- I made a dessert that combines flan and castella cake this time. I added mascarpone to the flan and put espresso on the castella cake as the finishing touch. This is one of my favourites.
It’s difficult to bake this recipe, so please note the following 4 points.
・All ingredients should be at room temperature
・Bring the milk to a boil
・Bake in an oven while the flan is warm
・Pour boiling water

➢Glass(200ml) - for 4 cakes
50g sugar
20g water
20g hot water
160g mascarpone
70g sugar
250g milk
1 egg yolk
3 eggs
vanilla
2 egg whites
1 egg yolk
45g sugar
45g flour
15g milk
15g butter
Heat in a water-bath
160℃ 40min.

I sincerely appreciate how we get to see the bowls scraped so clean. It always bugs me in cooking videos where you see heaps of batter left in the bowl, and you can only wonder if they had the decency to at least scrape all of it out off camera.

@@pontusryden7643 Ive been in food and beverage for 10 years and have occasionally been on sets with those tv chefs. Not on camera just watching off to the side. The only one that does scrape the bowl is Gordon Ramsey.

I appreciate the way that is described also instead of saying something like "7 eggs, save half for later," it's done in stages that are easy to understand.

I love how the Japanese make desserts especially the ones that are inspired by European desserts. The sweetness is not overpowering and they use the freshest ingredients. If I can I always search for a Japanese recipe for desserts like cakes and cookies. American recipes are too freaking sweet for my taste 😝

I got into cooking a few months ago and wanted to try out some desserts for which I went in search of on RUclips, and it bought me to this recipe. I don’t think there’s a better way to get into dessert making, this was an amazing start.
I’d like to share a few notes when making this though :
- Double the amount for the castella cake part if you use regular glasses (25cl), I was only able to fill 2 glasses completely for this part, one ¾ and one about halfway. The other parts were fine though, just try to fill them all evenly :)
- I replaced the vanilla aroma with vanilla sugar which I added with the regular sugar (for the flan). I took out the same amount of the regular sugar as the amount of vanilla sugar I added. I did this because vanilla aroma is quite expensive here.
To end : this is an absolutely great dessert. It tastes amazing, the ingredients aren’t hard to find and even though it takes some time it doesn’t really require any special skills. I definitely recommend to try it out !

What the Hell! I swear I got 2 seconds into the video thinking "Oh, there's no music or any kind of voice over. I'm good no thanks." made this for my birthday a couple weeks ago. completely worth the effort. i used simple ramekins though and my castella cake pulled away from the sides just a bit and made it not look very pretty, but it was still delicious.
I know there’s a reason why it would pull away but can’t remember. Thinking that it might’ve needed a tad longer in the oven?
@@Namri I actually did leave it longer. My oven cooks a little bit cold so I left it in another 10 minutes or so to brown the top. Maybe that was it
