I think this will be my main dish for Thanksgiving (unless I decide to make my vegan moussaka...or shepherd's pie)! What are you cooking for the holidays?

I made your moussaka for thanksgiving last year along with the sumac salad from the 3 hour thanksgiving video, everyone loved it! Can't wait to try this recipe. I'm gonna try it with my favorite soy milk I typically use for bechemel, the unsweetend Silk brand.

I am going through chemo and finding satisfying foods that aren’t acidic and won’t hurt my mouth has been such a challenge. This recipe was a bit of work but wow, it is so heavenly! It feels so festive and comforting and is the perfect thing for my solo chemo Thanksgiving. Thank you for your culinary inspiration and all that you do. I have shared the recipe with many people.
The green part of leeks is absolutely edible. It's a lot less hard than kale for example! And once cooked it's as soft as the white. Just cook it altogether and it's delicious

@@Melanie-jy2nw - It can be done mid-week but you can save yourself some headache by making the tofu ricotta on the weekend. I feel it gets better the longer it sits.
I have also stuffed the shells and refrigerated them in a dish for a day.
Make the beschemel (sp?) sauce the day of and pour on before baking.

This looks amazing! Personally, I find leeks easier and faster to clean before you slice them. If you cut it in half lenghtwise, you can separate the layers a little with your fingers and wash away any dirt under running water

i've never heard anyone say that you can't eat the green parts of the leek, they're very commonly used in cooking here (germany) and in fact i think it's the best part xD

I want to steal that whole pan of shells and eat them in a corner like a gremlin. Which is to say, this recipe looks TASTY.
This is some level 10 cooking! Wish I could find this in a restaurant (waiting on you to open one Nisha!) so I don't have to do the clean up, lol.
I usually wash leek by cutting it in half lengthways and then running it under the tap and making sure the water gets between all the layers, while holding the leek at an angle with the root end at the top
Alternatively, you can cut the leek length-wise and rinse under cold running water flaring back the layers to release dirt. Then chop and dry
"Cleansing" the leek was hilarious! This recipe is definitely going in my meal plan!

You can cut the leek lengthwise in half and then hold it together at the white end and rinse the layers under water. Drain and cut how you like it. Btw. Now i'm hungry for this delicious looking dish❤

I made this a few nights ago to test it before I made it for thanksgiving! It is delicious and I’m sticking to the coconut milk. I didn’t use a lite one I used a regular one and it was perfect. Love your recipes :)

This looks so delicious, I am going to make a veg version of this! stay tuned. Also there are other simpler ways to clean leeks (scoring them is a quick and efficient way to clean leeks)

If you know anyone with chickens, you can save all your veg scraps and give them to the chicken people. I have zero food waste because I give it all to my chickens. Some I keep raw and others I boil, then save the broth for cooking

I'm not a vegan, so I made half with tofu & half with ricotta to see which tastes better. When I pulled them out of the oven, I forgot which was which. I tried each and couldn't tell the difference lol, they look and taste the same. So I'm not sure if we ate tofu or ricotta tonight 😂
This was a hit for Thanksgiving. All omnivores other than me. I was a tad worried about the filling because I didn’t have any vegan parm and it tasted kinda tofu-y when it was cold. But after baking it was perfect!
