Haha, knowing my scattered brain, I will most definitely lose them. Yeah, man this thing is awesome! I've never seen a dry ager this size, do what it can do. This humidity control actually communicates with the other parameters. The type that have a water pan / fan for a humidifier do not. Very excited about this one. Thanks for watching Greg!
Really cool product! Dry aging is something I want to learn more about. I have tried dry aged meats before and they’re really elevated in flavor. I’m looking forward to seeing what you do with the stuff you’ve got hanging!

It's so convenient and runs itself. I'll be keeping something going in it year round, but I do have plans to do some fermented sausage in it as well since this little unit does a beautiful job with it.

For years I've been intrigued by the idea of dry aging at home. It's been awhile since I last searched for a commercially made dry aging unit for home use but as I recall I didn't find anything. I think this is the only one but feel free to correct me. The only alternative I've seen is the UMAi dry aging bags. I wonder if anyone has any thoughts about using the Reserve 50 vs UMAi bags?
In my opinion, UMAi bags is not real dry aging because the special plastic prevents air from actually coming in contact with the meat. Yes they are designed to allow moisture to escape, but sanitized air via UV light never comes in contact with the surface of the meat like a real dry ager does.
That is an economical unit. I will have to look into it. Always wanted to mess around with aging beef.
I'm loving it Gary! I'll keep something going in it at all times, even if it's only beef to grind for hamburgers. I've got plans for the meat that's in there currently but it will be mid December before I can show what I do with it.

If you go to Pro Smokers website, they have a warranty registration for any product you purchase and the also supply this phone number for any questions about the warranty 800-874-1949. The parts for their equipment is listed on the website along with prices, but I did notice the dry ager parts are not listed yet, but it is a brand new released product so I'm sure they will be or you can call them about the parts as well.
Guess I had better call, I saw a replacement rack for one of their smokers at $240, thats nuts!!
