough for your family)
OAXACA cheese (grated and enough for your family)

I have never heard of Birria. So this is a real treat. To learn of another traditional dish and be able to make it in my own kitchen. When I watch you prepare all of these wonderful dishes it’s like I must have smell-a-vision! My eyes are watering from the onions, I’m coughing from the chiles(I know I’m a lightweight 🤣), and my mouth is watering so much I have to use a handkerchief! You absolutely do cook with love. I’m fairly new but have been watching your channel for about 2-3 months. I’m white but have a Mexican friend who is accustomed to traditional Mexican food. I’m a fantastic southern cook. I love it. I do notice that our cooking methods are similar but I wanted to thank you for teaching me to cook with a whole new Array of seasoning and spices ! WOW! Rachel , that definitely looks and tastes delishous! As you used all fresh ingredients it most likely smells beautiful also. Cheese to your meat taco and cilantro and onions and your homemade salsa too! WOW! Such Cuisine ! Thank you for sharing your recipe. This is such a great recipe for a Saturday weekend with family . As it makes it's aroma to make people want to eat your beautiful meal. Such a blessing to them as well!! Made with love and patience. Five bay leaves and two vinager teaspoon s white distilled type . Five garlic cloves smashed and salt whole pepper and a cummin a few cloves grinded with mallet grinder add broth from meat to it . Oh yes braise chuck meat chunks before adding to broth of neck bones and chicken bouillon spoonful two into water. So many tips methods and process to make it complete. Oh yes three types of dry chili to slightly toast and cook till soften before added to cook veggies mixture for your chili sauce for pot of meat and strain to remove small bits of chili and veggies residue so chili smooth consistency. Wonderful! So many steps but certainly worth that works!! Enjoy cooking! That's why!! Awesome!

Just made this and it was fantastic. I made a couple of small changes - I used 60/40 water to beef broth and short ribs instead of the neck bones. The Fam loved it!! Thank Rachel for a wonderful recipe.
