French sauces can be very creative and there are no set rules! Adding White Wine will make sauce more acidic and feel less heavy/rich on the tongue. Using Cognac to finish bechamel sauce will give it a more bold/nutty flavor. (don't flambee unless you're in a commercial kitchen!) For example: "Steak au Poivre" uses a cream sauce w/ peppercorn & cognac.

已經冇食粟米肉粒飯好耐,依家好多茶記嘅第一敗筆係用滑蛋汁代替白汁,第二係肉粒太細冇咬口又冇肉味,第三係用三色豆代替粟米,搞到粟米都唔多粒。本來粟米肉粒飯炒底係人間美味,但係近年同雞皇飯、鮮茄牛肉飯一齊响茶記消失。坊間如果有阿 Ricky 哥呢碟一半嘅水準已經可以做招牌菜。
根本出面好多師都未滿就做大老,難食到飛起
