      I personally think you should open the show with:
      "Yo Dudes! (and the Canuck lady that loves us and our food!") Eh? Eh? 😂 😂 😂
      Otherwise I'm chuffed that you made clear that eggplant (as we call it. I personally prefer aubergine tbh), needs to be well cooked. This looks like something I'd love. Everything in the recipe is perfection. But hubby? Not so much. 'sigh' One thing he doesn't like is eggplant, picky thing he is.
      Otherwise? 'waves at the brothers' you're spot on in flavour.

    I made these baked aubergines today - really yummy! I made an accompanying dish with quinoa, chopped hazelnuts, onions, garlic, chilli, s&p, cumin, chopped figs - really good :)

    2 Aubergines (Eggplants)
    2 tablespoons Miso paste
    2 teaspoons soy sauce
    1 teaspoon cumin seeds
    1 glove of garlic
    Half red chili
    Thumb off ginger
    150g Couscous
    Mulberry (or any other berry)
    150g spinach

    I attribute my love of aubergines to my sicilian mama who made amazing aubergine dishes. Parmigiana with homemade tomato sauce - yummy! She also pickled them with garlic, oil and vinegar - the best!!! Grazie for another delightful recipe! ;)

    I guess that is what you call an eggplant. I like the dish. Eggplant has always been hard for me to master. I never thought about adding Miso paste to it. I also think the oil is very essential in getting it to come out that way. Now I just got to get me an aubergine.

    This is really good. The greens are a little strong on their own, but mix very well with the egg plant. I went off script with the couscous but it came out OK anyway. No mulberries, but I had some dried figs that I was trying to find a use for. I think it would work, but I used too much and it was a little sweeter than i wanted it to be.

    Another reason to score the aubergine (eggplant) is to avoid it exploding - which can happen. To cook it "Israeli" style, don't cut it, but score the outside - just make 4 slits lenghth-wise and place it in a hot oven in a baking pan or on tin foil, as the oil will leak out as cooking. The skin of the egg plant will be hard, but the inner "meat" will be soft. Then, take the cooked egg plant and hold it over the burner (must have a flame for this) a few minutes on each "side", you will get a smoky aroma. Remove from flame, cut in half and scoop out the "meaty" part and place on a plate. Prepare tahina: in a small bowl add a few tablespoons of the tahina paste and add some water, slowly, and stir, adding additional small amount of water while stirring until you get a thick dressing consistency. Add some fresh garlic, salt, pepper, cumin and curry powder, lemon juice and mix to taste . To serve, pour the tahina over the egg plant, drizzle with a little bit of olive and enjoy with pita or favorite flat bread.

    This was amazing, thank you! I added some dairy free butter / garlic to the marinade as the miso I used was quite bold tasting and I wanted to soften it a bit.

    Probably not practical for everyone but growing your own aubergines is a good idea for the less-than-enthusiasts...the texture cooked from really fresh is far pleasanter.

      Do you need a lot of space to grow them or would a windowsil be a good place?

      I would think you could grow them in pots...the plants do get quite big, but there may well be dwarfed varieties...I'll have a look.

      "Thai Green Pea" tiny green fruits recommended for Thai dishes...large plant, though...."Ophelia" is a true miniature, though, might be worth a try. Really fresh aubergines don't have that hint of a slimy texture which puts people off. The RHS has full growing instructions for cool climates. Cheers!

    What if you were to expose the flash on both sides of the eggplant ( sorry from America and it wouldn't pick up the other spell check) and then rub the paste over it and let it marinate overnight and then proceed???

    I made this today... very easy to make and delicious BUT with the miso and tamari it was SOOOOO salty... Any ideas to make this a bit less salty please? I made it with quinoa and psysalis ;-)

    Any tips when picking aubergines? I always seem to pick the ones that have tons of seeds and I guess that's why they don't taste that good when cooked as they tend to be more bitter for what I've noticed. Thanks for the recipe, looking forward to making it and eat aubergines more often!

      Think dots not slots, when shopping for aubergines only pick males - dots, do not choose females or you will have a heap of seeds and tough fibres surrounding them- slots, visible on the rounded end

    Hmmmmm I might evolve this recipe. It was extremely salty for me (probably because of my miso) and the aubergine was not as silky and it was in the oven for 40 minutes!!

      You can leave the oil out all together, the flavours will still be lovely. :D

      It's just used for binding it to the aubergine, so even a little applesauce would work. PLUS, the sweetness will help counter the saltiness of the miso. *mmmmmmm*

    Must taste insanely good, do you have any substitution for miso ? Can't buy it here :( The only thing I saw was rice miso but it costs a ton.

      Well, i'm about to make the dish with basil pesto and a bit additional olive oil instead of miso because i'ma broke lazy fella, lmao. I'll let you know how it turned out in a minute, but yeah, if that sounds horrible to you i'd suggest just asking for it in asian supermarkets, it's not expensive at all, i've seen it for under a euro where i live, i can imagine the video version aubergine marinade is a bit more spicy and flavourful than what i'm fabricating right now.

    I used white miso paste and it was horrible, the top got burnt as i wanted the eggplant to be soft and cooked.

    Mulberries where You get them and for What You add them? What Can be made with them?

      You can get them in health food stores and in some supermarkets. You can add them to cous cous or they're great with serial, anywhere you need sweetness and something chewy. They are good in salads too.

      Health food stores and Amazon. Good on cereal, porridge, in granola, etc. If you can't find, then cranberries, raisins, or any dried fruit will work.

      You could eat the entire aubergine, or store it for leftovers. If you store, the aubergine will steam itself if immediately stored, so you'd have a less crispy but oh-so-much-more creamy dish next time!
