@@heybeautiful3647 you basically got it. They're cured in a salt brine which causes the yolk to firm up and leaves the white to still be runny as you see when they open the egg shell.
There are couple of ways, 1 as previously mentioned in salt brine. another is salted with combination of ingredients with black outer husk/crust until it's ready for use. The 1 with outer black appearances produces more vibrant colour and fragrant+creamier yolks
So, at 3:37 what was the point of weighing the large balls of dough if they were only going to make smaller balls? Why not just portion and weight out the small size?

I find the salted duck egg's shell easier to crack.. The unsalted ones feels thicker. Still impressive, nevertheless
