Thank for all the helpful information. I can't have regular flour but, I can use coconut flour because it's low oxalate. I'll try to modify it a bit because of the flour thing and use your tips. I'm sure I can figure out a way to do it without pastry flour. Your egg separating video is also helpful. Without it, I'd probably end up buying liquid egg whites in a carton from Blush Lane. When I figure out, I'll probably eat it with clotted cream or 52% fat whipped cream because I like fat. Is a 3 quart bowl big enough for beating egg whites? Also, do you have any mixing bowls suggestions? I'm looking at Vollrath heavy duty, an anchor hocking 2 quart pitcher/batter bowl with measurements and Bormioli Rocco glass mixing bowls. I don't want something like the All Clad bowls. They have deep scratches and even gauges or chips inside them. It won't be easy to clean them.

I haven't had angel food cake since I was a child and the ones I had weren't made from scratch. I'm looking forward to try a recipe. If I try to make something with yeast, I will get a bigger bowl.
