I also slice very thin zucchini slices & dip them in egg then use cornbread mix in a ziplock bag (shake-n-bake style) then lay them out on waxed paper on a large cookie sheet. Put in the chest freezer overnight then place in a freezer bag. This allows you to fry up as many at a time as you want. One of my grandma’s old tricks.😉

Sadly no truffle oil but i have two different kinds of truffle salts, black truffle and summer truffle. So I will have to try those out in lieu of the oil, and then just precoat with a nice olive oil before hand. thank you for the idea. Also may try doing these in my air fryer.

Wouldn’t it be easier to mix the garlic powder oregano and oil in a bowl then brush it on while the zucchini is still a pan??? This way you know every piece of zucchini is getting garlic powder, oregano and oil....Then sprinkle the cheese on top .. again this way every piece of zucchini is getting cheese ... I mean she had to do that anyway... shaking it’s just an extra step not needed... plus when you mix the garlic oregano and oil then brush on its a more consistent flavor... Work smarter not harder....

Don't be afraid to use your hands. Instead of tossing the zucchini and parmigiano, just flip each slice in a bowl of the cheese. Less wastage, better coverage and the slices wouldn't break.
I watched the video to get an idea of the texture. It can look great but was it "bendy", soft, soggy? The appearance looked great but there are a lot of other videos for a recipe similar. So, disappointed...

Looks good! How come you do not use minced garlic? Crush by garlic press, frozen garlic or in a jar? It would bring out the garlic flavor and is purer than garlic powder (contains salt & chemicals). How would a Asiago & Fontina mixture be? I am a garlic & cheese lover. I agree you don't need egg and breadcrumbs that increase calories and takes away from the cheese/garlic flavor. However, this wonderful side dish is not completely healthy since cheese and even olive oil increases cholestrol. When you are young you may not have to worry, but as you age you do have to be more mindful.

Thanks for your reply. You didn't state why you don't use fresh garlic. The powdered garlic is fake with salt and chemicals. If one doesn't want to take the time to press garlic there is Dorot frozen garlic cubes that are good. I know olive oil is healthy, but too much raises cholestrol. That information is coming from my cardiologist-nationally famous.

Grapeseed oil is for cooking olive oil is for dressings or a finishing oil. Smoke point of olive oil is 240F smoking point of grapeseed oil over 400F
You're referring to EVOO. EVOO is typically for dressings, but regular OO has a higher smoke point.
