After I was diagnosed with lung cancer a year ago I started reevaluating things in my dish cupboard. I had a silver tea set that had not been used in years and I thought to myself: " I just had an entire lung removed, I did eight cycles of chemotherapy, five months of radiation treatments I decided I am going to make tea in the silver pot, (like my Welsh grandmother did every afternoon) I am going to use the sterling silverware on a daily basis and I will eat off of the bone china dinnerware!" I do make afternoon tea now and have friends over and if something gets broken, well, who the hell am I saving it for?😊😊 Happy Pride Month🌈

My mother was Scottish so I became a tea aficionado from a very young age. Sometimes our afternoon tea was as simple as tea with buttered toast and jam! But the important thing was to have that tranquil break to brew a pot of tea and sit down for a rest. Your tea looks lovely and, no worries about your sponge not turning out perfect! I bet it tasted amazing!!!
My parents were Irish so tea had a place of high importance in our lives. When I was a child growing up in upstate NY, my brother and sister and I walked home from Catholic school and ate lunch with our parents. After eating our sandwich there was always time fir a brief cup of hot tea. Hot tea has always been a mainstay in my life as a restorer of strength, stamina and solace.
What I always think is even if a homemade cake doesn't turn out exactly as planned it tastes a 1000 percent better than any bought cake. Jam and cream make up for any aesthetic woes.

When you have such a large gap between meals, both morning and especially afternoon teas make absolutely perfect sense. Our bodies love to eat something light such as a snack or a couple of finger sandwiches every 3-4 hours so going all the way from noon to 7 or 8 at night is really quite the gap without a snack or light meal and something refreshing to tide us over. Anna Marie Russell was brilliant for realizing this and inventing a tradition that would eventually trickle down and benefit even the poorer people. (Afternoon tea likely led to the afternoon breaks we all need while working to keep from becoming hangry and unproductive.)

As mentioned, you can find wonderful afternoon tea across the country. In NYC, there is the wonderful Tea and Sympathy; I have had great tea in Savannah, GA, and Sitges, Spain.
Across the pond here. I have enjoyed going to tea for over 35 years now. My friends and I started in our late 30s. early 40s . Now I am 72 and though I still love it. our best little tea shop in our little antique old town has gotten so expensive, its hard to afford this luxury much anymore on social security. What use to be $30.00 is now $53.50 per person . It is really something I only do on a special occasion. Love every time you bake something . Its the love you put into that cake that makes it mouthwatering!
Hi Nicholas, Back in the 1980's I met Paul and Julia Child. She was very gracious and down to earth and I still watch her old shows, especially from the 60's when she was hale and hearty. Purchase an internal thermometer for an accurate temperature read, turn the cakes gently evey 8 -12 minutes or so. This will take you to a new level and one more tip, any recipe with baking soda be sure to dissolve it in any of the liquid ingredients first. This video was so delightful and I really enjoyed the process of watching you become a better baker to elevate your tea time hostess abilities.

I live in California and a I love the ritual and serenity of having tea with friends or just a cup for me. I collect bone china tea cups from England. Many from thrift or antique shops. I am also obsessed with cake platters and tiered platters, lol. My current favorite tea is rose flowers with lavender. Love it!🌸🌸🌸
A good afternoon tea give you to rest you need in the middle of the day to carry one with whatever life has in store for you until dinner time. My favorite to date tea time was at Harrods. I hope to try a few other places when I return to the UK. Thank you Nicholas for this respite.
Nicholas, the cake looked delicious all fixed up! In years past afternoon tea was almost a daily occurrence in our home but skipped the cakes most of time & when I baked scones I would freeze them as they thawed quickly! I know your teatime this week was a "marketing tool" but for those just learning...I'm afraid your table looked very cluttered! Might I suggest "show & tell" first, then remove unused items before partaking of actual tea?? Also, I'm certain your candle fragrance is divine but scented candles should never be used when serving food🙄...in my opinion. Conflicts with flavors of food! Sorry.
I loved this! Of course, I now have to get a tiered tray... but the tea cups I have. My Mom collected one from every state in the US and every place they went in Canada which left me with the desire to do the same! It is special to drink from a tea cup! Thanks again, Nicolas! I grew up with tea time...predominantly cucumber sandwiches , scones or shortbread. Pots of tea!!! Lovely tea cups... Of course, my American dad never thought it was enough from my English mom!
I love this simple cake! I had this same problem with rising before when I’d bake in my parents oven. Turning the pan 180 degrees halfway thru seems to even things out a little bit. But as my Mama liked to say, the little hollow in the middle allows for more cream and filling, so it’s all good.
Bravo. I have been to the Ritz and it wasn’t as good as this. I like the tranquil setting . You don’t get the same in Hotels anymore . I enjoyed your tutorial making the Victoria Sponge. As you say less is more with sandwiches if you only have a guest for tea. Your smiling happy face says you are loving it🤗🙋♀️🇬🇧

We always have a simple afternoon tea in my home since i was child, the simplest is we serve it with biscuit, however we serve with cakes or bread filled with chocolate, vanilla cream, pinapple jam when we have time to bake because we rarely buy some cake or bread, we prefer a home made bread or cake❤❤❤
Loved this video!! I used to go to a little boutique that served all different types of teas, finger sandwiches, pastries, and homemade cakes. It was so fun having tea with friends. Sadly, the boutique closed.

My dear Nicolas, I love your videos. I wanted to offer a small advice when baking, and then maybe your next sponge will not fall flat. It's the order in which you add the ingredients. First, you should cream your butter: it shold be at room temp that you can leave an indentation. Cream your butter until pale in color, and it looks fluffy, then add sugar and keep creaming. After this, add the eggs one by one mixing well each one, and add vanilla. If you see it curdles, don't panic: add a Tbsp or 2 of flour, this will incorporate it all together. Last, add your sifted dry ingredients, alternating with milk if the recipe calls for it. Add your sifted dry ingredients in 3 additions, mixing at the lowest speed, or by hand with a spatula. You see, when you mix your flour from the beginning at high speed, it will develop gluten. Gluten is very elastic. Your cake will rise all pretty in the oven but it will flatten once it cools... because of gluten. It stretches and then it comes back. So try the method above if you can. I hope your cake turns out wonderfully fluffy. Big hugs from Chile

I recommend the almond and rose tea❤ Your so adorable, most of the time when adding ingredients its: cream butter and sugar, then while mixer is mixing, slide in the eggs and in a side bowl mix your dry together then add slowly. Keep mixing until blended, dont over blend. That way your baking powder is more evenly distributed. make sure to preheat your oven before you put it in and place on middle rack. Maybe that will help next time, It looks delightful!!!🥰

I live in California and a I love the ritual and serenity of having tea with friends or just a cup for me. I collect bone china tea cups from England. Many from thrift or antique shops. I am also obsessed with cake platters and tiered platters, lol. My current favorite tea is rose flowers with lavender. Love it!🌸🌸🌸
A good afternoon tea give you to rest you need in the middle of the day to carry one with whatever life has in store for you until dinner time. My favorite to date tea time was at Harrods. I hope to try a few other places when I return to the UK. Thank you Nicholas for this respite.

Nicholas, the cake looked delicious all fixed up! In years past afternoon tea was almost a daily occurrence in our home but skipped the cakes most of time & when I
baked scones I would freeze them as they thawed quickly!
I know your teatime this week was a "marketing tool" but for those just learning...I'm afraid your table looked very
cluttered! Might I suggest "show & tell" first, then remove unused items before partaking of actual tea?? Also, I'm certain your candle fragrance is divine but scented candles should never be used when serving food🙄...in my opinion. Conflicts with flavors of food! Sorry.
I loved this! Of course, I now have to get a tiered tray... but the tea cups I have. My Mom collected one from every state in the US and every place they went in Canada which left me with the desire to do the same! It is special to drink from a tea cup! Thanks again, Nicolas! I love this simple cake! I had this same problem with rising before when I’d bake in my parents oven. Turning the pan 180 degrees halfway thru seems to even things out a little bit.
But as my Mama liked to say, the little hollow in the middle allows for more cream and filling, so it’s all good.

Bravo. I have been to the Ritz and it wasn’t as good as this. I like the tranquil setting . You don’t get the same in Hotels anymore . I enjoyed your tutorial making the Victoria Sponge. We always have a simple afternoon tea in my home since i was child, the simplest is we serve it with biscuit, however we serve with cakes or bread filled with chocolate, vanilla cream, pinapple jam when we have time to bake because we rarely buy some cake or bread, we prefer a home made bread or cake❤❤❤
Loved this video!! I used to go to a little boutique that served all different types of teas, finger sandwiches, pastries, and homemade cakes. It was so fun having tea with friends. Sadly, the boutique closed.

My dear Nicolas, I love your videos. I wanted to offer a small advice when baking, and then maybe your next sponge will not fall flat. It's the order in which you add the ingredients. First, you should cream your butter: it shold be at room temp that you can leave an indentation. Cream your butter until pale in color, and it looks fluffy, then add sugar and keep creaming. After this, add the eggs one by one mixing well each one, and add vanilla. If you see it curdles, don't panic: add a Tbsp or 2 of flour, this will incorporate it all together. Last, add your sifted dry ingredients, alternating with milk if the recipe calls for it. Add your sifted dry ingredients in 3 additions, mixing at the lowest speed, or by hand with a spatula. You see, when you mix your flour from the beginning at high speed, it will develop gluten. Gluten is very elastic. Your cake will rise all pretty in the oven but it will flatten once it cools... because of gluten. It stretches and then it comes back. So try the method above if you can. I hope your cake turns out wonderfully fluffy. Big hugs from Chile

Your so adorable, most of the time when adding ingredients its: cream butter and sugar, then while mixer is mixing, slide in the eggs and in a side bowl mix your dry together then add slowly. Keep mixing until blended, dont over blend. That way your baking powder is more evenly distributed. make sure to preheat your oven before you put it in and place on middle rack.
Maybe that will help next time, It looks delightful!!!🥰

I am more of a coffee man, but I do enjoy the ritual and the drama of tea. If I lived in or near London I would be a Fortnam and Mason addict! Now I’ve ordered from your website….I purchased two sets of napkins, tea, and the candle. It all arrived amazingly fast (I’m in the USA). The candle is about the most scrumptious I’ve ever smelled and I’ve had many candles. The napkins are not only very elegant and unique, but the quality is top of the line.
