    recipe
    around 2 pounds squash,
    makes around 6 cups chopped up
    13 oz. crushed pineapple
    1 apple peeled chopped
    zest of 1 lemon, and juice
    zest of 1 orange, and juice
    1 box pectin
    5 cups sugar
    1/4 t. powdered ginger
    water bath 15 minutes
    made 7 jelly jars marmalade

    i made a grapefruit marmalade a few years back, and it tasted marvelous .. it also made a excellent glaze on ham. Very unique and very delicious .. it was the best ham i had ever had .. dang, now i have got to make some more grapefruit marmalade

    This looks good. For snack, instead of cream cheese, I use peanut butter. God Bless and stay safe.

    I have never made zucchini or yellow squash marmalade. But it sure does look good. Will have to try making some this summer. Thank you for sharing your recipe.

    What a unique and wonderful use of zucchini and squash!! I would never have thought of doing that but I am sure it's absolutely delicious 😋 And I love that gorgeous wooden bowl you were using at the beginning. SO pretty. ♥️

    Aaahhh what pretty marmalade! So enjoy watching and listening to you. Like being at my grandma's over the summer when I was a kid. I made the zucchini Brownies while watching your video on it! My husband is so happy to have homemade brownies when he came home from work today! God Bless!!

    I made this last year with the end of the zucchini and it was EVERYONE's favorite. So this year I made sure to make it early so I could make enough for everyone to have plenty. Thank you so much for sharing this EXCELLENT recipe!!!!!!!!!!!!

    I am almost 70 yrs. old & I have never heard of zucchini marmalade. Shouldn't surprise me w/zucchini being so prolific. Always have to find new ways to deal w/this bountiful vegetable. I live in an apartment so no garden. I'll have to go to the Farmers' Market & get some zucchini & yellow squash & make this. Jar of this w/some fresh baked bread; great Christmas gifts.     I followed your instructions and used only zucchini because that is what I grew in my garden. I used all the fruit and made the marmalade. It is so good! I am a diabetic so I used 2 cups of swerve instead of sugar. I also used the pectin. I would recommend this recipe to anyone who loves tart and sweet fruits. Thank you for showing step by step on how you prepare your food. I felt like i was at home with the women folk cooking and learning something that I have all ways wanted to try. I love your videos!

    I just made this for the first time. WOW!! I added fresh ginger instead of ground ginger. I will be putting this in my canning rotation. It is sweet and tart. Tastes of citrus with a little hint of ginger. It is fantastic!! Thanks Lori.

    I love the fact that you’re using an Ulu!! I’m from Alaska -Alaska native,born and raised- and I don’t see these used often elsewhere. I love see clothing or tools from my culture used elsewhere!! Delicious looking recipe. We’ve got a bunch of squash and I’m gonna try this recipe for a small batch!

    I agree with Mr. Brown. To me pear butter is just better than apple butter. I love it. I used to have a big pear tree in my back yard and made a lot of pear butter over the years.

    I've used those Rada knives for years. My Momma uses them & my Mamaw used them. I use to buy them from the Church but now I either go to the Amish store, or the Rada website.🙂

    I'm always looking for new things to make with squash, they're easy to grow and the gophers leave them alone. I make a lot of zucchini sweet relish and zucchini bread and butter pickles and now marmalade. Thank you.

    I have an abundance of yellow squash this year! I’m getting burnt out on squash casserole….fried squash….etc. I saw you recipe for the marmalade and I made a double batch!!! Lol.
    I was tasting it before i got it in the jars!😂. Can’t wait to have on chicken, biscuits, pork…thanks so much for the recipe!

    This is perfect timing as I have many yellow squash to use up and didn't want to freeze them! The towel under the jars while you were filling them is really pretty. Almost too pretty to take a chance of getting marmalade on it. 😁

    I will definitely be trying this Ms Lorie. Love your intro coming to the screen door so creative love your chopping bowl. And hand chopper prayers for you and Mr B as you get back out to work the new v is running rapid. I live in Ky my county over 100 .cases again 20 in one day added just awful I too have been canning made blackberry jam and jelly finally my berries produced again froze bluberriies our own canned green beans and next tomatoes Lovin it

    OMGoodness you had me hooked when you started chopping stuff. I’d be nibbling on all it. Everything you cut up looked so good. But then when you got it all together, and was talking about how it smelt, I was really wantin some. I hate that you’ve had so many, “well I’d do it this way” comments that you feel you have to explain yourself. I love to read the comments but when I get to those kind, I’m like zip gone.     Yum..never ate squash marmalade. Would love to try it .I do enjoy peach preserves on hot buttered cornbread. I freeze my leftover dried beans in small containers enough for a meal and for refried beans .Have a Blessed Day .

    My neighbor makes zucchini marmalade and includes some of the schredded green rind in hers. I don't know how she makes it, but it is delicious. She sells it at local farmer's markets, as well as other butters and preserves. This looks deliciious!

    I love marmalade’s. Today I made a citrus marmalade. No pectin. But I cook and cook it down for about 25-30 minutes. It was slowly thickening , but I decided to add a bit of pectin to get it done lol. I usually do use pectin but the recipe didn’t call for it.

    I just made this!!! I added a handful of cut up marshiano cherries!! Just delicious!! I will be making more as soon as more of my zucchini gets ripe! Thank you here from north central Wisconsin.
