    This is so good and simple, I've made it twice this week! I wasn't able to find sumac so I subbed a bit more lemon juice and it was still fantastic. I ordered some sumac online and it arrived today so I'll make it with the authentic ingredients next time. Your garlicky turmeric rice is simmering on my stove as we speak!

    This looks SO good. You're right - I was worried about the bread under the raw chicken, but at the end the bread looked saturated with all those flavors. Can't wait to try this!!

    My Auntie Goram, God rest her soul, used to make this with tahboon. She used chicken quarters. It seeped with oil…we would eat it primarily in the winter and nearly die of heart attack.

      Lol what a story! Yes the older generation loves to soak everything with so much oil, I use a fraction of that amount as I want to fit into my clothes the next day haha.

      @@blanchetv I faintly remember your mother mention she is from Bethlehem. My husband is from, Jerusalem, Beit Hanina to be exact. His family is originally from Karak (Masannat, Al-Sunna families). He has some family in Nablus (Auntie Samira). I enjoy watching the videos you have made; they certainly help complete the picture of the "missed" ingredients my Auntie left out....lolll.

    Thank you for the recipe - loved it and cannot wait to try it out your way...Just have a question do you know anybody who has gastric issues and must stay away from acidic things ...can they enjoy this dish...since lemons are a main part of the marinade, wondered if cooking reduces the acidity and would still be suitable for those with gastritis etc (normally they cannot have tomatoes/fruit/vinegars/lemons). Your help would be appreciated !

      You can eliminate the lemon juice all together if you want, as the sumac imparts a lemony flavor on its own. Hope that helps!

    I skyped my mom today and she made me so hungry that I've watched almost all of your recipes.
    I havent had her cooking in over 10 years and i get butterflies everytime I think about the food.
    I miss arabic food SOOOO MUCH!!!!
    I'm going to try maqluba tonight because my boyfriend is at work and doesn't know what I'm up to lol

    look good yet it is not musahkan,the original authentic one goes like that: after caramelizing the onion you add them to a huge amount of olive oil. the chicken you cook it before, then take it to the oven, when everything is ready you take a bread dipped it totally in Chicken broth then immediately to the olive oil onion, you put the soaked bread on a tray then take mount of onion from the olive onion spread it over the bread then you add the sumac and other nuts you like, the chicken we put it over the top of bread mountain when you serve it...very heavy food but we eat it once or twice a year after The olive picking season is over.

      Thanks Sana! Yes I streamlined it so it is much faster to make for the busy home cook--with much less oil. As Americans do more driving than olive harvesting they can save on the calories lol! Thanks for sharing your method!

    so glad you made it short and sweet because i have a very short attention span. I am going to try this, it is easier than what i have been doing. I just wish you would wear an apron because i worry about you getting your clothes stained. If i wore a solid dress like your moms It would end up being a mess!

    I am fm India, here finding Sumac is not easy and if found in metropolitan it's cost is equal to Saffron (Kesar in Hindi) though we grow Saffron in India (indigenous to Kashmir region only) & sumac is totally imported.
    One is costly bcoz it's mostly exported out & another is costly bcoz it's totally imported.

      Salt to taste, and 1 tablespoon of Sumac--you can add more or less based on your preference, no wrong way to do it ;)

    I don't think garlic comes anywhere in the original Musakhan recipe..

      I think it wouldn't be as flavorful without it, we love garlic in our family. Great thing about recipes, is that it is an art, there is no right or wrong answer, and you can add or subtract whatever you wish to suit your own taste ;)

      maya Jsmin my husband is from An Arrick, where this dish originated. I learned from the source, and they used garlic. I am sure there are people that don't make it with garlic too.
